These days thick Chinese Biang Biang noodles have taken the World stage by storm like a good old Pappardelle pasta, but this noodle can be confusing to explain because it is found in 陝西省 (Shaanxi Province) & 西安市 (Xi'An City) within it, but also right next door at 山西省 (Shanxi Province). Notice how Shaanxi & Shanxi are spelt almost similar, but some argue the English phonetics are spelt in swapped order.

To make things more complicated, 'Biang Biang' actually describes the 'bang' sound whilst thumping the thick noodles dough on the board, whereas more official names 油潑 (You Po) describes the mixing dry Chili Oil sauce, vs 扯麵 (Che Mian) which highlights the Hand Pulled action with slightly center incision-dented noodles, which I have learned to make before. They all mean almost the same as overlapping subsets, coming from different directions of descriptive approaches.. But a small danger is reminded to notice their micro differences, as a 扯麵 Chemian served inside a soup is not registerable as a 油潑 Youpo mixed noodles. A good analogy is in Japan, a Mazesoba, Tsukemen or certain Poultry Sobas or Chuka Soba are considered a 'Ramen' genre but you can't say the reverse is necessarily the same.. Some Sobas in Japan aren't even a Buckwheat Soba, therefore belong in the Ramen camp, which also has Chinese 拉麵 history !

So anyway. This World, China or Hong Kong is a mess right now. But if we all step back to contemplate, it's always full of misunderstandings or you're arguing with a Nose vs your Mouth. But at the end of the Day... Escalating Violence for humans doesn't solve anything when u are all actually related. Everyone responsible, carrying power should at least try develop a truce non-fighting period 1st for proper negotiations. Otherwise we will all be our own losers when everyone continues to argue whilst defining between a Donkey, a Mule or just being an Ass 🎅🏻.. 【日式蝦仁焗通粉 Ebi Gratin】

材料 Ingredients:
— 白汁 White Sauce —
牛奶 Milk| 500 ml
牛油 Butter| 50 g
麵粉 Flour|50 g
月桂葉 Bay leave|1 pc
肉豆蔻 Nutmeg |1/4 tsp
洋蔥(切末) Onion (Minced) |1/2 pc
蝦仁 Shrimp | 8-10 pcs
牛油 Butter | 20 g
通粉 Macaroni | 200 g
白酒 White wine | 50 ml
芝士 Cheese | 200 g
調味 Seasoning |”
做法 Method:
1.先把通粉煮熟(可按包裝指示」,然後用清水沖至涼身,瀝水備用。
2.在鍋中放入牛油和麵粉煮成麵糰,再慢慢倒入牛奶,一邊攪拌。再加入香料,煮約10分鐘,放旁備用。
3.把焗爐預熱至最高溫( 攝氏200至230度)。
4.在鍋中放入牛油,加入洋蔥煮至軟身。放入蝦仁炒熟,再放入白酒、白汁和調味。煮多1分鐘後,加入通粉再煮片刻。
5.將烤盤掃上牛油,把白汁通粉倒入盤子中。再慷慨地放上大量芝士,再放入焗爐中焗3至4分鐘至表面金黃色。完成!
1.Cook the macaroni to your preference, strain and cool the pasta under cold, running water. Set aside.
2. Add butter and flour and cook until it forms a small lumpy dough, and add in milk. Keep stirring. Add herbs and cook for 10 minutes.
3. Preheat oven to the maximum temperature ( 200c to 230c )
4. Add butter, and saute onions until soft. Add shrimps and cook until its done, add white wine and season to taste. Cook for an extra 1 minute and add macaroni.
5. Grease butter onto an oven proof baking pan, and add macaroni. Be generous and add cheese. Bake for 3-4 minutes until top is browned. Enjoy !

You need only 4 ingredients! Using a bread machine and a pasta maker machine, you can make silky-smooth and chewy Udon noodles in a minute!!! (Any bread machine is OK if it can knead)
FYI: Perfectly kneaded dough is the KEY to activate the gluten in the flour and gives the noodles the silky-smooth and chewy texture. This is why we used a bread machine. My mom used to make udon like this when we lived in Jordan many many years ago 😉Using hands or feet is pretty much a work if you want to serve udon quickly for family.
If you don't have a bread machine, you can put the dough in a plastic bag, wrap in a towel, and knead with your feet for about 5 minutes until smooth. If you use your hands (palms) it may take for about 15 minutes.

Homemade Udon Noodles from Scratch
Difficulty: Very Easy
Time: 15min + 2hrs resting time
Number of servings: n/a
Ingredients
4 cups (500g) all purpose flour
1 cup (240ml) water
1 tbsp. salt
1 egg white
Directions:
((Using a machine))
1. Put all the ingredients in a bread machine and knead.
2. Place the dough in a plastic bag and rest for about 2 hours.
3. Divide it into 5, roll out the dough and put through the pasta maker machine at the dial to the widest setting (usually setting number 1). Feed it through the rollers.
4. Then begin rolling it thinner, by turning the dial to the next narrowest setting (most likely number 2).
5. Attach the noodle-cutting attachment to the pasta machine (3.5mm or 6mm is perfect for Udon), sprinkle the dough lightly with flour, and feed it into the cutting attachment.
6. Cook the Udon in boiling water for 10 minutes. Wash the noodles very well with running water if you want to serve cold Udon.
7. Serve the udon with shredded Nori seaweed sheet, wasabi, chopped onions, and Tsuyu (dipping sauce). You can also serve with Tempura! Yummy!
((by hands or feet))
1. Mix water and salt very well to make salted water.
2. Add water little by little then quickly mix with your hand until the dough crumbles. Make sure water is mixed evenly. When you see a lump, you want to crumble it.
3. Form it into a ball.
4. Knead the dough for 15 minutes using your palms, just like you make a bread, stretch the dough for a few times using your palms, fold it in half, turn it around (90C), and stretch again. Repeat and knead until smooth. You can put the dough in a plastic bag and step it on with your feet for 5 minutes, this allows you to get much more pressure on the dough to activate the gluten.
5. Put it in a plastic bag, rest the dough for 2 hours at a room temperature.
6. Roll out the dough into a thin rectangle, sprinkle lightly with flour, then fold it into thirds, slice it into 0.2 inch (5mm) or as you desire.
7. Cook the Udon in boiling water for 10 minutes. Wash the noodles very well with running water if you want to serve cold Udon.
8. Serve the udon with shredded Nori seaweed sheet, wasabi, chopped onions, and Tsuyu (dipping sauce). You can also serve with Tempura! Yummy!
((Udon Dashi))
Boil 600ml Dashi broth (made with Dashi powder is ok), 2 tsp. Soy sauce, 1 tbsp. Mirin (sweet Sake), ½ tsp. Salt in a pot.
