The Amazing Northern Lights
When Aurora Borealis, also called the Northern Lights, displays its unique dance of lights ranging from dark blue and green to shimmering yellow and deep pink, the flickering iridescence night sky above the Faroe Islands is captivating for locals and visitors alike.

The usually many clouds above the mountainous Faroe Islands often hinder a clear view of this natural phenomena, but one can though get lucky during calm and cold winter evenings where the sky can clear up and give you a crisp clear view of this amazing light show as happened here above the village of Funningur.

[哥本哈根食況轉播] Noma
如果說Noma是當今高級餐飲的聖地,我就是前來朝聖的虔誠信徒。在書寫了談論了Noma的諸多種種後,我終於親自來哥本哈根走一遭,真正親炙Noma在丹麥風土下所孕育的風采。
雖然今年一月我已在東京體驗過Noma Japan,直到踏上哥本哈根,看見早就不知在網路上看過多少次照片、寫著noma四字的門口,我才真正一償宿願。Noma主廚Daniel就說,我應該是他目前所知第一位先吃過Noma Japan才造訪丹麥Noma的人。而Noma在日本與丹麥有何不同呢?即便Noma Japan已經表現得讓人讚嘆,我必須說,Noma還是回到了丹麥,才更顯本色。畢竟這才是他們的主場呀!整個環境、氣氛、態度都從容不迫,料理也怡然自得多了。
四月底、五月初正當丹麥的春天,新芽竄生,卻仍帶點冬日的峭冷,Noma的料理也就遊走於春意與舊冬之間。去年醃漬的醋栗(gooseberry)、接骨木花、款冬(coltsfoot)才表現了時間的酸味,今年新生的春蔬馬上就豔驚四座:酢漿草、熊蔥(ramson)、金蓮花、山芥(winter cress)等等形色大放的草蔬,或生、或烤、或炒,用手拾起並塗抹盤底的脫水干貝醬,精彩美味極了!我也很喜歡一道使用凝乳酵素製作的「新鮮牛奶」,有點像豆腐也有點像最軟嫩的mozzarella起司,搭配今年剛出的大蒜所製成的蔥醬,以及微酸清新的大麥湯與馬鞭草油,香口而溫柔。還有一道法羅群島(Faroe Islands)來的大蝦(langoustine)!輕烤至表面微脆內裡未全熟,多汁而富有彈性,搭上生蠔與巴西里奶油,簡簡單單卻鮮活有勁。Noma運用食材到極致的方式也令我嘖嘖稱奇,譬如一道李子脆片與醃漬玫瑰花瓣,上頭有白白的、嚐起來有杏仁味的東西,一問之下才知道,那是打開李子果核取出的內餡啊!誰會想到打開李子果核、又有誰知道那果核裡的東西有杏仁般的香甜滋味呢?
用完餐後,我們參觀了一樓出餐廚房、二樓的準備廚房及員工休憩區,看見這些精巧耗工的菜餚背後龐大的人力,以及一間世界第一餐廳所享有的資源。我也順利地「偷拍」到了Rene主廚,站在二樓窗台往外看的他,是不是有點像被關在高塔裡的長髮公主呢?(笑)

Iceland’s Blue Lagoon should be at the top of your bucket list. The famously milky-blue waters have captivated travellers and contributed to the country’s tourism boom in recent years. The waters are full of mineral salts, healthy algae and a kind of silica mud that contributes to its cloudy blue color as well as being a nourishing tonic for the human skin. A little-known fact is that the lagoon was the accidental result of drilling by the Svartsengi Geothermal Plant.
