其實,我家這個小賽真的吃巨多!
很多親眼目睹的人都嚇到
因為她甚至比有些大人的食量還要多😱
老實講
我其實有擔心過她會不會吃過量
她吃的到底去了哪裡
因為她真人也沒有很肥
只是一般小孩的chubby
她每一餐吃完後
都要來點飯後水果
而且她堅持喜愛那些原食材做的料理或零食
所以有時候外面買的食物,她不是很愛
都要麻麻煮的
其實她也會分的出Thermomix煮的
因為味道比較不會流失
尤其蔬菜 brocolli這種
她只接受 Thermomix煮的
美食家姿態
水果,是她的最愛
每一餐都要搭配些
今天的晚餐因為我偷懶加了grab food的poke bowl
她只吃了半碗
然後要求吃點別的
我給了她一粒orange,她馬上啃完
不是很愉快
我把我碗裡的所有avocado都給了她
她吃完,還不夠
我給了她半包 Hanya的yogurt bite
她立刻吃完了,還是不夠
家裡已經沒有什麼她可以吃的東西
米餅她不要
蘇打餅她不要
mashmallow她也不要
一直敲桌敲碗
無奈之下我把家裡最後一顆avocado切給她
這個本來是她明天的糧食😭
勉為其難給了她半顆
因為她早上已經和我share了一顆
結果,她還是不夠
直接搶碗把整粒都吃完😱
過後很不甘願洗澡後
還是找來食譜書翻給我看
仿佛要我做些什麼來吃
我容易嗎我?😭

材料:
三黃雞1隻
頭抽1碗
老抽1碗
冰糖1碗 (可加多減少)
玫瑰露1茶匙
水適量
薑1塊切片
葱1紮
做法:
1.燒紅鑊下油爆香薑葱,之後取出薑葱保留薑葱油
2.雞洗乾淨抹乾水,放入鑊中用中慢火煎香四面,小心熱油飛濺
3.雞煎香後,把爆香了的薑葱塞入雞肚內
4.一次過加入老抽、頭抽、冰糖及適量水分,煮滾豉油汁
5.加入玫瑰露,收慢火煮大概30分鐘,其間不時翻動,直接用筷子插入雞腿最後部份,流出透明汁液便已經煮熟
6.取出雞攤凍斬件
7.將雞肚內取出的薑葱,放進鑊中跟豉油汁一同煮至稠身
8.煮好直接淋在雞表面,或作蘸汁一同上桌
Ingredients:
Yellow Hair Chicken 1 pc
Light soy sauce 1 bowl
Dark soy sauce 1 bowl
Rock sugar 1 bowl (can add or reduce according to personal preference)
Rose wine 1 tsp
Water Some
Ginger 1 pc, sliced
Spring onions 1 bundle
Steps:
1. Heat frying-pan with oil, add spring onions and ginger, stir-fry until aroma released, remove spring onions and ginger, and reserve the oil in the pan.
2. Clean the chicken and pat dry, place the chicken in the pan and pan-fry all sides in low-medium heat until golden, be careful of the oil splashes.
3. Once chicken is ready, place the cooked spring onions and ginger into the chicken cavity.
4. Add dark soy sauce, light soy sauce, rock sugar, and some water to the pan, cook sauce with chicken.
5. Add rose wine, reduce heat and cook for 30 minutes, turn the chicken periodically, poke chopsticks in chicken thighs to check if cooked through. If the juice running out is clear, the chicken is cooked.
6. Once chicken is cooked, remove chicken from pan and let it cool. Once cooled, cut into pieces.
7. Add the removed spring onions and ginger back into the pan with the sauce, reduce sauce until thickens.
Pour the sauce over the chicken, or pour the sauce into a bowl and serve on the side.

Tom Yum Fried Chicken by Jimmy’s Table
I love making fried chicken. I love eating fried chicken. I was craving fried chicken while making Thai food and thought, "why not make a Thai style fried chicken?" Rachel and I loved eating fried chicken off the streets of Bangkok, so I decided to give it a shot. This was my first attempt and it was a success, as I stuck to the basics of marinating and deep frying. For this recipe, I marinated the chicken in Tom Yum paste to give it that sweet, sour and spicy flavor. It worked perfectly as the meat absorbed all the flavors and the crispy skin and batter on the outside gave it the tasty deep fried crunch. I hope you enjoy this recipe!
Ingredients 食材:
Marinade ingredients:
Tom Yum Paste (sold in a jar at City Super) (冬蔭功醬)
1 cup of hot water (熱水)
Main ingredient:
Chicken drumsticks and thighs(雞腿肉)
Deep frying ingredients:
3 cups of white flour (麵粉)
3 tablespoons of garlic powder (蒜粉)
1 tablespoon of ground black pepper (黑胡椒)
1 tablespoon of Cayenne powder or chili powder (辣椒粉)
2 tablespoons of onion powder (洋蔥粉)
1 tablespoon of white pepper (白胡椒)
3 teaspoons of salt (鹽巴)
1 cup of milk (牛奶)
1 tablespoon of white vinegar (白醋)
Peanut oil for deep frying (花生油)
Finishing Ingredients:
Thai Sauce Ingredients (食材):

1/4 cup Fish Sauce (魚露)
1/4 cup Vinegar (白醋)
1/4 cup Sugar (糖)
1/4 cup Garlic (大蒜) - minced
2 Spicy Red Chilis (小辣椒) - minced
3 Limes (檸檬) - halved and squeezed for juice, seeds removed
Toppings:
1/4 cup deep fried shallots (炸紅蔥頭)
1/4 cup deep fried garlic (炸大蒜)
STEP 1
Make marinade. Add in 4-5 tablespoons of Tom Yum Paste into a bowl. Because the paste is thick, slowly add in boiling hot water to dissolve the paste into a thicker fluid. If you add too much, it will get too watery and reduce the flavor of the paste. Stir until even.

STEP 2
Marinade the chicken by adding in the marinade sauce. Turn the chicken so that it is evenly coated.

Once coated, put the chicken into a ziplock bag and put into the refrigerator overnight to seal in the flavors. When ready to fry, be sure to let the chicken rest on the table until it reaches room temperature. You don’t want to deep fry a cold chicken leg or it will definitely be raw inside.

If you want to make it for the same day, then marinade it for at least 30 minutes to 1 hour and leave it on the table in room temperature to try to absorb as much flavor as possible.

STEP 5
Make the deep frying mix by adding about 3 cups of flour into a large mixing bowl. Then add in about 3 tablespoons of garlic powder, 1 tablespoon of ground black pepper, 2 tablespoons of onion powder, 1 tablespoon of cayenne chili powder, 1 tablespoon of white pepper, 3 teaspoons of salt. Stir evenly.

Make buttermilk mix. Add in 1 cup of milk and 1 tablespoon of white vinegar into a large bowl. Whisk together and let it sit for 5-10 minutes.

Now we are ready to deep fry. Start by heating a pot of peanut oil. Peanut oil has a higher heat and smoke point, and it tastes great and is healthier than many other oils.

[TIP] Not mentioned in the video, but a good tip to fry the chicken faster and more evenly, is to take a chopstick and poke 15-20 times into the chicken meat before you soak it into the milk vinegar.
STEP 8
Add and coat the marinaded chicken into the milk vinegar mix. Then remove and place the chicken into the deep fry flour mix. Coat generously and evenly so the entire chicken is covered in the flour mix.

STEP 9
Carefully add the chicken into the hot oil. Be careful as the oil can pop and burn you. Lower the heat so that you can slowly fry the chicken without burning the outside. If your pot is big enough, you can deep fry more than one drumstick at a time.
小心把雞肉加入熱油中因為油會彈出。 若鍋足夠大,則可一次油炸多個雞腿。
STEP 10
Deep fry for about 10 minutes and then measure the meat temperature. If the chicken is over 80 degrees Celcius, then remove and rest on some paper towels to absorb the oils. If you don’t have a thermometer, use a chopstick and stick it in the thickest part of the meat. If the chopstick goes in and out easily, then it is ready.

Plate by pouring thai fish sauce (instructions video can be found in my first pomelo salad recipe) and then sprinkling on deep fried shallots and garlic.

This classic pound cake is so easy, even for beginner bakers. It tastes rich and tender, dense and moist. Its flavored with lemon juice and drizzled with a white lemon glaze, this is the ultimate pound cake for lemon lovers! Classic Glaze Lemon Pound Cake
✎ Pan size: 7x16cm
Ingredients
☞ For the Pound Cake
unsalted butter softened 100g
sugar 100g
cake flour 100g
egg at room temp, 2
a pinch of salt
vanilla extract 2g
☞ For the Syrup
water 40g
sugar 30g
lemon juice 10g
☞ For The Glaze
powdered sugar 80g
lemon juice 15g

Instructions
1. Butter pan and dusk flour to coat. Set aside.
2. Add the softened butter and salt, cream the butter until light, fluffy and creamy (medium speed, about 4 minutes)
3. Add ⅓ of sugar, beat for 1 min each addition.
4. Pour the eggs, one at a time, mix for about 30 seconds for each time, Scraping down the sides of the bowl as necessary.
5. Add the vanilla and mix for a further 30~40 sec.
6. Sift about ⅓ of flour, fold it in gently with spatula until the flour has disappeared. Repeat 2 times with the remaining flour.
7. Simply create a line of butter on top the cake batter before it goes into the oven, and then the cake will crack open along it.
8. Preheat the oven to 170C, and bake for 50-55 mins
9. Meanwhile, combine the water and sugar in a saucepan, bring to a boil. Remove from heat and add 10g lemon juice to mix well.
10. Remove the cakes from the oven, and to cool down for about 10 - 15 minutes. Invert the warm cake onto a rack. Take a skewer and poke pulls. Gradually brush the syrup over the cake. Allow to cool completely.
11. To make the glaze: in a medium bowl, whisk together the sugar and lemon juice. Spoon the glaze over the top of the cake and let it drip down the sides. Then sprinkle of lemon zest on top.

Poke Bowl 夏威夷碗 與 Acai Bowl巴西莓碗!
這兩個是我們今年去紐約和北卡時吃到的一場驚喜,因為太喜歡總共吃了三次,在美國的時候我們就下定決心一定要記起這些味道後回台灣重現!
Poke Bowl 夏威夷碗
(發音poh-kay)Poke是切丁切塊的意思,來自夏威夷傳統美食,加上夏威夷日本人很多,結合日本文化演化成的清新風健康美食,夏威夷日本同胞很多Poke Bowl風潮在這一兩年在美國非常盛行,最早是新鮮切丁的魚塊加上生菜及壽司米飯,搭配特調醬汁攪拌後的美妙風味無可取代,我覺得大家可以用加州壽司的清爽版來想像,除了份量夠飽足感以外,再加上低卡熱量無負擔,而且可以快速製作,我們這趟在紐約跟北卡都看到了以 Poke Bowl夏威夷碗 為招牌主打的速食快餐店。
例如我們在北卡Raleigh遇到的Happy + Hale,種類非常多,我們嘗試了三種都覺得愛不釋手回台灣沒有怎麼辦,只好自己做了(食譜在後頭)

這就是傳統的 Poke Bowl
內容物:鮪魚切塊,蔥末,酪梨泥,壽司飯,搭配不知名醬汁
一開始覺得好小碗而且有點小看它,想說不就是蓋飯嗎,一吃下肚才發現完全不只是蓋飯這麼一回事,非常清爽完全不膩但風味又非常濃郁,我跟G一人一口大概5分鐘就搶光了。
沒記錯的話這碗應該是10.99美金不含稅。
重現難易度:兩顆星,唯一要挑戰的就是醬汁!
Poke Bowl也衍生出非常多種的形式,以下這種是我們最喜歡的,畢竟說好的低醣低碳,壽司米雖然甜甜酸酸很清爽,但碳水還是過多,只能偶爾吃一次解饞。但如果把壽司米飯換成生菜呢?
Thai Chicken Crunch
內容物:醃製雞肉,一堆生菜,跟不知名的好吃醬汁
Crunch就是最上面那層黃脆黃脆有點像墨西哥脆餅的東西,這碗吃起來也一樣清爽,但味道和上面的鮪魚基底不一樣,是醃製後炭烤的雞胸肉,雖然他說是Thai但不是那種東南亞的酸甜風味,比較像醃醬好吃的BBQ 雞肉搭配了非常多種類的生菜。這也是Poke Bowl夏威夷碗的另類風格呈現。
重現難易度:四顆星,雞肉跟醬汁太迷樣了,生菜的種類在台灣也比較難取得。
另外還要介紹的還有巴西莓碗(Acai Bowl)
Acai (發音「啊-薩-依」) Berry,巴西莓,是亞馬遜森林的一種果實,據說亞馬遜戰士要上戰場之前,都吃它補充體力,它的植物本身 “Acai Palm” 在巴西當地被稱為「生命之樹」,而果實 Acai Berry(巴西莓)近年科學家研究發現含有大量的抗氧化物和豐富氨基酸,被譽為是「全球最棒的超級食物之一」,因此就引起了一股 Acai 風潮!
由於我們兩本來就是巴西莓果飲的愛好者,看到這個產品說什麼也都要嘗試啊
重現難易度:二顆星,唯一要擔心的就是巴西莓粉哪裡找而已。
最後是我們回到紐約吃到的另外一間驚艷Poke

這是韓國人開的速食餐廳(就是不用小費的意思),我們非常喜歡這間呈現Poke Bowl的方式,非常亞洲風味,甚至還有酸菜出現在裡面,生魚塊的部分可以選擇鮪魚或鮭魚,也可以都選,醬汁的部分,我們兩剛好點了醬油口味跟白醬口味,完全不一樣,我個人是比較喜歡帶有鰹魚風味的醬油,但老公就是喜歡白醬(有一點像美乃滋但更清爽些)。
重現難易度:二顆星,材料非常多樣化,備料會是個挑戰。

好啦,廢話這麼久,我們要來進入正題了!就是要來教大家如何第一次輕鬆上手poke Bowl(夏威夷碗) 與Acai Bowl(巴西莓碗)
Poke Bowl 夏威夷碗
材料:美生菜,小玉米,鴻禧菇,半熟蛋,小黃瓜切片,海苔香鬆,海苔絲或海苔片,鮭魚生魚片,酪梨球(按照先後順序)
醬汁:日式醬油(淡一點那種不要用金蘭龜甲萬)+味霖+一小塊哇沙米,拌勻。醬油味霖比例大概是2:1
步驟:照材料的先後順序擺盤(恩只有這個步驟),然後淋下醬汁,耶就完成了~~
Tip:海苔是很重要的風味,建議不要省,如果可以買到魚卵或蝦卵更好!
同場加映:酪梨球的食譜
材料:1顆酪梨(一定要放到紫黑紫黑)+半顆檸檬+1/4洋蔥切丁
Tips:洋蔥可以先泡冰水,味道就不會太嗆蓋過酪梨。
步驟:把材料混在一起後,用湯匙慢慢壓扁攪拌拌勻就完成囉!挖起來整個型就是一顆球
Acai Bowl(巴西莓碗)
材料:新鮮藍莓,冷凍藍莓或是冷凍綜合莓果(藍莓多一點),香蕉1根,牛奶120ml,奇異果1顆,杏仁堅果(或榖脆),巴西莓粉
步驟:
1. 半根香蕉先丟冷凍約1小時後,跟冷凍綜合莓果+牛奶+巴西莓粉丟進果汁機,打成泥
2. 半根香蕉切片,奇異果切片
3. 把步驟1倒入美美的盤子,用步驟2的水果+新鮮藍莓擺盤
4. 撒上一點杏仁堅果或是穀脆,大功告成
Tip:穀脆的口感會比堅果好一點,但是碳水含量稍高,請斟酌使用。
