Sautéed Pigeon with Fried Yunnan Ham & Sea Cucumber. Today's version is served 位上 individual portion. Very good rendition, there's a few HK Cantonese institutions serving this, the sauce for the Pigeon coating has depth here. The Fried Ham is also not salty hard, properly treated this round
🌟鮑魚飄香荷葉飯
Steamed Fried Rice with Braised Abalone, Chicken, Conpoy in Lotus Leaf basket. I have had so many versions of this before, but again this stands out from the soy mixture sauce & Dried Conpoy 乾瑤柱 infusion they use here. The taste & smell is totally Classic retro, very 1980's.. Many look & emulate similar, but doesn't taste like this!
🌟蓮蓉西米焗布甸
Baked Sago Pudding with Lotus Seed, a more permanent fixture. Compared to my numerous experiences of this, this time it could be baked a bit longer, stickier caramelized 🤔

翡翠龍穿鳳翼 竹筍 雲南火腿
Braised Chicken Wings stuffed wtih Yunnan Ham & Bamboo Shoot. Notice this stuffing is chosen purely for the taste & textural combination contrast, very old school. Not for novelty factor with say Birds nest or Shark Fin, which both are appreciated in their own ways
瑤柱花膠扒柚皮
Braised Pomelo Skin with Fish Maw & Dried Conpoy. The Seasonal Pomelo skins, just ripe plump sweet & less fibrous

🌟芋頭鍋貼大明蝦 煎蓮藕餅 Crispy Taro Nest with Prawn, Pan Fried Lotus Root with Mince Pork & Shrimps Paste
Michelin 2 🌟🌟【Ying Jee Club 營致會館, Central】has a squarish Prawn Toasts with Foie Gras 鵝肝蝦多士 item already, but the addition above using 芋角 vs 多士 as a base is part of 懷舊菜式餐單 𝕋𝕣𝕒𝕕𝕚𝕥𝕚𝕠𝕟𝕒𝕝 ℂ𝕒𝕟𝕥𝕠𝕟𝕖𝕤𝕖 𝕄𝕖𝕟𝕦 𝕊𝕖𝕥 𝕗𝕠𝕣 $𝟠𝟠𝟘 𝕡𝕖𝕣 𝕡𝕖𝕣𝕤𝕠𝕟, which is amazing value & super tasty too across the board. Due to lockdowns, I think they should extend this menu serving period for everyone to try savor!

點心絕對是粵菜飲食文化其中重要的一環。由行政總廚蕭顯志師傅掌舵,米芝蓮二星粵菜餐廳營致會館由即日起推出全新的點心菜單,為饕客精緻演繹各色巧手美點。
全新的點心菜單於每天午市供應,包羅一系列經典及精緻蒸餃包點等,所有點心為全手工即叫即製。精選包括芙蓉海皇水晶餃﹙港幣87元﹚,飽滿的餡料以鮮蝦及帶子拌入蛋白,入口細滑。香茜鮮蝦餃﹙港幣87元﹚亦相隔三年後重新推出,翠綠色的蝦餃皮每天早上以新鮮芫茜浸泡的水混入澄麵製成,包裏嫩滑的鮮蝦、竹筍絲及芫茜碎,淡淡清香。
金腿蘿蔔絲酥餅﹙港幣78元﹚是一道展現蕭師傅及其團隊精湛手藝的點心。香脆酥化的千絲酥皮製作工序繁複,需不停反覆摺叠搓揉而成;酥脆輕盈的外層包裹著幼細蘿蔔絲,特意配上風乾雲南宣威火腿,微微鹹香更能突顯蘿蔔的清甜。蕭師傅亦將傳統中式酒席宴會的焗釀響螺重新演繹成葡汁海皇焗響螺酥﹙港幣78元﹚,將餡料釀入鬆化酥皮而非響螺殼,配以椰汁、黃咖喱及牛奶自家製成的葡汁,精緻美味。
為素食者而設精緻素菜點心
素食已成為近年所重視的飲食趨勢,蕭顯志師傅亦特別設計多款以新鮮蔬菜及菇菌入饌的素菜點心。紫紅色的紅菜松露鮮菌石榴球﹙港幣78元﹚以精緻剔透的外皮包裹著薄切的紅菜頭、雞脾菇及白菌,最後加上黑松露醬作點綴,更添香味。彩蔬竹笙上素粉果﹙港幣78元﹚是經典潮州點心的優雅變奏,餡料拌入爽脆的馬蹄、竹笙、西芹及紅椒,健怡可口。松茸野菌健怡腸粉﹙港幣90元﹚即叫即拉,皮薄幼滑的腸粉鋪滿松茸、羊肚菌、靈芝菇及花菇,菌香濃厚。
周末無限暢飲香檳及葡萄酒
凡於周六日及公眾假期的午市時段,客人亦可以每位港幣398元享用兩小時無限暢飲法國哈雪Charles Heidsieck Brut Reserve香檳、品酒師精選紅白酒、啤酒及汽水,以美酒搭配各款精緻點心佳餚。
