Butterscotch Sauce
Ingredients
2 tablespoons Anchor Butter (Salted)
3/4 cup Brown Sugar
1/4 cup Full Cream
1 teaspoon Vanilla Essence

Methods
1. Melt the butter in a medium heat, add the brown sugar and full cream milk stir the mixture until it's well blended. Then add vanilla essence. Bring the mixture to a boil. Tips: the butterscotch thickens as it cools, so don’t over-boil or make it too thick.
2. Transfer the butterscotch sauce to a container to cool.

Butterscotch Pancake
Ingredients
1 cup Flour
1 teaspoon Baking Powder
1/2 teaspoon Baking Soda
1 tablespoon Butterscotch Sauce
1 tablespoon Anchor Butter (Salted)
1/2 Milk
2 Eggs

Methods:
1. Mix the flour, baking powder, and baking soda.
2. Whisk the eggs, milk, butterscotch sauce, and melted butter together.
3. Add the wet mixture to the dry mixture and stir well.
4. Heat up the pan with butter and pour the mixture into the pan and cook until its golden brown.
5. Add a piece of butter and drizzle some butterscotch sauce on top of the stacked butterscotch pancake. Enjoy!

Wonder how I keep myself healthy and energetic?
Another secret besides having good soup often is super juice in the morning on an empty stomach. I have been taking healthy green juices for many years now. No breakfast but juice. It has improved my digestion system tremendously.
So this morning I thought I should share this little secret of mine with you all.
Many years ago, I started juicing with bittergourd, green apple, celery, ginger, cucumber and lemon which helps in managing the levels of blood sugars, cleanses liver, boost immune systerm and aids in weight loss. Then I have changed to juice without the bittergourd but everything else and sometimes with kale. 3 years ago, I started adding beetroot into my green juices. Beetroot is a good source of potassium, it helps to control blood pressure, control muscle power, slow down dementia, may prevent cancer, keep your liver healthy, reduce cholesterol and control healthy weight too! It is also a good source of iron, folate, magnesium zinc, sodium. It has been great.
* Fun fact of consuming beetroot : Your urine and stools may turn red or pinkish after eating beets. This condition is known as beeturia, is harmless! 😛
Ingredients for Mel's Super Power Juice :
. 4 celery stalks
. 1/3 of a beetroot
. 2 green apples
. one whole lemon
. 1 to 1.5 inches of Ginger
. small piece of turmeric
* Note: Do try having the small bittergourd and kale into your juice too. But do it alternately.
Lala's Power Booster Juice ingredients:
. 1 carrots or more
. 2 oranges
. 1 green apple
. one slice of lemon

Hello friends! Today we're going to share with you how to make the super fluffy but light in the texture American style pancakes.
The pancake's shape and structure varies worldwide. But fluffy American pancakes are on my A-list. Everybody loves pancakes because they're so easy to make, but NOT THAT EASY. I mean if you want to make the most delicious one.
So we did some research to find the recipe. New York Magazine has voted Clinton St. Bakery Co’s pancakes are the best in New York city twice, so no doubt, we tried their recipe. And we love it. They are rich in flavor but light in texture. Super Yummy. Their pancakes are famous for a reason.
In this video, we’ll share the secret of these pancakes step by step, and how to make the fluffy texture (almost like a cake). They are great for a weekend brunch, and we strongly recommend topping with maple butter and blueberries compote. Of course you can also add some crisp fried bacon with it, they are a classic American breakfast dream team forever :). Wow~so enjoyable. Every day should start like this.

How to make blueberry pancakes
☞ Yield: 8~10 servings, using ¼ cup to scoop the batter
✎ Ingredients
📍 pancake
all purpose flour 160g
milk 220g
baking powder 6g
granulated sugar 70g
salt 2g
unsalted butter 58g, melted
egg 2, M~L size
vanilla extract 2g
📍 maple butter
maple syrup 160g (about 1/2 cup)
cold unsalted butter 110g, cubed (about 1/2 cup)
📍 blueberry compote
fresh or frozen blueberries 178g (1 cup)
granulated sugar 22g (2 tbsp)
lemon juice 5g (1tsp)
✎ Instructions
📍 pancake
1. Sift flour and baking powder together into a large mixing bowl. Then add sugar and salt and mix well.
2. Separate egg yolks from egg whites. Add vanilla extract, milk and melted butter into yolks bowl, and whisk until combined.
3. Beat the egg whites by electric mixer or by hand with a whisk until foamy, then add sugar in 3 batches and continue whisking until they reach medium soft peaks.
4. Pour the egg yolk and milk mixture into the dry mixture, just mix until the flour is dissolved, the batter will be slightly lumpy. Don't over mix it.
5. Next, gently mix half of the whipped whites into the batter, using the whisk to mix from the bottom, then add the rest of the whipped whites and keep folding it in, but no need to fully incorporate.
6. Heat the griddle until hot about 190°C. Drop half cup of pancake batter on the griddle to test the temperature and let set. Once bubbles form and pop, flip it. If the color is nice, the heat is enough. (A common mistake many people make is they don't heat the griddle enough, which is why we need to test the first one.) BTW, if you prefer the crispy on the edge, you can grease the hot surface with a little oil or butter.
7. Add 1/4 cup pancake batter, as the pancake cooks, you will see bubbles start to form on top, once the bubbles pop and become holes, it's time to flip. (3~3.5 mins per side)
8. Repeat the process with remaining batter, you can add some blueberries on top to create fruit flavor. Cooking several pancakes at a time. Transfer cooked pancake to a plate and garnish with confectioners’ sugar on top. Serve warm with maple butter and blueberry compote. Enjoy! To keep the pancakes warm while you make more, you can preheat the oven to 50°C and transfer cooked pancakes in to keep warm.
📍 maple butter
1. Heat maple syrup in a small saucepan over medium heat.
2. Add cold butter to warm syrup (never bring to a boil), whisking until sauce is smooth and all of the butter is incorporated. Maple Butter can also be kept refrigerated for up to two months. Reheat before using.
📍 blueberry compote
1. Simply combine blueberries, sugar and lemon juice in a small pot over medium-low heat, stirring continuously.
2. Once cooked, simmer for 4-5 minutes, keep stirring until a thick mixture has formed.

【Ingredients】 8 servings
★140g Bread flour
★200g Cake flour
★12g Baking powder
★40g Cane sugar(or Granulated sugar)
70g Unsalted butter
1 Egg(60g)
140g Soy milk(+more for brush the top)
80g Frozen blueberries
Blueberry icing:
15g ~ Powdered sugar
1tsp~ Blueberry powder
1 tsp~ Lemon juice
***Scones aren’t an overly sweet treat…so it’s the icing that adds the right amount of sweetness to this breakfast pastry.
【Directions】
Preparation:
Preheat the oven to 392 °F/200℃.
①Cut the butter into1cm cubes and cool it in the refrigerator.
②In a bowl, mix Eggs,Soy milk and cool it in the fridge.
③Combine the dry ingredients (★)and mix together with a whisk.
④Add the Butter.
Using fingertips, rub the Butter cubes into flour mixture until mixture resembles fine breadcrumbs. Do not over do it.
⑤Add ② to ④ and mix .
⑥Using your palm , flatten the dough to 3cm thick.
⑦Brush all over with Soy milk(or milk) and score into 8 rough squares. Bake for 18 minutes until golden.
⑧Cool on a wire rack.
To make Blueberry Icing, mix Icing Sugar, Blueberry powder and Lemon Juice until smooth. Place it in a piping bag , and pipe it out on the cooled Scones.

【作り方】
準備:
オーブンは200℃に温めておく。
①バターを1cm角に切って冷蔵庫で冷やしておく。
②ボウルに卵、豆乳をよく混ぜ冷蔵庫で冷やしておく。
③材料(★)をボウルに入れて泡立て器で混ぜ合わせる。
④ここに冷やしたバターを入れ、指先ですりこむように混ぜる。
全体に混ざって粉類がさらさらになればOk。無理に細かく混ぜようとするとどんどんバターが溶けてくるので、手早く混ぜ全体にバターが混ざった感じになればよい。
⑤④に②を加えて混ぜます。
⑥打ち粉をしながら、手で生地をまとめたら3cmの厚さに平らにする。
⑦生地を8個に切り分け、天板に並べたら、刷毛で豆乳(またはミルク)を塗る。黄金色になるまで18分焼く。
***小さくカットした場合は早く火が入りますので、気持ち短めで焼いてください。冷凍のブルーベリーを加えているので、生地の温度が上がりにくいです、しっかりと焼いてください。
⑧ワイヤーラックで冷ます。
完全に冷めたら、上にブルーベリーアイシングを絞る。
***ブルーベリーアイシング
粉砂糖にブルーベリーパウダーを加えて、レモン汁を少しずつ加えてよく混ぜ固さを調整します。
パウダーがないときはレモン汁のみを加えたアイシングにしてください。
