Black Pepper Spiced Pineapple Tart - a mix of caramelized and non-caramelized pineapples, black tea ganache, freshly grounded black pepper.
Made with black tea (紅茶)powder from Kyoto and fridge pack sliced pineapples from @dole.singapore which are actually the perfect sizes for such tarts. I once had black pepper in a pineapple pastry from one of the Tokyo patisseries and decided to remake it this time by pairing it with a strong flavored tea which will not be covered by the sweetness of the fruit.

Tried 5 whiskies pairing with 5 dishes, including The Glenrothes 12 years old, 18 years old, 25 years old, Whisky Maker’s Cut & HK Exclusive 1997 Single Cask (20 years old) 😍🥳🥃!whisky pairing with sashimi is not easy, they are very smart to invite mixologist Nick Tse to mix Pomelo Whisky Sour to pair, it’s refreshing! 🍸we ended with a dram of HK Exclusive 1997 Single Cask (20 years old, only 580 bottles) pairing with chocolate truffle, it brings out more dried fruit & cocoa notes! A very sentimental moment to sip 1997! 🥃 Happy to sit with Benedict & we chatted the whole nite! So happy to see many whisky friends here! Cheers!

#throwback Tried #HenryHK Wednesday exclusive whiskey pairing 3-course dinner (HK$1100/pax), pairing with #KinahansIrishWhiskey! It’s so enjoyable to have Ryan Lau sitting next to me & chit chat about our favorite whiskies together. 🥳🥃 Tried Kinahan’s Kasc Project, the 1st hybrid cask in the world. What’s it? The cask is individually constructed from a mix of 5 different types of trees, including Portuguese oak, American oak, French oak, Hungarian oak & chestnut oak. It’s very unusual! Aged for at least 5 years, it’s a bit XO feel, with honey, pear, apple, tropical fruit, mineral & spices notes. I also tried Kinahan’s Irish Single Malt Black Oak, which is black oak from Portugal, aged for 7 years & limited to 350 bottles, it’s also special, with rich toasty, charcoal, spices, dark chocolate, dates, caramel & fig notes. The finish has coffee beans notes. I enjoyed the 3-course dinner a lot, esp the beef tartar & the USDA boned ribeye! 😋😋 gotta save some space for Irish Coffee pairing with desserts! And I also tried a special dessert, white truffle soufflé! This is soooo good! 😂😂u must try, too! #Cheers!

Prolonged maceration with the skins. The wine is aged for a minimum of 5 years & spends at least 24 months in French oak casks & American oak casks before rounding off in the bottle for minimum 24 months
Tasting notes of CV Gran Reserva
Personally she loves this the most among the 3️⃣. A very smooth fruity tasting. She has enjoyed a glass to end her tapas trails of the night
Ruby-red colour, deep & vibrant. Complex nose. It retains extraordinary well the black fruit aromas (i.e. blackberries, blue berries & plums). Gradually, it opens up to reveal smoky, toasted wood nuances, with spices & hints of minerals & tobacco. On the palate is smooth with soft & velvety tannins, great palate weight, extraordinary balance acidity. Elegant & complex aftertaste, with hints of coffee, chocolate, tobacco & dark fruit
Suggestions of food matches
Delicious with red meat, grills & roasts, game, mature & blue cheeses. Great with lamb stew with chestnuts sauce
Best served at 17-18 degree

Tasting notes of CV Reserva
Personally she doesn't really enjoy this middle weight, long complex finish. She felt a bit dry & lack of smooth tasting. Just enjoyed a glass
Ruby-red colour, bright & deep. Intense nose, with a great balance between the fruit (i.e. cherries, black plums, ripe blackberries) & the clean nuances coming from the oak (i.e. clove, pepper. vanilla & coconut), enriched by the complex aromas developed during the bottle ageing. Very attractive on the palate, with ripe fruit & spices, tobacco & toasted oak. Elegant & soft tannins, middle weight, long & complex finish
Suggestions of food matches
Delicious with red meat, grills & roasts, game, mature & blue cheeses. Great with grilled tuna steak/ grilled beef with black pepper
Best served at 16-17 degree
