Don’t we all need a little Vitamin C? 🍋🍋
Pound cake is one of the easiest cakes to master. Pound cake gets its name because it’s made from a pound of flour, a pound of butter, a pound of sugar and a pound of eggs.
Over the years, I’ve tried tweaking different combinations because putting a pound of sugar would result in diabetes 🤣.
This recipe below yields the most moist pound cake, perfect for a small family. Save this post and tag me if you’re baking one!
Recipe (yields 6 cakes or a small tin loaf):
2 eggs
160gr self-raising flour
100gr butter
80gr granulated sugar
Zest from 2 lemons
50ml milk
Steps:
1️⃣ Cream butter for at least 5 minutes by using a mixer. This is very important to get soft, moist cake.
2️⃣ Slowly add sugar and continue mixing on high speed for another 5 minutes.
3️⃣ While mixing on low speed, add one egg ➡️ half of the flour ➡️ the other egg ➡️ the remaining flour ➡️ lemon zest ➡️ milk. Mix until well combined. This step only takes 1 minute max. Do not over mix or your cake will be hard and dense.
4️⃣ Bake in a pre-heated oven at 160deg for 20-25 minutes or until a toothpick inserted in the center comes out clean.

Taking over the lot previously owned by Din Ding Tea is Inderawasih Koay Teow Soup 凤凰现煮粿条汤, a popular brand from Taman Inderawasih, Prai. As the name suggests, the place specializes in offering "cook on the spot" or commonly known as 现煮粿条汤. For the uninitiated, such term refers to the way of cooking and serving. The usual type of Koay Teow Soup would be to blanch the noodles and serve the pre-cooked soup as it is but the "cook on the spot" version would be to cook every single serving individually... typically with fresh, minced Pork and innards (popular options also include Fish Balls, Egg etc). Inderawasih's rendition seems to be murkier, with heavy pork notes.

Hello friends! Today we're going to show you how to make a classic french dessert: Weekend Cake, aka Travel Cake or French pound cake.(cake week-end au pamplemousse, Gâteau de Voyage, pound cake)
Weekend Cake, or even Travel Cake, what a lovely name for such a simple dessert. Both of them are translated from french “Cake Week-end” and “Gâteau de Voyage”, it is similar to pound cake, or you can call it French pound cake. But there are still some differences. Pound cake is traditionally made with a pound of flour, butter, eggs, and sugar, and is to use softened butter, but french weekend cake is to use melted butter.
Weekend cake is actually a plain looking cake, made in a simple way, and the cake structure is firmer and less fragile, so it's ideal for a 3-4 days trip, or a weekend friend gathering dessert. This recipe is from Le Cordon Bleu, but we’ve made some adjustments. Hope you like this video. :-) Enjoy.

How to make Le Grapefruit Weekend Cake Recipe
French pound cake Recipe
☞ Pan size: 14x7cm
✎ Ingredients
☞ For the cake
egg 2
grapefruit 1
granulated sugar 80g
cake flour 85g
a pinch of baking powder
unsalted butter 80g, melted
** For grease a pan: 10g of melted butter, 20g of flour
☞ For the apricot glaze
nappage abricot 25g
water 25g
☞ For the grapefruit syrup
Grapefruit juice 30g
powdered sugar 18g
✎ Instructions
1. Brush the melted butter evenly on the base and edges of a pan. Dust the inside the pan with flour, then tip out and discard any excess flour.
2. Add hot water in a medium bowl, place the butter pieces in a stainless steel bowl, put the bowl in the hot water and cover a cloth, set aside and keep warm.
3. Add 80g sugar in a bowl, zest an half of grapefruit into it. Then rub the grapefruit zest and sugar together with your fingers until fragrant and combined.
4. In a large mixing bowl, add two eggs and grapefruit sugar, whisk them together for 7~8 minutes until the egg mixture is pale and fluffy. If you use hand electric mixer, then beat on medium speed for 2 minutes, then change to low speed for 1 minute.
5. Sift the flour and baking powder into the egg mixture, and gently fold until you have a smooth batter.
6. Pour the melted butter into the bowl, mix until fully incorporated and the texture is a little bit glossy.
7. Fill three-quarters full with batter. Tap the pan 1 or 2 times to cause the air bubbles to rise to the surface.
8. Pour melted butter in a small tray, and dip the melted butter with scraper, then gently touch the center of the batter to create a butter line.
9. Preheat the oven to 170°C and bake for 30~35 minutes. Remove the cake from the pan and place it onto a cooling rack and leave to cool.
10. Use a small pan to melt the apricot and water over low heat. Brush the top with warm apricot glaze and leave for minutes while making grapefruit syrup.
11. For the grapefruit syrup, mix together the grapefruit juice and icing sugar. Brush the syrup over the side of the cake, then refrigerate for 1-2 hours.

◆Japanese Cheese-in-Hamburger Steak
《iIngredient ( servings 2 ) 》
100g ground beef
100g ground pork
vegetable for side dishes (as much as you want)
1/2 onion (minced)
4 sliced cheese
4 tablespoons red wine
1 tablespoon vegetable oil
A 1 egg
A 20g dried bread crumbs (1/2 cup)
A 1 tablespoon milk
A 1/4 teaspoon salt
A 1/4 teaspoon peppar
A 2 pinch nutmeg
B 4 tablespoons ketchup
B 2 tablespoons worcestershire sauce
pre-cooking
In the small bowl, mix dried bread crumbs and milk,
Cut the vegetables for side dishes into bite size.
①In a large bowl, mix the meat, onion and ingredient A ( egg, bread crumbs, salt, black pepper and nutmeg) until the mixture gets sticky. Cover the bowl with plastic wrap, keep it in the fridge for 15 minutes.
②Roll up each sliced cheese and cut in half. Divide the meat mixture in half. Then wrap the cheese with meat mixture and make oval shape patties.
③Heat the vegetable oil (not included in ingredient) and place the patties in the frying pan over medium to high heat until bottom has browned. Flip patties over, then cover, reduce the heat to low and cook thoroughly for 7~8 minutes. Transfer steaks into dishes.
④Remove the scorched part of frying pan with a paper towel and add red wine. Heat over medium to high heat for 30 seconds until alcohol is gone. Add ketchup and worcestershire sauce until the sauce thickens. Serve with vegetables.
⑤Cook vegetables during you cook hamburger steak. Place vegetables in a glass casserole dish and cover with plastic wrap and microwave. Remove excess water and pour melted butter (not included in ingredient).

◆Meatloaf
Ingredient ( servings 4 )
150g ground pork
150g ground chicken
100g Maitake mushroom, chopped
60g carrot, chopped
A 1 cup dried bread crumbs
A 1 egg
A 2 tablespoons ketchup
B 1 teaspoon garlic, chopped
B 1 teaspoon salt
B 1 teaspoon black pepper
B 1 teaspoon dried parsley
B 1/4 teaspoon nutmeg
Preheat oven to 180 degrees C(350 degrees F)
①In a small bowl, mix ingredients A ( bread crumbs, egg, ketchup)
②In a large bowl, combine pork, chicken, mushroom, carrot, B ingredients (garlic, salt, pepper. dried parsley, nutmeg) and mixed A ingredients well.
③Form meatloaf mixture into 20cm long and 5cm high, well-packed, loaf shape on prepared baking sheet .
④Bake at 180℃ for 45minutes until cooked through. After cool it down, cut and serve with vegetables , you like.
