💚🌱 Craving for Okinawan Taco Rice, using Vegan Cheese & Plant based Mince for today.
In HK, its very hard to find a great Okinawa-Mexican Taco Rice, especially after "Wired Cafe ワイアードカフェ" closed. The next best now available is prob at "5019 Premium Factory".. I never really liked the "Rakuen 樂宴 or sister En" version albeit I like all their other proper authentic Okinawan food. Some other shops closed in HK or are a bit borrowing on the theme only though, so not mentioning the rest.

Score 6/10【新店小二, North Point, HK】This shop was for a short period inside 渣華道街市熟食市場 Java Road Cooked Food Centre, and back then had relations with Tung Po #東寶小館, hence its 二奶命 namesake. Nowadays they moved to few streets away & is finally independent.
#椒鹽鮮魷 Salt & Pepper Fried Calamari. A dish liked by both Hong Kongers & Expats alike, with beers. As much as I have always liked 店小二 since it's previous location, but, where the heck is the 椒鹽 part? 🤔 According to my experiences in HK & Overseas, there are a few interpretations. 1st of all, the #椒 referred to in this recipe is not necessarily White or Black pepper, but it can be the actual Green or Red Pepper. Think Spanish, Mexican, then Sichuan after 17th Century. Think Yuzu Kosho #柚子胡椒 , where the last part is also referring to an actual chopped pepper! Misnomer of subtle wordings in life, probably lost in translations even within local context
These days, 椒鹽鮮魷 in Hong Kong 🇭🇰 also tends to carry a drier fried Garlic part only, like 避風塘 Typhoon style. But according to what I remembered eating, back in the days, it was a semi-wet-dry condiment consisting of real chopped either red or green peppers, bits of garlic, salt, bit of white/black pepper, spring onions, probably more etc. Those were the good old days 😌😍
材料：
牛油，蝦 5，鹽，胡椒粉
調味醬：牛油，洋蔥 1/4，蒜蓉 2，免治豬肉 60g，砂糖 1 tbsp，辣椒醬 1 tbsp，甜辣醬 1 tbsp，茄汁 2 tbsp，墨西哥辣椒 1 tbsp
墨西哥薄餅 1，車打芝士 3，水牛芝士 適量，蒜味醬，乳酪醬，辣椒醬
做法：
1. 在鑊加入牛油，蝦，鹽，胡椒粉，煎熟
2. 在鑊加入牛油，洋蔥，蒜蓉，免治豬肉，砂糖，辣椒醬，甜辣醬，茄汁，墨西哥辣椒，炒熟
3. 在平底鑊加入墨西哥薄餅，車打芝士，水牛芝士，蝦，調味醬，折起，煎至香口
4. 切件，可配以蒜味醬，乳酪醬，辣椒醬享用

▪ INGREDIENTS:
-Sauce: 1/4 Finely Chopped Onion, 2 Tbsp Sliced Garlic, 60g Ground Pork, 1 Tbsp Sugar, 1 Tbsp Hot Sauce, 1 Tbsp Chili Sauce, 2 Tbsp Ketchup, 1 Tbsp Minced Jalapenos
-Base: 5 Shrimp, Salt, Pepper, 1 Sheet Tortilla, 3 Slice Cheddar Cheese, 1 Handful Mozzarella Cheese, Garlic Sauce
-Dipping Sauce: Yogurt Sauce, Hot Sauce
▪ DIRECTIONS:
1. Add butter to heated pan. Cook 5 skinned whole shrimps with bit of salt and pepper. Cook until browned.
2. Take out cooked shrimp and add more butter. Stir-fry 1/4 finely chopped onion, 2 sliced garlic and 60g minced pork. Mix 1 Tbsp sugar, 1 Tbsp hot sauce, 1 Tbsp chili sauce, 2 Tbsp ketchup and 1 Tbsp minced jalapeño to make seasoning.
3. Add 1 sheet of tortilla on the pan. Add 3 sliced cheese and 1 handful mozzarella cheese. Place grilled shrimps on top of cheese. Add pre-made seasoning and fold it in half. Flip it over to evenly cook both sides.
4. Cut quesadilla into pieces.
5. Finish off with sprinkle of garlic sauce.
