Haiyaa.. Not copying anyone to do fried rice but showing you how my Poh Poh used to show us how to enjoy fried rice, especially for someone who doesn't like rice like me.
I am surely bringing back a lot of childhood memories through my cooking and dressing up videos. Life is cool when we remember the best moments in life.
Ingredients:
. Rice - Multi-grain rice : Black rice, purple rice, wild rice, Quinoa, millet, buckwheat, black-eye peas, mung beans, Sorghum, sesame seeds.. You can also add oat, pearl barley and soy beans. I didnt add these 3 grains as Mika is allergic to Soya and Gluten.
. Diced smoked duck (I got mine from Seafood Maestro +60 11-2302 9399. They are very GOOD!)
. Chopped garlic
. Cut onions
. Minced Ginger
. Cut spring onions
. Shredded carrot (I didn't have stock)
. Cut long beans
. 3 to 4 eggs
. Oyster sauce
. Soy sauce
. Salt
. White pepper
. Oil
. Lettuce leaf for wrapping
If you have a fire stove, your fried rice will be fantastilicious!! Chinese like the WOK HEY- Wok Fire.. Add in fried salted fish and chili padi and more ginger.. Oh My.. I feel so hungry again.
Fried rice is probably the most humble and casual comfort food. It is something you cook when you have too much leftover rice from your meal yesterday or you just don't know what to cook and you have very little ingredients left in your refrigerator. My Poh Poh used to say : 炒冷饭Chǎolěngfàn means fried cold rice. Leftover rice is usually refrigerated overnight, so you take it out and fry it while it is still cold. LOL. But whatever it is, fried rice is definitely one of the best Chinese all-in-one dishes that conquered the world. It is quick, affordable and you dont need to be a professional chef to cook this.

Ingredients:
Serves 3 - 4 pax
10 pieces of shallots - sliced
4 pieces of dried chilli - rehydrated & chopped (optional)
60g of Chinese dried mushrooms - rehydrated & diced
250g of minced meat
150g of long beans - diced
15g of dried scallops - soaked in 1 cup (250ml) of water
1 cup (250ml) of water
2 tablespoons of oyster sauce
1 tableespoon of light soy sauce
1 tablespoon of dark soy sauce
A few dashes of white pepper
1 teaspoon of sugar
1 teaspoon of salt
Some cornstarch solution
1 tablespoon of sesame oil
1 tablespoon of Chinese cooking oil (Shaoxing Huatiao wine)

1.鄉里小炒肉
材料:
豬五花 600g pork belly
糯米椒 100g sweet green chili pepper
辣椒 50g chili pepper
豆豉 20g fermented black beans
辣豆瓣醬 2大匙 chili beans sauce 2tbsp.
紹興酒 1大匙 Shaoxing wine 1tbsp.
作法:
1.炒鍋中倒入少許油煸香豬五花,煸炒至五花肉焦香出油,可將多餘的油倒除。
2.接著炒香糯米椒、辣椒片與辣豆瓣醬,再加入紹興酒嗆香即可。
2.蒜苗炒五花肉
材料:
五花肉片 500g pork belly
辣椒 20g chili pepper
蒜苗 120g green garlic
花椒粉 1茶匙 ground Szechuan pepper 1tsp.
醬油 2大匙 soy sauce 2tbsp.
紹興酒 1大匙 Shaoxing wine 1tbsp.
蒜末 15g minced garlic
作法:
1.炒鍋中倒入少許油煸香豬肉至出油焦香。
2.將多餘的豬油倒除,接續加入蒜末、辣椒炒香,在加入花椒粉、醬油與紹興酒續炒。
3.炒勻炒香後加入蒜苗拌炒即可。
3.客家小炒
材料:
豬五花 350g pork belly
豆干 150g dried tofu
糖 2茶匙 sugar 2tsp.
白胡椒粉 1茶匙 ground white pepper 1tsp.
泡軟乾魷魚 1尾 dried squid 1
芹菜 100g celery
辣椒 20g chili pepper
蒜苗 100g green garlic
米酒 2大匙 cooking rice wine 2tbsp.
蒜末 20g minced garlic
醬油 2大匙 soy sauce 2tbsp.
作法:
1.乾魷魚泡軟後剪成小段備用。(泡約至少1小時)
2.鍋中倒入少許油煸香五花肉,將天然油脂煸出,利用豬油煸香豆干片。
3.待豆干煸至焦香後,加入泡軟乾魷魚、蒜末、辣椒續炒。
4.接著調味加入醬油、糖、白胡椒粉與米酒,煮至收汁入味。
5.等醬汁收乾後,加入蒜苗、芹菜續炒即可。
4.酸豆角炒臘肉
材料:
臘肉 300g chinese cured pork belly
酸豇豆 500g pickled cowpea (long beans)
辣椒 30g chili pepper
蒜末 20g minced garlic
糖 1茶匙 sugar 1tsp.
作法:
1.酸豇豆切段過水備用。
2.炒鍋煮滾水,將切片的臘肉放入汆燙,水滾後即撈起。
3.將鍋中水倒除,煸香臘肉片至焦香,再加入蒜末、辣椒炒香。
4.最後加入酸豇豆角與糖調味即可。

Marinate chicken first then deep fry

1 whole chicken (1kg)
2 tablespoons of Chinese rice wine
1 tablespoon of light soy sauce
1.5 teaspoons of salt
2 tablespoons of cornflour
A few dashes white pepper
Also to deep-fry

6 pieces of potatoes - cut into cubes
2 tablespoons of sesame oil
10g of young ginger - minced
4 cloves of chopped garlic
4 pieces of shallot - chopped
1 piece of star anise
10 pieces of dried chilli - rehydrated and deseeded
3 tablespoons of spicy broad bean paste (辣豆瓣酱)
1 cup of water (250ml)
1 teaspoon of sugar
2 tablespoons of light soy sauce
3 pieces of fresh red chilli
3 pieces of fresh green chilli
2 tablespoons of Chinese cooking wine (Shaoxing Huatiao wine)
A handful of spring onion
Some white sesame seeds
