【材料】
18cmパウンド型
・バター 110g
・グラニュー糖 100g
・全卵 2個(105g)
・薄力粉 100g
・ベーキングパウダー 2.5g
・レモン汁 15g
・国産レモンの皮 1個分
グラスアロー
・粉砂糖 65g
・レモン汁 13g
・国産レモンの皮やピスタチオ お好み
【準備】
・バターを室温で柔らかくしておく
・卵を常温で置いておく
・レモンの皮をよく洗って水分をふき取り、すりおろす
・パウンド型にオーブン用シートを敷く
・薄力粉、ベーキングパウダーはふるって使う
・オーブンを170℃に予熱する
・焼成後、オーブンを170℃に予熱する
【作り方】
1. 柔らかくしたバター110gを混ぜてクリーム状にする
2. グラニュー糖110gを加え、よくすり混ぜる(泡立て器でもハンドミキサーでもOK)
3. なるべく分離しないように溶いた卵2個分を少しずつ加え、その都度よく混ぜて乳化させる
4. しっかり混ざったら薄力粉100g・ベーキングパウダー2.5gをふるい入れさっくりと混ぜる
5. 粉っぽさが少し残り状態でレモンの皮のすりおろし1個分・レモン汁15mlを加える
6. 同様にさっくり混ぜ、粉っぽさがなくなって少しツヤが出たらオーブン用シートを敷いたパウンド型に詰める
7. 表面を均し、170℃に予熱したオーブンで45分前後焼く(竹串をさして生地が付いてこなければ焼き上がり)
8. 焼いている間に、粉砂糖65gにレモン汁13gをよく混ぜる
9. 焼成後すぐにオーブンを200℃に予熱し、熱いうちに型から取り出し↑の粉砂糖+レモン汁を全体に塗る
10. 上面の真ん中のラインにレモンの皮を散らし、170℃に予熱したオーブンで1分焼いて完成
