I wasn't sure to feel grateful to have had experienced it "now" or dissapointed not to have tried it early, one thing was clear, I've never felt so relaxed, calm and confident in a Omakase experience than before thus.
Behind the addictive grin, bouncy waves of hair and inked forearms Chef Randee's deep knowledge and respect for product is acute, yet refreshingly we aren't having our nose rubbed into the fact, neither does Fillets find ways to make perfect produce more appeasing to misinformed palates by over saucing, gimmick plating, making sushi into mini meals or layering in foreign, luxurious ingredients which have no place in there.
Like a big and audacious ruby @filletbangkok doesn't stray from tradition as such but amplifies it potential, keeping skill, techniques align with tradition, the rock and foundation of every single bite.
If there's one Omakase, and with a Thai chef at the helm - mind you, this is the one of those you need to tick on your foodies bucket list. Unforgettable, a worthy star in my eyes. 🌟

1.) 巧克力方格
所需材料:
抺茶巧克力
打火機
作法:
用打火機加熱巧克力側面,然後用巧克力在盤子劃出格子圖案。這是用馬卡龍當甜點的漂亮擺盤方法。
2.) 用水果糖漿做畫
所需材料:
幾種不同口味的水果糖漿
作法:
將不同顏色的水果糖漿舀幾個不同大小的小點放在盤子上。然後轉動盤子,利用離心力讓水果糖漿向外延伸,形成一個星形圖案。這非常適合用在瑪芬蛋糕或其他各式蛋糕的擺盤上。
3.) 磨碎的棒棒糖
所需材料:
棒棒糖
刨絲器
刀子
湯匙
作法:
將刀子和湯匙交叉放在深色盤子或石板上。將棒棒糖拿在餐具上方,並在刨絲器上磨擦。磨碎的棒棒糖粉末,會在盤子上留下餐具的輪廓。
4.) Pocky餅乾棒擺飾
所需材料:
白巧克力Pocky餅乾棒
黑巧克力Pocky餅乾棒
吹風機
作法:
用吹風機將Pocky餅乾棒吹熱,直到巧克力融化為止。將Pocky餅乾棒放在盤子上幾秒鐘,然後拿開。就可以在盤子上擺上自己喜歡的甜點了。
5.) 巧克力筆刷
所需材料:
巧克力醬
刷子
作法:
在盤子上滴3大滴巧克力醬或融化的巧克力,再用刷子往同一個方向上刷開。然後,在每個 “筆刷”上放一個小甜點。
6.) 線型紋路
所需材料:
條形軟糖
果汁粉
篩子
作法:
將一條條形軟糖放在深色的盤子或石板上,把果汁粉用篩子篩在上面。之後小心會下條形軟糖,放上瑪芬或類似的甜點。
7.) 巧克力流線
所需材料:
巧克力醬或融化的黑巧克力
作法:
在白色盤子上淋一條巧克力醬,並將盤子稍微向上傾斜。巧克力醬會順著向下流動,形成漂亮的圖案。
8.) 巧克力棋盤圖案
所需材料:
方塊形巧克力
打火機
作法:
在巧克力底部加熱,然後以棋盤狀壓在白色盤子上。這很適合當蛋糕或瑪芬的擺盤。
