Bratkartoffeln is a popular dish in every German household. Yes, it is very difficult to pronounce (brat-kah-toff-len) translates as "fried potatoes" and it's indeed pan-fried potatoes, bacon, onions, and seasoning. I don't eat bacon, so I did it without most of the time. It will taste as great still. Another dish which will make you fall in love forever. Trust me, if it isn't making u love again, please ask me to buy u a drink! :P
Trust me, it is so easy to prepare and cook. JUST time consuming. Normally it takes me 1 hour to cook the potatoes. Slow cooking is the best!
Ingredients :
. MANY potatoes. I used 4kgs of Potatoes.
. A lot of FAT aka BUTTER. 1 to 1.5 blocks of unsalted butter
. 2 whole finely chopped onions
. Salt to taste
. Black pepper
You may also add some marjoram & chopped bacons.
Some nice tips:
- Potatoes can be cooked several hours ahead. You must boiled whole potatoes for 20 mins and not less. In fact, this dish is often made with leftover potatoes.
- In Germany, these potatoes are traditionally served with fried sunly side up eggs, pickles, and green salad.
- If you're using a nonstick pan, the potatoes will need a lot of butter to brown properly.
- Cook the potatoes on medium low fire after the onion turn golden. Turn/flip the potatoes slices gentlely and not as often but watch out, don't let them burn.
- If you are a vegan, use oil instead of butter.
- The potato slices will turn brownish and crispy on the edges. It means they are ready!
I learnt this dish from Oma- German Grandma of my kids. She is such a good cook. Eventhough I dont't speak German, I still managed to learn from her. Glad I did, my kids love this dish and miss their Deutsch homeland too.

Bánh chuối chiên ở Đà Nẵng thường thấy hay có chuối, khoai, ít dừa và bột nên ăn lúc nào cũng nghe rồm rộp, cắn một cái nghe giòn rụm, đã ơi là đã đúng không. Nhưng nếu là tín đồ của mỗi mình chuối thì nhất định nên thử chỗ này nhé, cực kì rẻ nhưng lại chất lượng lắm luôn. 【Ingredients】
2 sweet potatoes(300g)
Frying oil
salt
Black sesame
【Directions】
①Wash the sweet potato , slice them using a Mandoline Slicer into 2 mm thick slices.
②Soak the slices for 15minutes.
③Thoroughly drain the excess water and pat dry the slices with a paper towel.
④Deep fry in 170℃ oil, occasionally turning them over until crispy.
⑤Adjust the flavor with sugar at the end.

【材料】
さつま芋 2本(300g)
揚げ油
塩
黒胡麻
【作り方】
①さつま芋は良く洗ってスライサーで2mmくらいの厚さにスライスする
②15分、水を変えながらアク抜きする。
③水分を切って、ペーパータオルなどで水分をふき取る。
***ここできっちり水気を切っておくと、揚げたときに油ハネしない。
④油を170℃に熱し、からりとするまで揚げる。
***色が変わるまで揚げてしまうと美味しくないので、その手前で引き上げる。
目安はお芋の回りの泡が細かくなり、お箸などでつまんだときに固くなっていればOk
⑤ペーパーを敷いたトレイなどでよく油を切り、お塩をパラパラと振って出来上がり!

モチモチかぼちゃ餅

材料:
かぼちゃ 250g
片栗粉 80g
砂糖 大さじ1
スライスチーズ 2枚(1枚を5等分にする)
有塩バター 10g
■タレ
醤油 大さじ1
みりん 大さじ1
酒 大さじ1
砂糖 小さじ1
作り方:
1.かぼちゃは種と綿を取り、皮を剥いて食べやすい大きさに切る。耐熱ボウルに入れてラップをし、600Wの電子レンジで5分加熱する。
2.(1)が熱いうちにマッシャーかフォークで潰し、片栗粉と砂糖を加え、まとめるように混ぜ合わせる。
3.(2)を一口大の大きさに丸め、平らにして真ん中に溶けるチーズを入れて包む。
4.タレの材料を混ぜ合わせる。
5.フライパンに有塩バターを入れて熱し、(3)を両面に焼き色がつくまでカリッと焼く。
6.(5)に4を入れ、よく絡め合わせたら完成!

材料:

INGREDIENTS
250g pumpkin
80g potato starch
1 tablespoon sugar
2 cheese slices (cut each slice into 5 pieces)
10g butter
■Sauce
1 tablespoon soy sauce
1 tablespoon mirin
1 tablespoon sake
1 teaspoon sugar
PREPARATION
1. Remove seeds, peel, and cut pumpkin into small pieces. Microwave them in a microwave-safe-bowl for 5 minutes at 600W.
2. Mash pumpkin while hot. Add potato starch and sugar and knead.
3. Shape pumpkin mixture (2) into bite-size balls. Put cheese into center of each ball and seal it inside.
4. Mix all ingredients for sauce.
5. Heat butter in a pan, place pumpkin balls. Grill until crispy and golden on both sides.
6. Add the sauce (4) into the pan and stir.
7.Enjoy!

芝士薯仔蝦餅:
材料:
薯仔1大個
急凍蝦仁10隻
芝士3片
調味料:
鹽少量
生粉少量
處理:
1. 蝦仁用清水解凍。
2. 薯仔洗淨,刨去皮,刨絲,加入半茶匙鹽攪勻。
3. 蝦仁解凍後,洗淨,擎乾水,用廚紙索乾。
4. 蝦仁加入少量鹽醃3分鐘。
烹調:
1. 放1/2茶匙油落鑊燒熱。
2. 加入1/4茶匙生粉落蝦仁撈勻。
3. 放蝦落鑊,兩面煎至金黃色,放上碟。
4. 放1湯匙油落鑊燒熱。
5. 放薯絲落鑊,鋪平,收至中慢火,煎至金黃色,反轉後面煎至金黃色。
6. 放芝士在薯餅上面。
7. 再將蝦仁放上芝士上面,冚蓋至聞到芝士香味。
8. 開大火,收乾油分,煎脆一點,大概煎多2分鐘,完成。
9. 切好蝦餅,上碟。
Shrimp pan cake with cheese and potatoes:
Ingredients:
Potato (large) 1 No.
Frozen shrimps 10 pcs
Cheese 3 slices
Seasoning:
Salt little
Tapioca starch little
Preparation:
1. Defrost shrimps with tap water.
2. Rinse, peel and shred the potato, mix with 1/2 tsp salt well.
3. Shrimps have been defrosted. Rinse thoroughly and hang dry. Dry with kitchen towel.
4. Season shrimps with little salt for 3 minutes.
Steps:
1. Heat up1/2 tsp oil in pan.
2. Mix shrimps with 1/4 tsp tapioca starch well.
3. Put shrimps in pan. Fry until two sides of shrimp cake turning gold in colour. Put on plate.
4. Heat up 1 tbsp oil in pan.
5. Flatten potato in pan, turn to medium~low flame, flip over when one side of potato pancake becomes gold in colour. Continue frying until two side turn gold in colour.
6. Put cheese on top of potato pancake.
7. Put shrimps on top of cheese. Put lid on top of pan until you can feel the smell of cheese.
8. Make pancake more crispy by turning to high flame. Fry for 2 minutes more. Complete.
9. Cut the pancake well. Serve.
