My wine column in Sky Post newspaper - “Enjoy a glass of Green Tea Champagne!” It’s the beginning of the year & let’s try a glass of green tea “champagne” to freshen up your palate! I attended a Japanese delicacies & green tea pairing organized by a 2-star Michelin Restaurant 柏屋香港 Kashiwaya Hong Kong, pairing chagama香港 Japanese tea brand, which has over 140 years of history. It’s really an eye-opening experience!

多謝朋友Branden邀請,今日去咗兩星米芝蓮餐廳 柏屋香港 Kashiwaya Hong Kongx Chagama 日本茶pairing,學飲日本茶唔係飲酒,跟日本茶鑑定士9段Nobuki Mori San學習,試左六款日本茶配五道菜食物。chagama香港 已有140年歷史,今日有3款茶配搭食物特別深刻,包括綠茶香檳嘅玉露配海膽芝麻豆腐。肉露以冷泡沖製,味道帶點umami,配上海膽芝麻豆腐,令綠茶嘅鮮味再提升! 但如果由冷泡變熱飲立即將玉露變成綠茶中嘅Espresso, 勁有趣!最後仲有一款好Smoky 嘅京番茶配和果子,有d似聞緊雪茄嘅烤烘味,飲落去有回甘同少少smoky, 有趣。食物當然十分精緻,餐具亦都好靚,好似每道菜都係一件藝術品咁,過咗一個好充實同埋長知識嘅下午!Cheers!🎉🍵
Thanks Branden for his invitation! Tried the Kashiwaya x Chagama Green Tea Pairing at this 2-star Michelin star Restaurant! I’m learning how to drink green tea today but not Sake! Happy to meet with Tea Appraiser Nobuki Mori San & tried 6 Japanese tea with 5 delicacies. There r 3 different teas that surprised me a lot, including the “green tea champagne” Gyokuro cold brew, which has umami note & it brings out more umami from tea when pairing with sea urchin & sesame tofu. Another surprise is when Gyokuro is served hot & it changes to “green tea espresso” with a very strong flavor! So different from the cold version! The last surprise is Kyo-bancha from Kyoto paired with autumn dessert, which is very smoky on the nose & with some liquorice on the palate with light smoky bites. All delicacies r yummy & beautifully presented. The utensils r like an art piece! What a wonderful day to learn more about tea & tea pairing!🎉🍵
