將地瓜融入麵包用為食材,似乎是亞洲飲食習慣裡,特有的一份私房偏愛。回憶孩童時光對於地瓜,總有著甜蜜的連結,印象裡阿嬤總會在冬天氣溫驟降傍晚,煮一鍋驅寒的紅心地瓜薑片甜湯,偶爾假日會從單薄褪色的木窗片外,傳來烤地瓜小販的叫賣聲,每每聽到總忍不奔到陽台探望,運氣好的時候,對門的鄰居會叫住小販,這時雖遠在2樓陽台,卻能瞬間聞到小販掀開人力板車載著地大陶缸裡,以木炭慢火煨烤所逼出地瓜蜜糖香氣的氣味記憶,那個讓人飢腸轆轆的香氣,至今似乎還迴盪在四十年後對老家的記憶庫裡。
地瓜這份食材,在手邊收藏近二十多本的歐陸,或美國原文的烘焙書中,能找到的應該不超過3道,自己也曾嘗試將地瓜做為風味主角的麵包,送給當地朋友品嘗,但比起普通白麵包,這樣的地瓜風味反應顯得黯淡許多,每每想起這件事,都不禁讓我懷疑鎮上超市裡,那些堆成小山的地瓜,到底被當成怎樣的用途?也如同飲料區貨架上的罐裝咖啡,那幾種罐擺在星X克旁的伯朗咖啡,究竟是怎樣的顧客購買同樣的讓人迷惑。

這份採低溫發酵法所完成的杏桃風味「基礎鄉村包」配方,自己前前後後試了很多種可能變化組合,記憶中應該變化組了不下7次吧!雖每次成品都不算太差,也達歐式麵包基礎水準,但總感覺就是缺了臨門一腳。感謝上天給了我無比耐心及運氣,終於不萊嗯頓悟了那關鍵變化除了含水率之外,還是一些發酵細節的留心。這份配方在影片中採用的是70%含水率,整體麵團較為黏手,不過氣孔組織相對的也更有活力、奔放。如果你不愛那麵團很黏手的感覺,調降到65% (冷水用量降到295克) 也不差。
採用2階段發酵法,藉由拉長發酵時間及不同階段溫度控制的細膩,將這份復古感的鄉村麵包配方推向完美。我近期已多採用自己培養的天然酵母先做出法式液種 (Levain) 拌入入主麵團製作,輔助添加微量商業速發酵母方式,以穩定低溫發酵時間的控制。固然風味上借重了法式液種老麵,且大家會說這樣的液種是Sourdough (酸麵種),不過自己其實沒那麼懂得品嘗麵包中竄出的酸味,因此在發酵過程中,那12小時的4度低溫冰箱發酵方式,則是風味沒偏向酸的控制關鍵,僅以進入冰箱前的1~2小時讓酵母在常溫 (24度)中啟動活躍,然後在一夜 (12小時) 低溫後,次日再讓麵團緩慢回到常溫2小時,這樣的黃金16小時緩慢發酵過程,以足夠讓麵筋香氣完全釋放,成就了專屬於不萊嗯的基礎鄉村麵包配方。
