用左細細個南瓜做個碗,而裡面既湯飲落非常
creamy,仲食到啖啖煙肉粒,鹹香十足。

[Recipe]Dairy-free Easy Pumpkin Soup 🎃
Pumpkin soup is one of my favourite Western soups and it is so easy to whip up a pot without any milk or cream but simply with chicken broth. I bumped it up with ingredients like chicken and mushroom to make it a wholesome meal but you can leave it out and the soup itself still tastes as good. No salt is added here because the chicken broth contains salt.
Ingredients (serves 3-4)
4 @hayley_singapore brioche burger buns (I got these from ntuc)
Pumpkin (about 500g with skin)
1 Tb @newmoonsg Cooking Oil
1 New Moon Premium Chicken Broth (400ml)
1 Yellow Onion, diced
8pcs whole Mili Champignons, sliced
1 portion cooked chicken breast, shredded
Chopped roasted almonds (for garnish)
English Parsley (for garnish)
Black Pepper (for seasoning)
Steps:
1. Steam the pumpkin till soft and scoop the pumpkin flesh into a pot. Discard skin
2. Add chicken broth and blend till smooth
3. In another pan, heat up oil. Sauté diced onion, followed by sliced champignons mushrooms and shredded chicken breast in a saucepan
4. Boil pumpkin soup. Once boiled, transfer the above into the pumpkin soup and simmer on low heat.
5. Season with black pepper.
6. Prepare bread bowl: slice the top of brioche bowls and remove as much bread until you are left with a hollow bread shell. Don’t throw the bread crumbs away as they can be made into croutons.
7. Toast everything in a preheated oven at 100 degrees for 10min.
8. To serve, fill the toasted bread bowls with pumpkin soup. Garnish with roasted almonds and English parsley

アレンジ多彩!おでんのレシピをご紹介します!
寒い季節に定番のおでんですが、暖かくなる季節にも食べたいですよね♪
今回は春にも合うように洋風にアレンジしました。
ポルチーニの香りが口いっぱいに広がってとっても美味しいです♡

チーズおでん
4人分
材料:
クリームチーズ(室温に戻す)100g
ピザ用チーズ 100g
モッツァレラチーズ(一口大に切る)100g
A水 1000ml
A薄口しょうゆ 大さじ2
Aみりん 大さじ1
Aオイスターソース 大さじ1
手羽元 4本
だいこん(輪切り)4切れ
じゃがいも(半分に切る)2個
Bキャベツ 200g
Bたこ(竹串に刺す)200g
Bエリンギ(2cm幅に切る)1パック
トマト(湯むき)1個
塩 少々
粗挽きコショウ 適量
■簡単ポルチーニソース
乾燥ポルチーニ 20g
水 150ml
玉ねぎ(みじん切り) 20g
バター 10g
薄力粉 大さじ2
牛乳 100ml
コンソメ 小さじ1/2
塩 少々
粗挽きコショウ 適量
作り方:
1. 鍋にAを入れてさっと混ぜ、手羽元、十字に切り込みを入れただいこん、じゃがいもを入れて加熱し、沸騰したら弱火にして、Bを加えて全体に火が通るまで煮込む。
2. 簡単ポルチーニソースを作る。乾燥ポルチーニは水で戻したらみじん切りにして、玉ねぎと一緒に小鍋に入れ、バターで炒める。
3. 薄力粉を加えて全体を混ぜ合わせたら、戻し汁、コンソメを入れる。加熱しながら牛乳を少しずつ加えて混ぜ、塩、粗挽きコショウで味を調える。
4. ボウルにクリームチーズを入れ、(1)の出汁を使って溶かしながら鍋に戻し入れたら、トマト、ピザ用チーズを入れる。
5. ピザ用チーズが溶けたらモッツァレラチーズを入れて、粗挽きコショウをふりかけて完成!

100g cream cheese (at room temperature)
100g shredded cheese
100g mozzarella (bite size)
1000ml water
2 tablespoons soy sauce
1 tablespoon mirin
1 tablespoon oyster sauce
4 sticks chicken wing
4 slices daikon
2 potatoes (cut into halves)
200g cabbage
200g octopus (on stick)
1 pack eryngii mushrooms (cut into 2cm pieces)
1 tomato (peeled)
Some salt
Some black pepper
◆Porcini sauce
20g dried porcini mushrooms
150ml water
20g onion (diced)
10g butter
2 tablespoons flour
100ml milk
1/2 teaspoon consomme powder
Some salt
Some black pepper
PREPARATION
1. Put water, say sauce, mirin, and oyster sauce in a pot. Make a cross slit into daikon. Put chicken's wings and daikon slices, potatoes into the pot. Heat the pot and turn the heat down to low once boiled. Add cabbage, octopus, and eryngii mushrooms into the pot and simmer until cooked.
2. To make porcini sauce, soak dried porcini mushrooms in the water until softened. (save the water for later.) Dice the mushrooms and sauté with onion and butter in a pan.
3. Add flour into the pan (2) and stir. Add porcini soaked water (2) and consommé powder. Add milk slowly while heating the pan. Season wit salt and black pepper.
4. Put cream cheese in a bowl. Add some dashi soup (1) into the bowl, so cream cheese softened. Pour cream cheese dash soup back to the pot (1). Add a tomato and shredded cheese.
5. When shredded cheese melted, add mozzarella. Season with black pepper.
6. Enjoy!
