鴨掌釀豬肉
材料：
急凍鴨腳4隻
免治豬肉半斤
綠豆粉絲4兩
芫荽1棵
辣椒仔1隻
處理：
1. 大火在鑊中煲滾1鑊水。
2. 放鴨腳煮5分鐘去污漬。
3. 粉絲，清水浸軟。
4. 豬肉調味：
a. 生粉1茶匙
b. 油1茶匙
c. 糖半茶匙
d. 蠔油1茶匙
e. 胡椒粉少許
攪勻。
5. 預備芡汁：
a. 蠔油1湯匙
b. 老抽半茶匙
c. 糖半茶匙
d. 水400毫升
攪勻。
6. 鴨腳已烚了5分鐘，倒去水分，輕手用清水洗乾淨，擎乾水，用廚紙索乾。
7. 預備生粉2湯匙。
8. 揸住鴨腳。
9. 塗少量生粉在鴨腳內。
10. 釀免治豬肉在鴨腳內，壓實。
11. 芫荽，切碎，辣椒仔，切粒。
烹調：
1. 大火在鑊中燒熱油1湯匙。
2. 放鴨腳，豬肉面向下。可加入少量油。
3. 豬肉已煎至金黃色，轉慢火，反轉另一面。
4. 轉大火，加入芡汁，大火炆5分鐘。
5. 已炆了5分鐘，加入粉絲，煮滾及煮至收汁。
6. 完成，上碟，加入芫荽碎和辣椒粒，可享用。
Stuffed ducks' feet with minced pork
Ingredients:
Frozen ducks' feet 4 Nos.
Minced pork 0.5 catty
Mung bean vermicelli 4 taels
Coriander 1 No.
Chili 1 No.
Preparation:
1. Heat up a wok of water at high flame.
2. Put ducks' feet, soak for 5 minutes to remove dirts on them.
3. Mung bean vermicelli, soak in tap water until it turns soft.
4. Season the pork:
a. Tapioca starch 1 tsp
b. Oil 1 tsp
c. Sugar 0.5 tsp
d. Oyster sauce 1 tsp
e. Pepper little
Mix well.
5. Prepare sauce:
a. Oyster sauce 1 tbsp
b. Dark soya sauce 0.5 tsp
c. Sugar 0.5 tsp
d. Water 400ml
Mix well.
6. Ducks' feet have been soaked for 5 minutes, pour away water. Rinse lightly with tap water. Hang dry. Dry with kitchen towel.
7. Prepare tapioca starch 2 tbsp.
8. Hold the duck's foot.
9. Put little tapioca starch on duck's foot.
10. Stuff minced pork in it, press well.
11. Coriander, chop well. Chili, get it diced.
Steps:
1. Heat up oil 1 tbsp at high flame in wok.
2. Put ducks' feet, pork faces down. Add little oil.
3. Pork has been fried into golden yellow. Turn to low flame. Flip over the ducks' feet.
4. Turn to high flame. Put the sauce. Braise at high flame for 5 minutes.
5. Have been braised for 5 minutes, put vermicelli, wait for boiling up and braise until the sauce becomes thick.
6. Complete. Put on plate. Put coriander and chili cubes on top. Serve.

Braised Stuffed Duck Feet with Glass Vermicelli? Unique Combination of Textures?

獨特口感組合
Stuffed Duck Feet
(釀鴨脚)
冬菇蘿蔔鴨掌煲：
材料：
鴨掌8隻
冬菇12隻
蘿蔔1條
薑10片
蔥1棵
處理：
1. 蘿蔔，去皮，刨2次。
2. 蘿蔔，切細舊。
3. 煲滾1煲水，加入鹽少許，放蘿蔔，冚蓋，熄火。
4. 另一邊鑊，煲滾水，放鴨掌，加入粗鹽1茶匙，煮2分鐘，去污漬。
5. 鴨掌已滾了2分鐘，倒去水分，清水逐隻洗乾淨，擎乾水。
6. 蘿蔔已浸了10分鐘，倒去水分，清水沖洗乾淨。
烹調：
1. 中火在煲仔內燒熱油1湯匙。
2. 爆香薑片。
3. 加入冬菇炒香。
4. 加入蠔油1湯匙。
5. 加入冰糖及水200毫升，冚蓋，開始炆。
6. 另一邊，在鑊中加入油1湯匙。
7. 中火爆香鴨掌，去除雪味。
8. 轉慢火，加入：
a. 鮑魚汁半湯匙
b. 生抽1湯匙
c. 老抽半湯匙
d. 水200毫升
e. 冰糖1大粒
中慢火，炆。
9. 冬菇已炆了10分鐘，加入蔥段及蘿蔔，煮滾。
10. 鴨掌已煮至收汁，加入黑椒1茶匙，轉慢火，炒勻。
11. 加鴨掌入煲仔，炆2分鐘。
12. 完成，可享用。
Ducks' feet claypot with mushrooms and white radish:
Ingredients:
Ducks' feet 8 Nos.
Mushrooms 12 Nos.
White radish 1 No.
Ginger 10 slices
Green onion 1 No.
Preparation:
1. White radish, get it peeled, 2 times.
2. White radish, cut in small pieces.
3. Boil up a pot of water. Add little salt, put white radish. Cover up the pot. Turn off fire.
4. On the other side, boil up a wok of water. Put ducks' feet, add cooking salt 1 tsp, boil for 2 minutes, to remove dirts on those feet.
5. Ducks' feet have already been boiled for 2 minutes, pour away water. Rinse them one by one. Hang dry.
6. White radish has been soaked for 10 minutes, pour away water, rinse thoroughly.
Steps:
1. Heat up oil 1 tbsp at medium flame in pot.
2. Fry ginger well.
3. Fry the mushrooms.
4. Add oyster sauce 1 tbsp.
5. Add rock sugar and water 200ml. Cover up the pot. Start to braise.
6. On the other side, add oil 1 tbsp in wok.
7. Fry the ducks' feet at medium flame to remove unpleasant smells.
8. Turn to low flame, add seasoning:
a. Abalone sauce 0.5 tbsp
b. Light soya sauce 1 tbsp
c. Dark soya sauce 0.5 tbsp
d. Water 200ml
e. Rock sugar 1 big cube
Braise at medium~low flame.
9. Mushrooms have been braised for 10 minutes, add green onion, which has been cut in lengths and white radish. Wait for boiling up.
10. Ducks' feet has been braised well, the sauce has been turned thick. Add black pepper 1 tsp. Turn to low flame. Fry well.
11. Put ducks' feet into pot, braise for 2 minutes.
12. Complete. Serve.
