600ml Chicken Stock (store bought)

2 pieces Dried Chinese Noodles, approx. 240g
3 tbsp Hua Tiao Wine
2 tsp Sesame Oil
Salt and White Pepper to taste
100g Cai Xin

The first few bites from a brewtiful dinner at @vea_hk where @chefvickycheng created a special menu in collaboration with @nespresso.hk highlighting coffee as a key ingredient. Chef Vicky also used vegetables such as aubergines and bitter melon that were grown on the Nespresso Farm in Hong Kong using recycled Nespresso coffee grounds as a fertiliser.
The roasted eggplant mousse cannoli pictured above was one of the dishes made with the aubergine from the farm along with coffee.

The tong 湯 is strong @4.bites! My grandparents and my parents are all about that 湯. No meal was complete without soup. At “Four Bites,” I’m reminded of the delicious Chinese dishes my family would cook, focusing on quality ingredients and delicacies with an array of health benefits. My favourites were the Muscovy Duck Soup with Black Garlic and Chicken Soup with Cordyceps.
Soupreme soup aside, the Seafood Noodle with Wild Red Mushrooms is on point as well. The Seafood Noodles are made with prawns, dried razor clams, pork belly, conpoy, bean curd puff, and bok-choy.
Save room at the end for a Goji Berry Cookie and fresh hand- crafted filter coffee. FOURBITES uses single origin beans roasted from a tiny micro-roasters in Peng Chau, Caau Dau.

【酒香蜆肉肉碎飯|明火煮飯神器初體驗?】
「一鑊熟」的確難以煮出一道美味的菜式。因為不同材料理應使用相應的手法去處理,才能做出口味豐富的食物。所以近年的電飯煲料理,我也只可以一笑置之~(但主要的原因是我家中根本就沒有電飯煲?)
電飯煲,就那麽只能煮飯的一個電器,對我毫無吸引力!而且我經常也只是一個人吃飯,煮得太多,吃幾天也吃不完,更別說吃隔夜飯時吃出的那份孤單感... 這麼浪費食物和心神的東西,真的不太合適我。
不過近期使用了一個煮飯神器,可於明火爐頭上直接使用,火候完全盡在掌握之中。自私煮一人份量亦沒有問題,在煮飯過程中任何時間亦可以加入配料,做出屬於自己的創意新口味~

We love Kimchi Jjigae (also known as kimchi soup or stew in English). This soup is super easy to make and you just need to cook some rice to go with it and call it a day. So easy! A big shout-out to Lady Boss Choi of Hanwoori Korean restaurant in Singapore. This restaurant is in our neighbourhood and her kimchi jjigae is really really good. If you don't like seafood, you can also use shabu shabu pork belly or beef. You don't have to season the meat, just add them around the same time as we added the seafood.

Seafood Kimchi Jjigae 韩国海鲜泡菜汤 (Kimchi Soup / Stew)
Ingredients:
Serves 4 - 5 pax

1.5L water
6 tablespoons light soy sauce
4 cloves of chopped garlic
1 teaspoon grounded black pepper
6 tablespoons Korean chilli powder (gochugaru)
3 tablespoons gojuchang (Korean chilli paste)
450g kimchi
300g silken tofu
1 red onion - sliced
4 fresh shitake mushrooms - sliced
3 potatoes - sliced
50g sweet potato vermicelli (can be replaced with glass noodles)
2 stalks of spring onion (can be replaced with scallion)
1 teaspoon salt (season to taste)
200g prawns
200g baby octopus (can be replaced with squid)
300g venus clams
150g enoki mushrooms
Add some white vinegar at the end of the cooking if you like the soup to be more tangy.

Blood cockles - colloquially known as see hum or si hum - were really cheap back in the days. They used to be 50 cents (Singapore dollars) for a kilo but now it's about S$14 per kilo. See the difference? According to Channel News Asia, cockles are becoming more expensive because of pollution and over-harvesting. Hopefully with aquaculture, the supply of cockles can once again be bountiful. Due to the surge in pricing, usually it will cost you quite a bit if you were to order this at a food centre or restaurant. That's why we decided to share this recipe with you so that you can easily make this dish whenever you see cockles being sold at a market near you. If you are a fan of cockles from Putien Restaurant, you may want increase the amount of sugar used because their version is a lot sweeter than ours.
