踏入清涼的秋天後,又是吃白蘿蔔的季節,這個泡菜不用等發酵也可以吃,步驟也超簡單,有空也可以在家試做喔。
材料
白蘿蔔450g
葱兩條
醃料材料
紅椒粉兩湯匙
魚露一湯匙
蒜蓉一湯匙
薑蓉一茶匙
糖一湯匙
鹽水材料
水1公升
粗鹽130g
做法
1. 白蘿蔔切2.5×2.5cm, 葱兩條,切成4cm長
2. 在一個鍋內,開小火,加1公升水及鹽130克拌勻,至水煮至沸騰後熄火
3. 蘿蔔粒浸在鹽水中20分鐘
4. 蘿蔔粒過清水,瀝乾水份
5. 在一個拌碗內,加入蘿蔔粒,把紅椒粉加入,戴上膠手套後用手拌勻
6. 加入紅椒粉兩湯匙,魚露一湯匙,蒜蓉一湯匙,薑蓉一茶匙,糖一湯匙及葱段拌勻
7. 將蘿蔔泡菜放入容器內,待30分鐘後便可食用
8. 將泡菜放入雪櫃內可保存數天

Cubed Radish Kimchi
Ingredients
450g radish
2 Chinese spring onion
For Marinade
1 Tbsp red chilli flakes
1 Tbsp fish sauce
1 Tbsp minced garlic
1 tsp minced ginger
1 Tbsp sugar
For Brine
1 litre water
130g coarse salt
Direction
Cut the radish into 2.5 x 2.5cm cubes.
Chop the spring onion 4 cm in length.
Prepare the brine by dissolving 130g salt into 1 litre water. Boil with low heat until it is dissolved.
Put the radish into the brine. Soak for 20 minutes.
Rinse the radish.
In a mixing bowl, put the radish and red chili flakes in. Wear the plastic gloves and mix well by hands.
Put the spring onion, minced garlic, ginger, fish sauce and sugar in the radish. Mix well.
Transfer the radish into the container. Sit for 30 minutes.
The kimchi can be kept in the fridge for a few days.
