Ingredients:
MEATBALLS:
1 1/2 pounds of ground beef and pork mixed (ground lamb is amazing if you want to take it to the next level--Tim doesn't like lamb)
2 small onions, chopped
3 cloves garlic, minced
1-2 tbsp Za'atar
1 handful each of parsley and mint, chopped
2 eggs
1/4 cup breadcrumbs
Salt and Pepper (about 2 good pinches of salt, and 5-6 grinds of fresh pepper--remember to cook, taste and adjust)
SAUCE:
2 swirls of olive oil
1 medium onion and 1 garlic glove, chopped small
1/2 tsp cinnamon
1/2 large can of good quality tomatoes (1 small can)
1/4 cup good quality green olives
zest of 1 lemon
Cous Cous
1 cup cous cous (I like whole wheat)
1 cup stock or water (boiling)
Pinch salt
Zest and juice of 1/2 lemon
handful of chopped dill
feta and pinch of saffron (optional)
SALAD:
3 roma tomatoes, cubed
3 Lebanese cucumbers, cubed (or 1 English cucumber)
1/2 small onion, chopped small
1 handful each of parsley and mint, chopped small
1 1/2 tbsp Sumac
juice of 1/2 lemon
3-4 swirls of olive oil
salt and pepper (very important to season the salad for MAX flavor)
