We survived 4 days of HBL, and today is also the start of PSLE. 💪
This time round, I never set up any schedule for the girls mainly because I wasn't very ready and since it's only 10 days 说长不长,说短不短. I have so much things not settle yet so I decided to let nature take its course. 🛶 船到桥头自然直。
Day time was pretty manageable, because the girls are busy with online work and homework. I prepare their snacks earlier which I shared on my IGS, or u can swipe left to see.
I started this in May which I shared on my blog (link in bio). Starting, they do not know how to control and finish the snacks before the "school" ends. Too bad no replenish. 😝
After awhile they get a hang of it and don't bother me about snacks, hungry etc.
They only keep calling me for IT stuff (no sound, no screen, change backgrounc) which is getting on my nerves especially when I'm trying to listen to my lecturer talking. 👹
It's not easy for us parents, it's also not easy for the kids.. although it seems like they are enjoying.. but occasionally they miss their friends, the social life they have and their emotions let out channel is greatly affected. Plus the uncertainty for those who are preparing for exam.
Sometimes not having a schedule, letting ourselves to relax awhile, it's good for our mental health.
Not sure how long this "one step forward, 2 steps back" restrictions will last.. 😅 it's good to rethink by changing our mindset so we can handle this pandemic better.

“You have to help me quit my job!”
Even though the video was off, I could tell from Bria’s voice that she was in tears. This strong woman couldn’t keep herself together anymore.
“You’re experiencing strong emotions now. That’s very natural,” I said, wanting to help her feel safe and accepted.
After all, Bria and I had only met once in an event. Knowing that I was a coach, she reached out the next day to see if I could help.
If there’s anything I’ve learned from my years of coaching, it’s that when the person is emotional, you need to give them the space to feel it.
So as Bria sobbed, I stayed silent, feeling my belly rise and fall with each breath. After a short while, I could sense that her wave of emotion had passed.
“Shall we take one long easy breath together?” I asked.
I heard her breathing with me. I paused, allowing Bria the time to settle, then I asked her to tell me what’s so difficult to her about her job.
After listening to her sharing, I said: “I can definitely help you, Bria.” I heard a sigh of relief on the other end. “But only if you promise me you won’t quit your job yet.”
3 months after that conversation, Bria waltzed in my office one evening holding a bottle of red wine: “Let’s celebrate!”
She had a giddy grin on her face, the very special grin with a dimple that I’d come to love after many hours supporting her. “Oh! Is it okay for us to drink a glass of wine in our coaching session?” She asked.
I laughed: “Of course. What are we celebrating?”
Bria said, her face brightened even more: “I just realized today that I have the perfect job!”
The most fascinating thing about this story is that the “perfect job” she referred to was the exact same job she had practically begged me to help her quit.
Bria’s circumstances hadn’t changed. But her experiences of the circumstances had changed 180 degrees. Why? Because she did.
Bria’s story teaches me once again, that life is truly created from the inside out.

Vegan Karaage (Soy Meat Fried Chicken) Recipe
Difficulty: Very Easy
Time: 40min (incl. marinating time)
Number of servings: 4
Ingredients:
100g (3.5oz.) dried soy meat blocks https://amzn.to/3zBFQ4m
* 2 tbsp. soy sauce
* 2 tbsp. sake
* 1 tbsp. grated ginger
* 1 clove grated garlic
* 1 tsp. sesame oil
2 tbsp. Katakuriko (potato starch)
deep frying oil
lemon wedges if preferred
Directions:
1. In a boiling water, cook dried soy meat blocks for 4 minutes. Or as directed on its package. Wash well (change water for a few times) to remove the bad smell, then drain well.
2. Mix the seasonings in a bowl and marinate the soy meat for about 30 minutes. Overnight is okay, longer makes them tasty.
3. Drain lightly (do not squeeze out the marinade liquid), coat with Katakuriko in a plastic bag.
4. Deep fry in oil at 180C (350F) until crisp golden brown.
5. Serve with lemon wedges if you like.

今日は、お豆腐を使って混ぜて焼くだけでできる『もちもちキムチーズ豆腐』を作りました!
外はこんがり中はもちもちで一度食べたらこの食感にハマること間違いなし!キムチとチーズと鶏ガラと醤油で味も決まっています!

@リンネル チャンネル リンネル 11月号増刊 特別付録のオサムグッズのシリコーンケーキ型を使ってスノースキン月餅を作ってみました。見た目はスノースキン感は弱いですが、月餅🥮の型がなくても、シリコン型で作れたのがポイント。伸びのよい柔らかな餅皮とホワイトチョコのミルキー感がとっても合います。包みやすい餅皮なので同量の餡でも包みやすいです。型離れのポイントは打ち粉。片栗粉を型や餅皮の側面に多めに振ってください。くっつかずに作業できます。型に餅が貼り付き、1回、失敗してしまいました。
昔から大好きだったオサムグッズ。付録でシリコン型が手に入るなんていい時代なんだ。
*レシピ*(およそ64mlの型 6個分)
ホワイトチョコ餡を作ります
1.ホワイトチョコ 42gを溶かす。
2.白あん 150gを入れ混ぜる。
3.6等分にする。
4.お好みにパウダーで着色する。
今回、かぼちゃパウダー・紫芋パウダー・いちごパウダー 各2g、バタフライピーパウダー・抹茶 各1gで着色しています。もちろんそのままでもOKです。
5.ラップで丸く包み、冷蔵庫または冷凍庫で冷やしておく。
餅皮を作ります。
6.耐熱ボウルに白玉粉 24g、水 96gを入れ粒がなくなるまで混ぜる。
7.加糖練乳 24g、サラダオイル 24gと上新粉 24g、薄力粉 8g、上白糖 24gをあわせてフルイ入れ、泡立て器で混ぜる。
8.ふんわりラップをして、600wの電子レンジで50秒加熱し泡立て器で混ぜる。
9.その後、20秒加熱を3回繰り返し、その都度、泡立て器で混ぜる。
10.更に20秒加熱を3回繰り返し、その都度、今度はゴムベラで混ぜる。
11.更に今度はラップをしないで、1分30秒加熱し混ぜないでそのまま粗熱を取る。
12.片栗粉を広げたバットなどに(11)を6等分する。
13.ラップの間に(12)を伸ばす。
14.(5)を包む。
15.シリコン型に押し込む。
16.冷蔵庫で冷やす。
17.型から取り出す。
18.でけた。かわいいうまい。オサムグッズかわいい。永遠だな。

* Recipe * (for 6 molds of about 64 ml)
Make white chocolate bean paste.
1.Melt 42g of white chocolate.
2.Mix in 150g of white bean paste.
3.Divide into 6 equal parts.
