Fish soup is one of our most-sought after lunch choices because it's healthy and super duper yummy. For those of you who haven't tried fish soup before, you gotta try it. It's really not as fishy as it sounds. In Singapore, fish soup is one of the most common dishes you can get at our hawker centres or coffeeshop. Instead of deep-fried fish or just normal fish slices, Roland pan-fried the fish first so that the soup will become even more milky looking without the need to add any milk.

Singapore Hawker Style Fish Soup 鲜味鱼汤Ingredients:
Serves 4 pax

500g chicken feet (blanch first)
2 tablespoons white peppercorn (dry roasted and coarsely crushed)
2L water
50g dried anchovies
800g white snapper (or any white fish e.g. sea bass)
30g young ginger (sliced thinly)
1 stalk of spring onion (use the stem part only)
280g long cabbage
100g Shimeiji mushrooms
1 slab silken tofu
2 tomatoes
1 teaspoon sugar
2 teaspoons salt
1 tablespoon Chinese cooking oil (Shaoxing Huatiao wine)

1.樹子炒山蘇
材料:
油2大匙 oil 2tbsp
薑片10g ginger
蒜片10g garlic
辣椒5g chili pepper
破布子及湯汁60g pickled cordia dichotoma with sauce
山蘇350g bird's nest fern
米酒1大匙 cooking rice wine 1tbsp
鹽少許 salt
作法:
1.鍋中倒入油熱鍋後爆香薑片、蒜片、辣椒與破布子與湯汁,待炒出香味之後加入山蘇,轉為大火炒熱後調味,加入米酒與少與鹽即可。
2.腐乳龍鬚菜
材料:
a.
油2大匙 oil 2tbsp
薑末10g minced ginger
蒜末10g minced garlic
辣椒5g chili pepper
肉末50g minced pork
豆腐乳3塊 fermented bean curd 3
腐乳汁 fermented bean curd sauce
龍鬚菜350g chayote leaves
米酒2大匙 cooking rice wine 2tbs
b.
鹽少許 salt
糖少許 sugar
作法:
1.鍋中倒入油爆香蒜末、薑末、辣椒後加肉末炒香,之後加入豆腐乳與腐乳汁拌勻,之後再加龍鬚菜與米酒。
2.蓋上鍋蓋燜一分鐘,再加入材料b調味即可。
3.丁香炒皇宮菜
材料:
a.
油2大匙 oil 2tbsp
蒜片15g garlic
薑絲20g ginger
辣椒片10 chili pepper
豆鼓20g fermented black bean
小魚乾20g dried anchovies
皇宮菜400g ceylon spinach
b.
米酒2大匙 cooking rice wine 2tbsp
鹽少許 salt
糖少許 sugar
作法:
1.鍋中加入油加熱爆香蒜片、薑絲與辣椒片,再加入豆豉、小魚乾與皇宮菜拌炒均勻。
2.最後加入材料b調味即可。
4.鮮菇肉絲炒水蓮
材料:
蒜末15g minced garlic
嫩薑絲10g ginger
辣椒片5g chili pepper
肉絲100g pork
鮮香菇50g shiitake mushroom
紅蘿蔔絲20g carrot
水蓮300g white water snowflake roots
米酒2大匙 cooking rice wine 2tbsp.
鹽2/3茶匙 salt 2/3tsp.
糖1/4茶匙 sugar 1/4tsp.
胡椒粉少許 ground white pepper
作法:
1.鍋中倒入油熱鍋爆香蒜末、嫩薑絲、辣椒片後,加入肉絲翻炒一下,再加入鮮香菇與紅蘿蔔絲炒勻。
2.接續加入水蓮後馬上淋入米酒,蓋上鍋蓋燜約1分鐘開蓋調味鹽、糖與胡椒粉少許即可。

Ingredients:
Serves 4 - 5 pax
550g of sea bass or any light tasting fish (keep bones and head for stock)
Marinate fish boneshead with 2 tablespoons of Chinese wine
Marinate boneless sliced fish with 1/2 teaspoon of salt, 1 tablespoon of cornflour and egg white from an egg.
Other ingredients

To make the soup stock

Some cooking oil
Marinated fish bones & fish head
15g of sliced young ginger
1.5L of hot water
1 pc of anchovies stock cube
Putting the rest of the dish together

15g of minced young ginger
5 pc of bird's eye chill (deseeded and chopped finely)
5 cloves of chopped garlic
200g of pickled mustard greens (sourish type)
Add soup stock
Add sliced fish
