I was not - I repeat - I was not about the leave this wonderful island without trying the iconic Babi Guling (turning pig), a suckling pig dish rubbed with garlic, ginger and turmeric and served with various delectable sides such as long bean salad, a Sambal (spicy paste) of lemongrass and shallots, pork blood sausage and the sexiest sheet of pork crackling I have ever seen. Like a sheet of deep burnt orange glass it glistened, and snapped ever-so delicately between the teeth, and the sticky layer of thin fat melts ceremoniously onto the tongue. A plate of fluffy Balinese rice to accompany the robust medley is a must but the clear soup with vegetables is optional, yet recommended if you ask me! Highlight of the tour indeed and something that will bring me back, both in memory and in good time. We ❤️ Bali. @ Bali
