短刺海膽屬塔斯曼尼亞原生品種，與長刺海膽不同之處，在於無被當地政府介定為「害蟲」，而且同鮑魚，龍蝦一樣，有捕撈限額。季節只有每年8-12月，捉完就好可能提前結束。再加上同長刺海膽比較，相對細塊同肉少。

收穫比率僅為5%，比長刺的平均9%還要低... 因為勞工成本很高。

法國藍龍蝦產自法國西北部著名的布列坦尼Brittany，因其外殼泛著神祕的藍色光澤而得名。在眾多的龍蝦品種中，藍龍蝦需要經過30-35次脫殼，平均七至八年時間，才生長至兩磅重。由於產量少，所以尤其矜貴，而且肉質非常爽脆鮮甜，是廚師入饌選用的一種充滿發揮空間的上等食材。

來自法國布列塔尼的歐洲藍龍蝦被譽為水產中的藍寶石。由於藍龍蝦的出現基於基因變異，所以數量十分稀少，而且出口時温度及環境變化令存活率低，身價極高。藍龍蝦在法國經高壓HPP技術，低溫脫殼，100% 殼肉分離，龍蝦肉完整衛生。

This year marks the biggest ever Decanter World Wine Awards(DWWA), which is already the world’s largest and most influential wine competition thanks to a rigorous judging process overseen by international experts.

DWWA 2021 included a first Best in Show medal for a ‘Vin Jaune’ – or ‘yellow wine’ – a speciality of the Jura region of eastern France. The winning wine was Domaine Berthet-Bondet, Château-Chalon 2013, made from 100% Savagnin.

Wine cooperative St. Jodern Kellerei in the Valais region already farms some of Europe’s highest vineyards, and it reached the summit of DWWA in 2021 after its ‘Heida Barrique’ 2019 won a Best in Show medal.

We get entries from every corner of the wine world, so it is as it were the closest you can get to a universal benchmark.”

甘栗を使った焼き込みタルトです。アクセントに、クランベリーとくるみも入れてみました！縁にのせたクランブルも歯ごたえがあって美味しいですよ。
ポイントは、アーモンドクリームを分離させない事です（分離すると少し油っぽいタルトになります）。分離させないように少し温めた卵を少しずつバターに加えてくださいね(^-^)

3-4 drops vanilla oil, optional

55g (1.95 oz) unsalted butter, room temperature
50g (1.75 oz, 6 Tbsp) brown sugar
45g (1.6 oz, 3 Tbsp) beaten egg
50g (1.75 oz, 8.5 Tbsp) ground almonds
10g (1 Tbsp) cake flour, or all-purpose flour
1 tsp rum

■ Filling
100g (3.5 oz) sweet roasted chestnuts
15g (0.5 oz) dried cranberries
35g (3 Tbsp) granulated sugar
4 Tbsp boiling water
1 Tbsp rum
25g (0.9 oz) walnuts

■ Crumble Topping
10g (0.35 oz, 1 Tbsp) unsalted butter, well-chilled
10g (1 Tbsp) cake flour, or all-purpose flour
10g (1.5 Tbsp) ground almonds
10g (1.2 Tbsp) brown sugar

■ For Brushing
