You can always see a super long queue for #煲仔飯 Claypot rice when you are in Temple street. Here comes the question - should you join the queue?
First of all, you have to know what is Claypot rice. It is rice cooked in a claypot with different ingredients, typical ones include chinese sausage #臘腸, toads thigh 田雞 and chicken 滑雞. You are allowed to choose 1 to 3 ingredients when you make the order. The essence of claypot rice is the soy sauce you add after your pot arrives and most restaurants have their unique formula.

I visited the well-known Claypot rice restaurant in Temple street - Four Seasons Pot Rice 四季煲仔飯. I queued up for 45 minutes and chose the claypot rice with chicken and chinese sausage as seen in the first photo. I was disappointed, as the essence is missing - they don’t have a good soy sauce and the pot rice has a light flavour. But they still have the roasted crispy rice at the bottom of the claypot - which is a must for claypot rice! Although the rice is disappointing, their deep fried oyster cake #蠔餅 is great (I do recommend everyone to try this! - check the second photo)

【懷舊港式美味|荷葉飯】

有一次在香港回首爾的途中,一邊想着有什麼廣東菜可以在首爾煮的呢?就在臨上機前到機場一間茶餐廳吃早餐,吃到那個糯米雞時,就立刻想到了在首爾做這個菜。
.
當然荷葉飯和糯米雞兩種不同的食物,分別在於荷葉飯是包着籼米(絲苗米),而糯米雞是包着的是糯米,我一向消化系統也不是太好,有時會胃部脹痛,所以還是做荷葉飯比較好。
.
在書桌上隨手翻看寫關於廣東點心的《粵廚寶典》,裏面說到荷葉飯在1500年前在中國已有歷史書記載,當時是將荷葉包着米飯和鴨肉,像是用荷葉做的飯盒一樣。從前是用鴨肉,現在找鴨肉好像不太容易,所以用雞肉取代。

記得小時候在茶樓的點心紙上,不難找到荷葉飯,但近年不知道是否做荷葉飯的工序繁複,好像也不是太多廣東酒樓的內可以找到,就算是另點的粥粉麵飯菜單,也不是容易找得着。
.
既然在外面不容易找到,那就在家做吧。我在擔心韓國在那裏可以買到荷葉,原來在網上的超級市場就可以找到了,不過一次要買20張左右,所以買了後便放在冰箱,有空便可以拿出來就荷葉飯呢。
.
相信不久之後我會做糯米雞的食譜了?希望你們會喜歡這個荷葉飯。
材料
雞肉200g
荷葉兩塊 (新鮮或乾的也可以)
雞蛋兩隻,蒜頭兩粒,薑兩片,瑤柱三粒,蝦米40克,冬菇六粒(小型),葱粒兩湯匙
絲苗米300克,煮熟後放涼
雞肉醃料
生抽半湯匙
糖一茶匙
鹽半茶匙
麻油半茶匙
紹酒半茶匙
冬菇醃料
生抽一茶匙
糖一茶匙
調味汁料
老抽一湯匙
生抽兩湯匙
麻油一茶匙
紹酒半湯匙
糖半湯匙
鹽一茶匙
做法
荷葉在水中洗淨,放入沸水中煮三至四分鐘直至軟身和有葉的味道釋出。
雞肉切粒,把雞肉醃料放入並醃十五分鐘。
瑤柱三粒, 蝦米40克,冬菇六粒,在熱水中浸軟或用室溫水浸過夜(六小時以上)。
冬菇切粒後,用一茶匙生抽和一茶匙糖調味。
將瑤柱撕碎。
將炒飯調味汁料拌勻。
雞蛋兩隻,打好。
在一個炒鑊中加半湯匙油,當鑊燒得微熱的時候放入蛋漿,煎成蛋皮及兩邊微微金黃。
蛋皮放涼後,切幼絲備用。
在炒鑊中加一茶匙油,開中火,放入雞肉,炒熟後盛起備用。
在鑊中炒香蒜頭和薑片,然後加入蝦米、冬菇和瑤柱。
加入雞肉。
放入米飯及調味汁料,炒至顏色均勻時,放入蛋絲和葱粒,盛起備用。
準備一個可放入蒸爐的容器,以荷葉鋪底。
然後將炒飯放入容器內, 用竹簽固定荷葉,大火蒸三十分鐘。
將蒸好的荷葉飯覆轉,煎一個開口,在飯面上放上蛋絲,葱作裝飾。
【Lotus Leaf Wrapped Rice】
Ingredients
2 lotus leaves (dry or fresh)
boneless chicken thigh 200g
2 eggs, 2 cloves of garlic, 2 slices of ginger, 3 dried scallops, 40g dried shrimp, 6 pieces of dried mushroom, 2 Tbsp chopped chive
300g Jasmine rice, cooked
Chicken marinate
1/2 Tbsp of soy sauce
1 tsp of sugar
1/2 tsp of salt
1/2 tsp of sesame oil
1/2 tsp of xiaoxing wine
Dried mushroom marinate
1 tsp of soy sauce
1 tsp of sugar
Sauce
1 Tbsp of dark soy sauce
2 Tbsp of soy sauce
1 tsp of sesame oil
1/2 Tbsp of xiaoxing wine
1/2 Tbsp of sugar
1 tsp of salt
Directions
Wash the lotus leaves. Bring a large pot of water to boil. Put lotus leaves into the pot and boil for 3-4 minutes.
Cut the chicken into small cube. Combine the marinate ingredients and mix well with chicken cubes. Marinate for 15 minutes.
Soak dried scallops, dried shrimp and dried mushroom into hot water or room temperature water for over 6 hours.
Dice dried mushroom. Marinate with 1 tsp of soy sauce and 1 tsp of sugar.
Shred the scallop by hand.
Mix the sauce well and set it aside.
Whisk 2 eggs.
Put 1/2 Tbsp of cooking oil into the pan, set the stove to medium heat. When the pan becomes warm, pour the egg and pan fried until it becomes crepes like.
Slice the egg crepes when it becomes cool.
Put 1 tsp of cooking oil into the wok, set the stove to medium heat. Add chicken cubes and fry until it becomes golden yellow.
Put 1 tbsp of cooking oil into the wok, set the stove to medium heat, saute the garlic clove and ginger and put the dried shrimp, mushroom and scallops.
Add in chicken cubes, rice and sauce. Stir fry until the colour of the rice becomes even. Put the egg and chives into the rice. Remove and set aside.
Prepare a glass container. Arrange lotus leaves into the container. Transfer the rice into the container.
Use the bamboo skewer to fix.
Steam the rice to 30 minutes.
Cut lotus leave with a knife. Decorate with egg crepe and chives.

■野菜ピザボート
アルフレッドソース 60g
ほうれん草 30g
アーティチョーク(スライス) 30g
マッシュルーム(スライス) 4個
パルメザンチーズ 50g
ドライトマト 20g
■バーベキューチキンピザボート
バーベキューソース 60g
サラダチキン(ひと口大にほぐす)150g
ピザ用チーズ 50g
赤パプリカ(細切り) 30g
紫玉ねぎ(薄切り) 30g
■生ハムピザボート
ジェノベーゼソース 60g
生ハム 30g
赤唐辛子 適量
パルメザンチーズ 50g
卵 3個
粗挽きコショウ 少々
作り方:
1.オーブンは230℃に予熱しておく。
2.クッキングシートを敷いた天板にバゲットの断面を上にして並べる。
3.ボウルにオリーブオイル、ガーリックパウダー、塩、コショウを加えて混ぜ、刷毛でバゲットに塗り、230℃のオーブンできつね色になるまで10分焼く。
4.ミートピザボートを作る。バゲットにマリナラソースを塗り、モッツァレラチーズ、サラミ、ソーセージ、ロースハム、ベーコンをのせる。
5.野菜ピザボートを作る。バゲットにアルフレッドソースを塗り、ほうれん草、アーティチョーク、マッシュルーム、パルメザンチーズ、ドライトマトをのせる。
6.バーベキューチキンピザボートを作る。バゲットにバーベキューソースを塗り、サラダチキン、ピザ用チーズ、赤パプリカ、紫玉ねぎをのせる。
7.生ハムピザボートを作。バゲットにジェノベーゼソースを塗り、生ハム、赤唐辛子、パルメザンチーズをのせ、卵を割り落とし、粗挽きコショウを振る。
8.230℃のオーブンで15分焼いたら、完成!

Sliced mushroom
Freshly grated Parmesan cheese
Sun-dried tomatoes
Barbecue Chicken Pizza Party Boat
Barbecue sauce
Cooked sliced chicken
Shredded pepper Jack cheese
Sliced bell pepper
Sliced red onion
Pesto Prosciutto Pizza Party Boat
Pesto sauce

Freshly grated Parmesan cheese

PREPARATION
Preheat the oven to 450°F (230°C). Line a baking sheet with parchment paper.
Place the loaves of bread cut-side up on the prepared baking sheet.
In a small bowl, combine the the olive oil, garlic powder, salt, and pepper. Brush over the bread.
Bake for 10 minutes, or until the bread is golden brown and dried out.
Top the bread with the toppings of your choice. You can mix and match any flavor combinations you prefer!
For Meat Lovers pizza, add marinara sauce, mozzarella, mozzarella, pepperoni, sausage, ham, and bacon.
For Alfredo Veggie pizza, add alfredo sauce, spinach, artichokes, mushrooms, Parmesan, and sun-dried tomatoes.
For Barbecue Chicken Pizza, add barbecue sauce, chicken, pepper Jack, bell pepper, and red onion.
For Prosciutto Pesto Pizza, add pesto, prosciutto, roasted red pepper, Parmesan, eggs, and pepper.
Bake the pizza party boats for 15 minutes, or until the ingredients are heated through and the cheese is fully melted.
Slice and serve!

SUMMER IS HERE!!! ahhh i love summer ?
First off, I know I'm super bloated in this video ?? My mom and younger sister were visiting so we had a "family" hotpot night yesterday ? It was yummy tho, I cut up some sausage octopus ?
Second of all...do you notice anything different? This is my first video in my new apartment! ? Looking at my old empty apartment before I left, I was reminded of when I first moved to LA and realized how much I've grown. It's always a bittersweet feeling to realize how much you've changed (usually because growth comes from overcoming tough situations ack), but change is good! I always like to say no good comes from staying comfortable. It keeps you stagnant and running in one place. So even though I will maybe miss my old apartment, I'm happy to be in a new place and mindset. I hope you've all changed (for the better) over the past year too ? Now, on to summer vacay!
