☘️ Hot and Sour Soup

Here, I would like to share this super easy, yet absolutely delicious recipe with you. I hope you’ll have a go at making it.
The main ingredients for this soup are tofu, bamboo shoots, dried shiitake mushrooms, dried wood ear mushrooms, carrots, mung bean vermicelli (glass noodles), chilli bean paste, vinegar etc; cooked in a clear soup. The dish is characterised by it's sour, spicy, fresh, salty and fragrant flavours.
This soup is rich in nutrients such as protein, calcium, iron, dietary fiber, minerals, and vitamins. It is an indispensable and appetising healthy food which will helps to relieve heat in the hot summer.
Since dried shiitake mushrooms and dried wood ear mushrooms may not be something that people in the UK are familiar with, I have used fresh shiitake mushrooms in this recipe instead, and omitted the dried wood ear mushrooms. However, the traditional ingredients can be found in any Chinese supermarket, Amazon, and Sous Chef.
Shiitake mushrooms are one of the most popular mushrooms worldwide. They are prized for their rich, savory taste and diverse health benefits. Compounds in shiitake may help fight cancer, boost immunity, and support heart health.
You’ll only need 4-5 dried shiitake mushrooms (乾香菇) and 1 piece of dried wood ear mushrooms (木耳). The cooking method for these two ingredients are different to the fresh alternatives, if you have managed to find them and want to use them, let me know and I’ll be happy to explain.
I have found all the suppliers for the above ingredients and have attached the images in the comments below if you do want to give them a go.
You can get the fresh shiitake mushrooms, bamboo shoots and mung bean vermicelli from Tesco, just make sure you search online to ensure they stock them in the branch that you visit.

✳️ Ingredients:
(serves 4)
200g medium firm tofu
250g fresh shiitake mushrooms
1/2 medium carrot
60g tinned bamboo shoots
50g mung bean vermicelli
4 slices ginger
1 tbsp sunflower oil
coriander- washed and chopped to garnish
✳️ Seasonings:
* 1 tsp salt
* 1 tbsp light soy sauce
* 1/2 tsp ground white pepper
* 2 tsp sugar
* 2 tsp sesame oil
* 3 tbsp dark balsamic vinegar
* 2 tbsp white balsamic vinegar
* 1 tbsp chilli bean paste (豆瓣醬 Doubanjiang - you can add more if you can handle the heat)
* 2000ml water
* 1 tbsp vegan oyster sauce / vegan stir-fry sauce
* 3 tbsp corn flour
* 3 tbsp water
✳️ Method:
1. Soak the mung bean vermicelli in warm water until soft, then use scissors to cut into sections.
2. Gently wash and pat dry the tofu and fresh shiitake mushrooms and cut both into thick strips.
3. Peel the carrot, and cut into thin strips. Drain the bamboo shoots, rinse and cut into thin strips.
4. Cut the ginger slices into thin strips then finely dice into small cubes.
5. Mix the corn flour and water together to make a slurry and leave to one side.
6. Heat a large saucepan over medium heat, add oil, then add ginger and fry until slightly brown, stirring gently. Next, add the bamboo shoots and carrots, stir-fry together for a while, add salt, soy sauce, pepper, sugar and sesame oil, and fry until soft.
7. Pour in the black vinegar, white vinegar, vegan oyster sauce and chilli bean sauce. Then, add water and bring to a boil. Turn to low heat and continue to cook for 5 minutes.
8. Put the tofu and shiitake mushrooms in, gently move around with chopsticks or wooden spoon, and add the vermicelli, stirring everything around. Turn to medium-high heat and bring to a boil.
9. Whisk the corn flour water into the soup, a little bit at a time until you reach the desired consistency. If you like it thicker, add a bit more, or if you prefer thinner, add a bit less. After the soup is boiled, taste it and adjust the seasoning, then garnish with coriander.

If you have been to Ipoh before, you have probably heard of nga choy gai (芽菜鸡; bean sprout chicken), one of Ipoh’s most iconic dishes. The Lao Wang here is helmed by an ex-5 star hotel chef who has been in the trade since 1986.
The Chicken Rice Set at Lao Wang came with a portion of Kampong Chicken, bean sprouts, a bowl of chicken rice and soup. At first glance, the skin of the Kampong Chicken was noticeably thinner and had a yellow tint, compared to the usual gelatinous white chicken skin we are used to seeing in our local steamed chicken. The sauce which was spiked with generous hints of sesame oil, soya sauce and rock sugar, did well to elevate the otherwise flat-tasting chicken.
We really enjoyed the bean sprouts which came topped with fried ikan bilis, chilli, spring onions, and a sprinkling of pepper. Only flash-blanched to get rid of the raw taste of uncooked sprouts, the nga choy were refreshingly crunchy, with a nice tinge of salty-crispiness from the ikan bilis, and a spicy kick from the pepper. The savory sauce also carried notes of natural sweetness from the nga choy. Each rice grain was ovingly rendered in chicken fat and cooked till fluffy.

Torimatsu Bara Sushi. It's popular Kyoto specialty. Bara Sushi is a type of sushi with a variety of ingredients sprinkled on the rice.
The most feature of Torimatsu Bara Sushi is flavored ground mackerel. Flavored ground chicken is common but flavored ground mackerel is very rare. It's salty-sweet and savory. They uses Kinshi Tamago(stripped thin omelette), seasoned Shiitake mushroom, Kamaboko fish cake and so on. The combination of the Sumeshi vinegared rice and the ingredients are very yummy!

電飯煲冰鎮豉油雞:
材料:
三黃雞1隻
香料:
八角適量
花椒適量
香葉適量
桂皮適量
果片一片
程序:
1. 雞切去雙腳,除去雞膏及雞肺。
2. 用鹽乸10分鐘,除去雪味及腥味,再加入鹹味。
3. 加入1支雞汁及2支清水入電飯煲內。
4. 加入調味料:
a. 老抽1湯匙
b. 生抽1湯匙
c. 椰糖100克
5. 香料,沖洗乾淨,放入電飯煲,開始煲。
6. 雞,清水洗乾淨,擎乾水。
7. 雞汁已煲滾,放入雞,再次等雞汁煲滾。
8. 雞肚內注入雞汁。
9. 冚蓋,熄火,焗30分鐘。
10. 反轉雞。
11. 按正常煮飯掣,但不要冚蓋。
12. 雞汁再次滾起,表示雞已煮熟。
13. 反轉雞,避免雞皮破損。
14. 再次滾起,熄火,攤凍。
15. 放雪櫃雪一晚,就是冰鎮豉油雞了。
Iced soy chicken with rice cooker:
Ingredients:
Frozen chicken 1 No.
Spices (all to be with appropriate amount):
Star anise
Sichuan pepper
Bay leaves
Cinnamon
Dried orange peel 1 pc
Steps:
1. Cut out chicken feet. Remove fat and lung from chicken.
2. Season chicken with cooking salt for 10 minutes, removing unpleasant smells and tastes and add some salty taste to it.
3. Add one bottle of chicken marinade with 2 bottles of tap water into rice cooker.
4. Add seasonings:
a. Dark soya sauce 1 tbsp
b. Light soya sauce 1 tbsp
c. Palm sugar 100g
5. Spices, rinse, then put in rice cooker. Start to cook.
6. Chicken, rinse thoroughly and hang dry.
7. Chicken marinade has been boiled up, put chicken in it.
8. Put the chicken soaking in the marinade.
9. Cover up the rice cooker. Turn off power. Leave it for 30 minutes.
10. Flip over the chicken.
11. Use standard cooking function. But leave rice cooker open.
12. Chicken marinade boils up again, that means chicken has been cooked well.
13. Flip over chicken, but have to keep its skin complete.
14. Turn off the fire when it boils up again. Cool it down.
15. Put in refrigerator for one night, that is the iced soy chicken.
