Here, I would like to share this super easy, yet absolutely delicious recipe with you. I hope you’ll have a go at making it.
The main ingredients for this soup are tofu, bamboo shoots, dried shiitake mushrooms, dried wood ear mushrooms, carrots, mung bean vermicelli (glass noodles), chilli bean paste, vinegar etc; cooked in a clear soup. The dish is characterised by it's sour, spicy, fresh, salty and fragrant flavours.
This soup is rich in nutrients such as protein, calcium, iron, dietary fiber, minerals, and vitamins. It is an indispensable and appetising healthy food which will helps to relieve heat in the hot summer.
Since dried shiitake mushrooms and dried wood ear mushrooms may not be something that people in the UK are familiar with, I have used fresh shiitake mushrooms in this recipe instead, and omitted the dried wood ear mushrooms. However, the traditional ingredients can be found in any Chinese supermarket, Amazon, and Sous Chef.
Shiitake mushrooms are one of the most popular mushrooms worldwide. They are prized for their rich, savory taste and diverse health benefits. Compounds in shiitake may help fight cancer, boost immunity, and support heart health.
You’ll only need 4-5 dried shiitake mushrooms (乾香菇) and 1 piece of dried wood ear mushrooms (木耳). The cooking method for these two ingredients are different to the fresh alternatives, if you have managed to find them and want to use them, let me know and I’ll be happy to explain.
I have found all the suppliers for the above ingredients and have attached the images in the comments below if you do want to give them a go.
You can get the fresh shiitake mushrooms, bamboo shoots and mung bean vermicelli from Tesco, just make sure you search online to ensure they stock them in the branch that you visit.

✳️ Ingredients:
(serves 4)
200g medium firm tofu
250g fresh shiitake mushrooms
1/2 medium carrot
60g tinned bamboo shoots
50g mung bean vermicelli
4 slices ginger
1 tbsp sunflower oil
coriander- washed and chopped to garnish
✳️ Seasonings:
* 1 tsp salt
* 1 tbsp light soy sauce
* 1/2 tsp ground white pepper
* 2 tsp sugar
* 2 tsp sesame oil
* 3 tbsp dark balsamic vinegar
* 2 tbsp white balsamic vinegar
* 1 tbsp chilli bean paste (豆瓣醬 Doubanjiang - you can add more if you can handle the heat)
* 2000ml water
* 1 tbsp vegan oyster sauce / vegan stir-fry sauce
* 3 tbsp corn flour
* 3 tbsp water
✳️ Method:
1. Soak the mung bean vermicelli in warm water until soft, then use scissors to cut into sections.
2. Gently wash and pat dry the tofu and fresh shiitake mushrooms and cut both into thick strips.
3. Peel the carrot, and cut into thin strips. Drain the bamboo shoots, rinse and cut into thin strips.
4. Cut the ginger slices into thin strips then finely dice into small cubes.
5. Mix the corn flour and water together to make a slurry and leave to one side.
6. Heat a large saucepan over medium heat, add oil, then add ginger and fry until slightly brown, stirring gently. Next, add the bamboo shoots and carrots, stir-fry together for a while, add salt, soy sauce, pepper, sugar and sesame oil, and fry until soft.
7. Pour in the black vinegar, white vinegar, vegan oyster sauce and chilli bean sauce. Then, add water and bring to a boil. Turn to low heat and continue to cook for 5 minutes.
8. Put the tofu and shiitake mushrooms in, gently move around with chopsticks or wooden spoon, and add the vermicelli, stirring everything around. Turn to medium-high heat and bring to a boil.
9. Whisk the corn flour water into the soup, a little bit at a time until you reach the desired consistency. If you like it thicker, add a bit more, or if you prefer thinner, add a bit less. After the soup is boiled, taste it and adjust the seasoning, then garnish with coriander.

其實不飲用「動物奶」,改為「植物奶」,選擇更多呢!而且乳糖不耐症患者也可飲用,卡路里和膽固醇含量較牛奶低,還含多種礦物質;現在甚至有專門用來沖咖啡的植物奶,我們可以很輕鬆地擺脫「動物奶」了!下面給大家分享我平常喝的植物奶~
1. 豆奶
非常普遍的植物奶,是vegan飲食的主要蛋白質來源,非常多口味:黑芝麻、朱古力、草莓等
2. 椰奶
由椰子的果肉榨出,含有大量的飽和脂肪,熱量也較低;我喜歡朱古力味的椰奶
3. 米奶
米含有一定份量的糖,所以製造過程一般都不需額外加糖,米奶本身不含乳糖與膽固醇,是乳糖不耐症與豆類、堅果類過敏患者的替代品呢!喝起來有米香、微甜,喜歡~
4. 杏仁奶
近年最受歡迎的植物奶,因為其豐富的鈣質與低熱量對體重控制很有幫助!如果你像我,不太喜歡杏仁味道的話,可以試試朱古力口味,香濃滑順的口感,超愛
5. 腰果奶
富含維生素,礦物質等,可以增強免疫力並改善心臟,眼睛和皮膚健康。我覺得腰果奶一樣有一股味道,但也是可以靠選擇不同口味來解決喔~
6. 燕麥奶
燕麥奶與其他奶類最大的不同是碳水化合物與纖維素含量較高,無麩質(Gluten-free),所以如果你對奶製品、大豆、麩質過敏,燕麥奶是很好的替代品!燕麥奶現在超受大家歡迎,也推出了專門給沖咖啡用的版本呢
7. 火麻仁奶
火麻仁奶沒有其他植物奶般流行,但在歐美愈來愈多人看到它的好處了!它不含糖和膽固醇,也不含麩質。 具有脂肪酸,維生素和營養素,有助於皮膚護理、改善心臟健康、提高骨骼密度、增強免疫力等等。這款香草味火麻仁奶非常易入口
8. 鷹嘴豆奶
個人很喜歡吃鷹嘴豆 (鷹嘴豆含有10多種胺基酸,其中人體必需的8種胺基酸全部具備,而且含量比燕麥還要高出2倍以上),但鷹嘴豆奶真的是第一次嘗試,鷹嘴豆的味道很濃,會建議大家用在製造smoothie會比較好 😅

奇亞籽 vs 羅勒籽
辦公室同事最近枱頭都有一樽樽飲品,裡面有些黑色小點在浮浮沉沉狀似蝌蚪,原來愛美的OL同事在水裡加入了奇亞籽(Chia seeds),不少女士都視它為減肥神物,因為它泡水後會膨脹,吃下去有飽足感又有潤腸通便之效。外貌相近的羅勒籽(Basil seeds)也有相似效果,多數出現在台灣及泰式飲品中。雖然兩種種籽的好處多多,但要注意都是高纖食物,份量不宜過多,因為纖維過多也會引致便秘甚至腸阻塞。
奇亞籽(Chia seeds) — 是鼠尾草的種籽,形狀似芝麻,起源於中南美洲。奇亞籽含有豐富的水溶性膳食纖維及Omega3,泡水後會膨脹及產生黏膠狀物質,也有植物性蛋白質,有助延緩血糖上升速度、提供飽足感及潤腸暢便。進食奇亞籽後可能導致腹脹情況,脾胃虛弱人士不宜多吃;奇亞籽有降血壓作用,所以低血壓人士不宜食用。
羅勒籽(Basil seeds) — 又名蘭香子、明列子、山粉圓(即台灣叫的青蛙下蛋),是香草羅勒的果實,扁平褐黑色,加入水中煮會膨脹及產生黏膠狀物質,也就是水溶性纖維,亦含有蛋白質、鈣質及維他命。進食羅勒籽後可能導致腹脹情況,脾胃虛弱人士不宜多吃。

You may have seen some colleagues have drinks with floating particles in it recently, especially ladies. They are actually chia seeds loved by ladies for weight loss purpose. Chia seeds expand when placed in water and creates a feeling of fullness when consumed and can also aid bowel movement. Basil seeds are similar to chia seeds in appearance with similar effects. You may find basil seeds in Taiwanese and Thai drinks. Although the benefits of these two seeds are numerous, it is important to note these are high-fiber foods, and too much fiber can lead to constipation and even intestinal obstruction. It is better to not eat too much.
Chia seeds- seeds of Salvia Hispanica, shaped like sesame, originated from Central and South America. Chia seeds are rich in soluble dietary fiber and Omega3. After soaking in water, they will expand and become a sticky substance. Chia seeds are a plant-based protein, which help to slow down blood sugar rate of increase, provide a feeling of fullness and loosens the bowels. Eating chia seeds may cause abdominal bloating so those with asthenic stomach and spleen should not have too much. Chia seeds can help to lower blood pressure so those with hypotension can not eat chia seeds.
Basil seeds- known as Jelly Tapioca Pearl in Taiwan, is the fruit of vanilla basil. They are flat shaped and brownish black in color. They will expand and become a sticky substance after boiling in water. It contains soluble fiber and protein, calcium and vitamins. Eating basil seeds may cause abdominal bloating so those with asthenic stomach and spleen should not have too much.

一隻白或青苦瓜(400g) 1 white/green bitter melon (400g)
牛肉200g Rump beef 200g
炸菜40g Salted cabbage 40g
4粒蒜頭(切片) 4 garlic cloves (slices)
2-3 粒蒜頭(切碎) 2-3 garlic cloves (diced)
1個紅蔥頭(切片) 1 shallot (slices)
幾片紅蘿蔔花 A few pieces of decorative carrot pieces
牛肉調味料: Beef marinade:
2茶匙生抽 2 tsp soya sauce
2茶匙蠔油 2tsp oyster sauce
2茶匙糖(1茶匙牛肉用,另1茶匙苦瓜用)2 tsp sugar: 1 tsp for beef, 1 tsp for bitter melon
2茶匙生粉+2湯匙水 2 tsp potato starch, 2 TBS water
五香粉1/6茶匙 1/6 tsp Chinese five spice
¼茶匙胡椒粉 1/4 tsp ground black pepper
麻油2茶匙 2 tsp sesame oil
1湯匙紹興酒 1 TBS Shaoxing wine
2茶匙魚露 2 tsp fish sauce
打茨用的:1茶匙生粉+2湯匙水 1 tsp potato starch + 2 TBS water
適量油 Some cooking oil

Black Gomoku Rice Balls
Difficulty: Easy
Time: 1hr (incl. cooking time)
Number of servings: 8 small onigiri
Ingredients:
2 cups uncooked Japanese rice
100g (3.5oz.) thinly sliced black pork (Berkshire pig)
10g (0.35oz.) dried sliced kelp
10g (0.35oz.) black rice
5g (0.18oz.) dried sliced shiitake mushrooms
50ml hot water
2 tsp. black sesame seeds
A
* 1 tbsp. sake
* 1 tbsp. soy sauce
* 2/3 tsp. salt
4 nori sheet cut in half
Directions:
1. Wash and drain the dried sliced kelp (they will become slightly soft after 5 minutes or so). Soak dried shiitake mushrooms in 50ml hot water until they become soft (after 2 minutes or so). Cut thinly sliced black pork into bite-size pieces.
2. Wash rice if needed. Place the rice and water (to the correct water level) in a Japanese rice cooker, then add A, softened shiitake mushrooms with the soaking liquid, black rice, black sesame seeds, softened sliced kelp, and black pork. Then mix well.
3. Close the rice cooker and press the button to start.
4. When it's done, do not open and let it steam for about 10 minutes. (If you are using the rice cooker like mine, it includes the steaming time, so you can toss the rice immediately.)
5. Put steamed rice in a bowl and let it cool until you can handle it. Wet your hands in water so that the rice won't stick. Place the rice on your hand. Form the rice into a triangle by pressing lightly with your palms. Wrap with nori sheet. Wrap with plastic wrap to shape it.
