ほうれん草パウダーで元気になれそうなノンオイルシフォンを焼いてみました。
冷蔵庫の卵が小さかったので、17cmのシフォン型にいまひとつ膨らみが足りなかったんですが、焼き上がりは立派なほうれん草カラー!
よしこれでエネルギー補給だ、頑張るぞ!

【Ingredients】17cm chiffon cake pan
3 Egg yolks(60g)
15g Granulated sugar
45g Water
60g Cake flour
8g Spinach powder
3 Egg white(140g)
35g Granulated sugar
【Directions】
①Separate eggs into egg yolk and egg white, put the egg white in the freezer .
②Add sugar to the egg yolk, and mix well.
(Mix it soon not to make it lumpy)
③Add the vanilla oil, Water and mix well.
④Sift and add cake flour, and mix well. (egg yolk mixture)
⑤Add sugar to the egg white 3 separate times, and make meringue.

Preheat the oven at 338 °F/170℃.
⑥Add 1/3 of meringue to the egg yolk mixture ④, and mix with a whisk.
⑦Put ⑥ back to the bowl with meringue, and mix quickly.
⑧Pour the mixture into the pan.
⑨Turn and shake the pan and make the mixture flat, then stir it with a chopstick.
⑩Bake at 338 °F/170℃ for 30min.
⑪When it's done,face it down quickly to cool.
⑫When it's completely cool, remove the cake from the pan with a chiffon knife and the like.
【材料】17cm シフォン型
卵黄 3個 (60g)
グラニュー糖 15g
水 45g
薄力粉 60g
ほうれん草パウダー 8g
卵白 3 個(S～M 140g)
グラニュー糖 35g
【作り方】
①卵は卵黄と卵白に分けて、卵白は冷凍庫で15分ほど冷やす。
②卵黄に砂糖を加えてよく混ぜる。(ダマになるので、すぐに混ぜること。)
③バニラオイルと水も加えてよく混ぜる。
④薄力粉をふるって加え、よく混ぜる。
⑤よく冷えた卵白に砂糖を3回に分けて加えてメレンゲを立てる。

オーブンを170℃に温め始める。
⑥メレンゲが出来たら、④の卵黄の生地にメレンゲの1/3を加えて泡立て器で混ぜる。
⑦⑥をメレンゲのボウルに戻してゴムベラで手早く混ぜる。生地にツヤがでれば混ぜはok
⑧型に生地を流し入れる。
⑨型を回しながらゆすって生地を平らにしたら、お箸などを使ってぐるりと生地を混ぜる。(生地の気泡を抜く)
⑩170℃に温めたオーブンで30分焼く。
⑪すぐに逆さまにして冷ます。
⑫完全に冷めたら、シフォンナイフ等を使って型から出す。
●保存はビニール袋などに入れて乾燥させないようにします。
*シフォンケーキはメレンゲが決め手!
メレンゲがうまく出来ていないと、オイルを加えた普通のシフォンレシピで作っても、焼き上がり後にすごくしぼんで目のつまったふわふわ感のない重たいケーキになってしまいますが
メレンゲがうまく出来ていればオイルなしでもふわふわな焼き上がりになります、翌日もふわふわなままです。
*シフォンケーキは生地が型に張り付くことで美味しく焼けます、型は製菓材料店などで
売られている「アルミシフォン型」がおススメ。
時々テフロン加工をしたものがありますが、NG!
生地が張り付かないのと、逆さまに冷やすのに向いていません。
