Signature 100 Seconds Cooked Yellow Croaker 百秒黃花魚. My biggest curiosity ordering this is to find out whether they use a Small Yellow Croaker 小黃花 or a Yellow Croaker 大黃花, both slightly different in DNA rather than just judged by size and similar Chinese name sake (Inada vs Buri vs Hamachi as 'farmed', vs a Hiramasa for example. Or a Boston Lobster vs Homard Bleu from France which are 98% the same but still slightly different in Evolution DNA). The Spinous Dorsal fins were cut off from both fishes we ordered already but from the mouth shapes, this would be a 小黃魚 Small Yellow Croaker type. 🦁 【莆田 Putien, Causeway Bay, HK】#HKEPutien
