One of the new dishes at Mrs Pho latest @313somerset outlet is this Premium Pho ($19.80) 🐮 featuring 36-hour sous vide short ribs marinated in a custom made spice rub. The beef broth was flavorful and the rice noodles were very smooth.
Classic items such as Beef Pho ($14.90) comes in an improved recipe made with premium beef from Japan. One can also add on the beef tendon bowl ($5.50) for the the ultimate beef pho experience like no others.

《灣仔超高質西餐。賣相靚仲超好食🥩😻》
觀塘人氣西餐,應該都冇乜邊個唔識。繼之前喺紅磡開咗分店後,最近開到嚟灣仔,港島嘅朋友終於唔使過海食好西😆。九龍區兩間分店都試過,呢間開喺公司附近冇理由唔試埋😚🤟🏻。

夜晚去到都坐滿九成,食過後就明白真係抵佢紅㗎 !

📍小食拼盤Snack Platter($148)
小食拼盤上有3款菜式,牛油果三文魚子蟹肉脆餅底層放咗薄脆,蟹肉味非常鮮甜🦀。水牛城雞翼雞肉飽滿,辣味突出🌶。當中最好味嘅係墨西哥芝士洋蔥餡餅,餅皮柔軟餡料豐富,芝士味香濃🧀,真係好好食😆。

📍生牛肉他他脆餅Beef Tartare Tostada($162)
牛肉嫰滑下邊配上薄脆,好易入口,但味道可以再濃啲。

📍BB菠菜香橙八爪魚沙律Octopus Salad (fresh veggie with orange segment, salmon roe and sesame dressing)($138)
八爪魚沙律賣相精緻✨仲要落埋食用花,未食睇到已經開心😍。除咗有生菜🥗,其他配料都好充足,仲有洋蔥🧅、車厘茄🍅、香橙🍊、八爪魚🐙同三文魚子。最後仲加咗胡麻醬,味道酸酸甜甜非常開胃👍🏻。不得不提八爪魚非常柔軟,仲食到鮮味,好出色。

📍慢煮36小時牛肋骨36 Hours Sous Vide Short Ribs($588)
牛肉顏色粉嫰非常吸引😍,口感嫰滑完全冇筋,加上肥瘦衡秤,肉質包住脂肪,牛味濃郁但唔會過肥,慢煮36小時真喺唔講得少,非常高質🥩❤️,份量足夠4人分享。旁邊配上車厘茄🍅、焗蒜頭🧄同薯蓉🥔。要讚吓薯蓉整得好好食👍🏻,口感軟綿順滑,中間仲食到薯仔粒,調味適當,必食呀😚。

📍蟹肉帶子龍蝦汁意大利闊條麵Fettuccine in Lobster Bisque($178)
闊條麵口感煮得啱啱好🍝煙韌有咬口,帶子雖然只有一粒,但係珍寶size之餘仲要係似刺身級質素,外面煎到金黃中間仲係軟嫰😍。醬汁喺龍蝦汁再加上蟹肉,配上雜菌同秋葵,口感豐富,都幾好食😋。

📍招牌特濃豆腐芝士餅Tofu Cheesecake (homemade sesame dressing, candied cashews)($78)
豆腐蛋糕坊間少見🍰,賣相見到俾過心思🥰。蛋糕質感綿密食到豆香,底層仲有厚餅底,味道唔會過甜,食完都唔會覺得膩😙。

📍Lychee Rose (homemade rose syrup, roselle tea, lychee)($68)
飲品內有玫瑰糖醬🌹、洛神花茶同荔枝,整體上味道酸酸甜甜,聞落玫瑰味好香,加上飲品造形非常少女,岩哂唔飲酒嘅人仕🙌🏻!

另一款飲品由芒果泥🥭、檸檬🍋同雪碧組合而成,落咗雪碧飲落有汽幾有趣😝!芒果Mix檸檬嘅組合好百搭,沒有不喜歡的理由吧!

📍Heroes Birdie & Hankle($48)
Saison Gwaifa, alc 6.9%, Hong Kong
同行嘅草根爸爸飲咗罐6.9%嘅啤酒🍻,啤酒苦澀味較少,酒精味唔太強😉容易入口,當中夾雜着清新嘅花香味🌸,啱啲想飲酒但又飲唔到太濃烈嘅朋友😍。

成餐飯每道菜式都好好食,尤其喺個牛肋條同沙律真係令人覺得驚艷😻,感覺灣仔分店仲要好食過九龍嗰兩間,有機會嚟試埋個lunch,大推俾大家❤️!

We went down to Mrs Pho to demolish a MASSIVE 6KG (13LB) PHO CHALLENGE! Mrs Pho, located at 313@somerset, serves authentic Vietnamese cuisine and specialises in its namesake, pho. The chef, a feisty Vietnam native, offered us a mega version of her special menu item, Premium Short Ribs Pho. Only offered at Mrs Pho’s Somerset outlet and created by the chef herself, the bowl comes with your usual pho toppings of beef balls and sliced beef but with the addition of a hefty piece of short rib that was sous vide-ed for 36 hours.
With over 5 portions of noodles, 3-4 servings of meat and a bucketful of broth, the bowl came up to a whopping 6KG. I began with the star of the pho, the short rib, and it really was the best part. Succulently tender and meaty together with a hit of umami from being submerged in the pho broth. Adding on the available chilli sauce helped to bring out a different dimension to the short rib.
The broth itself was not as strong as I had expected, actually being mild yet not bland. It served as a good base for you to craft the bowl to your own liking and to bring out the flavours of the toppings. You can add chilli for more spiciness, fish sauce for greater saltiness and Vietnamese-style brown sauce (tasted sort of like marmite) for an umami kick.
I especially enjoyed the noodles, which had bite to them and soaked up the broth beautifully. The beef balls were excellent as well, firm and bouncy. They also serve a special in-house chilli sauce that was devilishly spicy. I could not handle it but I am sure most of you would enjoy it immensely.
This was a pleasurable challenge that I completed in under 30 minutes, which is decent for a massive 6KG bowl of pho. Mrs Pho’s Somerset outlet is newly opened and located right at the entrance to the MRT station in the building. Massive queues are common on weekends (a testament to their excellent food) so be sure to plan adequately for your visit to Mrs Pho!

今集用最簡單嘅慢煮牛扒去分享一次我點樣去計算一件牛扒要煮幾耐,會根據牛頓冷卻定律 (Newton's Law of Cooling),
呢個計算方式會用到積分 (Integration) 同少量物理解釋,有啲人可能會認為係痴L線,當然懂得嘅觀眾可能睇得好過癮,好想試下自己玩一次,點都好呢個計算方法可以應用係慢煮或者烤焗上面,道理相同。
注意:肌肉纖維較多嘅部位例如牛仔骨,牛腩呢啲位置雖然都可以計算得到時間,但係我哋都需要額外嘅時間去令到佢哋變腍。

This video is to share how I use a scientific way to estimate the time needed for a piece of meat to cook with sous vide. This theory can be applied to sous vide cooking, or in the oven.
