This drink is known as the “quintessential hipster” because it was the favorite of the freedom-loving Ernest Hemingway: no one loved the Daiquiri more than him! The bar he frequented at that time even erected a statue in his honour! Hemingway modified this cocktail by replacing the original syrup with maraschino liqueur to reduce its sugar content, and the inspiration for this dessert comes from that story.

[#甜蜜食間 / Ying's Sweet Time] 威士忌 x 起士蛋糕 / Whisky x Cheesecake (English below)
2021 年,你希望達成什麼新的目標或心願、希望學習哪些新的知識或技能呢?
今年,我決定花點時間了解甜點的好搭檔——烈酒。首先就從知識含量超高的威士忌開始吧!第一個嘗試的,就是照片中的 The Singleton 蘇格登單一麥芽威士忌 的12年單一純麥威士忌(The Singleton of Glen Ord 12-year-old)。光打開瓶蓋,就能聞到非常圓熟甜美的水果香氣,讓我聯想到法式甜點中常用的蘭姆酒,入口有些薑汁般的辛辣,但悠長的香甜縈繞唇舌與鼻腔久久不去。我想到它非常適合搭配濃醇的起士蛋糕,乳脂的豐潤能夠緩和辛辣感、也能為原本的甜美增加厚度。結果是兩者同添韻味,真的很有趣!下次想嘗試威士忌與巧克力的搭配,說不定它和巴巴(Baba)也很合呢!
昨晚還在友人推薦下嘗試了 Hot Toddy 熱威士忌調酒,雖然家裡沒有檸檬,但光是熱水、威士忌與蜂蜜,就溫暖甜美得醉人啊!

I'm not accustomed to drink alcohol, but have been drawn to the world of fine wines, whiskies, liquors, etc. ever since I moved to France. Alcohol and dessert pairings seem fancy and trendy but it exists from long time ago and goes hand in hand with the French gastronomy. Alcohols are welcomed in lots of French pastries, too. This year, one of my resolutions is to get to know more about it apart from tea and coffee.
The Singleton of Glen Ord 12 year old single malt Scotch whisky ( The Singleton ) is what I've tried first. Extremely rounded and fruity, it quickly reminds me of fine rum that I encountered in France. When it comes to taste, heightened zesty and gingery notes are very characteristic. I paired it with a rich and creamy cheesecake that adds depth and mellowness to the whisky itself. It was really interesting for me and I think next time I'll try to pair it with dark chocolates and maybe replace rum next time if I ever make some Baba at home.

This was officially the most decadent dinner of Christmas 2020 thus far - a night of luxurious excesses, and a surprise celebration. 🥰
The bestie ordered and cooked both the Australian & Japanese Wagyu 🥩from Pan's Fine Cuts for dinner (seriously good, I hear they carry excellent cuts, are located in Tiong Bahru & do deliveries too, do check them out if you’re a fan of cooking steaks at home!).
To accompany the steaks, we first cracked open🍷a Marcel Lapierre Beaujolais from WEA Wines, then did a side-by-side comparison ⚖️ between the Chateau Siran Margaux 1982 (Fine Wines SG) & 2014 (Enoteca Wine Shop). The 1982 was the less tannic of the two, so I definitely preferred that!
Dessert was the surprise birthday “cake”! Knowing my preference for savoury over sweet, the bestie somehow managed to score the Le Matin Christmas special - the Kombu Tart. 😍 The balance of kombu, toffee and cardamom is 🙌. (Sorry, it was a festive special, and is currently out of stock!)
I found that the tart went really well with the Black Tears Cuban Spiced Rum, which tasted distinctly like coffee liqueur, so so good. We also tried Yellow Spot Irish Whisky, The Maltman Scotch Whisky, Edradour Sherry Cask & the Yamazaki Limited Edition 2014. Thankfully, I poured my own portion of whisky, and was able to control how much I had, despite not being able to control the number of bottles we opened. 🤣
Definitely had way too much food & drink, but it was so worth it. Thanks for a great night babe (you know who you are), it ain’t bad turning a year older soon, as long as you’re in my life! 😘
