嗨!大家好,我是 Cassandre,今天的『食不相瞞』我們要做無敵鬆軟好吃的黑糖美式肉桂捲 (Perfect Homemade Cinnamon Rolls).
時序進入十二月,月底就是聖誕節和新年倒數,這個季節經常是沒來由的就會想要吃肉桂捲,也好,假期怎麼可以少了甜點,烤一盤外酥內軟、肉桂香四溢的肉桂捲,在假日午後沏上一壺茶,享用剛出爐的黑糖肉桂捲,剛好來送舊迎新。
今天我們要跟大家分享的食譜是偏美式做法的黑糖肉桂捲,肉桂捲基本就是一個像麵包的甜點,好消息是它真的一點都不困難,也不用高超的揉麵技巧,更不需要動用機器,單靠雙手就可以做出好吃的肉桂捲。
在這份食譜中,我們有另外製作糖霜來當淋面,但即使不加糖霜,我們覺得也蠻好吃的,還有就是,冷藏後的肉桂捲,建議微酥烤一下再享用,會跟剛出爐一樣,有淋上糖霜也照樣可以加熱後享用,只要將烤箱預算到140-150˚C,酥烤 5 分鐘,掛保證好吃哦!希望大家會喜歡這一集的影片!:)

Perfect Cinnamon Rolls 黑糖美式肉桂捲 怎麼作呢?
下面是 Perfect Cinnamon Rolls 黑糖美式肉桂捲 的作法與食譜:
☞ 烤模是使用24cm的鑄鐵鍋,這份食譜可以做出 8-10 個肉桂捲
INGREDIENTS
✎ 麵糰
中筋麵粉 300g
全脂牛奶 205g
融化的無鹽奶油 52g
細砂糖 40g
速效乾酵母 3.1g
鹽 4g
✎ 內餡
黑糖 68g
無鹽奶油 78g, 室溫軟化約一小時
肉桂粉 5g
✎ 糖霜
糖粉 80g
水 20g
做法 Instructions
1. 小鍋中加入牛奶、糖跟奶油,以小火煮到糖溶解、奶油全都融化,移火放涼至 37~42 ˚C. 這溫度用手指觸碰不會感覺燙,只會覺得溫而不熱
2. 在煮好的牛奶裡加入速效酵母,輕輕攪拌,然後放在溫暖的地方作用10分鐘
3. 將中粉跟鹽過篩,接著倒入發酵好的酵母液體,然後攪拌至看不見乾粉,這時候的麵團只要拌勻即可,還不需要進行揉麵
4. 在麵團上蓋上保鮮膜或布,放在家裡最溫暖的地方發酵一小時
5. 趁麵團在發酵,來製作肉桂糖內餡,小碗裡先混勻黑糖跟肉桂粉,然後加入在室溫放了一個小時、已經非常柔軟的奶油,攪拌到非常均勻柔軟的質地,備用。(📌天熱時做好的內餡要立刻送去冷藏,以免到時候塗餡不好操作易溢出)
6. 同時幫烤盤抹上一層薄奶油
7. 一小時後,麵團應該長大接近兩倍,把麵團倒在揉麵板上,揉麵大概 10分鐘,如果麵團黏手可以灑少許麵粉,但麵粉用量儘可能要少,不要讓麵團變得太乾
8. 將揉好的麵團擀成長35 寬25公分的長方形
9. 把事先做好的肉桂糖均勻的塗抹上去,邊邊可以留一公分不抹
10. 從較短的那邊開始捲,這樣可以捲出較多的層次,捲到最後可以捏一下麵團邊、稍微收個口
11. 把麵團切成 3.5 公分厚的肉桂捲,我們是用綿線來切麵團,也可以用刀子或牙線
12. 把切好的肉桂捲麵團放在烤盤裡,彼此之間要留一點縫隙,讓它們在二次發酵時可以有足夠空間長大,若擠的太滿,烤出來的肉桂捲會因為擠壓而變形,二次發酵30分鐘
13. 烤箱預熱 180˚C,烘烤 25-35分鐘,或表面烤至漂亮棕色,我們用的鑄鐵鍋厚烘烤約35分鐘,若使用蛋糕烤模,烘烤時間可以介於 25~30 分鐘
14. 出爐後的肉桂捲放涼10分鐘,同時間來做糖霜,在一個小碗裡加入糖粉跟水,充份攪勻就完成了
15. 將糖霜塗在肉桂捲上,糖霜用量可以自行調整,放涼後便可享用,塗過糖霜的肉桂捲可以再加熱吃,只要用140-150度C來烘烤,一樣美𠰌哦

Cinnamon Rolls Recipe
☞ Baking mold: 24cm in dia. Yields: 8~10 Servings.
Ingredients
✎ DOUGH
all-purpose flour 300g
whole milk 205g
granulated sugar 40g
unsalted butter 52g
instant dry yeast 3.1g
salt 4g
✎ CINNAMON SUGAR FILLING
unsalted butter 78g, very soft
brown sugar 68g
ground cinnamon 5g
✎ FROSTING
powdered sugar 80g
water 20g
Instructions
1. Add milk, sugar and butter in a small pan over low heat, gently stir until the sugar is dissolved and butter is melted. Set aside to be cool between 37~42 ˚C.
2. Stir the yeast into the warm milk mixture, wait for 10 minutes to bloom the yeast. After 10 minutes it will look like cloudy and begin to foam on the surface.
3. Sift the flour and salt in a large bowl, add the yeast mixture and stir with a spoon until combined.
4. Cover the bowl with a plastic wrap or towel in a warm place to rise for about 1 hour.
5. Meanwhile, make the cinnamon sugar filling. Combine the sugar and cinnamon powder in a bowl then add the softened butter and mix until well combined. Set aside.
6. Butter the baking pan and set aside.
7. One hour later, pour out the dough on the desk and knead for 10 minutes, until the dough is smooth and elastic.
8. Roll the dough into a large rectangle about 25x35cm.
9. Spread the cinnamon sugar filling over the whole dough rectangle.
10. Roll up the dough tightly from the short end and pinch edge together to seal.
11. Cut the dough into individual about 3.5 cm thick. You can use a knife, quilting thread or dental floss to cut the dough.
12. Arrange the cinnamon rolls in a prepare baking pan and cover with a towel or a lid and let rise in a warm place for 30 minutes.
13. Preheat the oven to 180˚C, and bake for 30-35 minutes or until nicely browned. If you use a medium cake pan, bake 25~30 minutes or until golden brown.
14. Remove the rolls from oven and let cool for 10 minutes. At the same time, make the frosting. In a small bowl, whisk together the sugar and water until well combined.
15. Spread the frosting over the warmed rolls, and let cool completely.
