2018, I learnt how to be a better friend, a better leader and a better athlete. There were a lot of raw emotion and vulnerability, and at times I felt really awful about myself. But through these times you become a stronger person overall, as you continue to evolve in your journey of self-love.
On the Ironman side of things, I finally bit the bullet and did my first full Ironman race (I can still remember the pain). I also went for my first race out of Asia, to South Africa for the Ironman 70.3 World Championship. And not forgetting that sweet podium finish at Cebu!
On the @rockthenakedtruthsg side, I posed in underwear for the world to see in our collaboration with @sloggisg and I am ever so grateful for brands like these who believe in the message I'm pushing. I then went one step further after and undressed for a "nude" shoot - for the Naked Truth campaign. Plus the @zaobaosg cover spread was so damn cool, I'm so lucky!
RTNT also launched its own cycling kit and water bottle with @specializedsg - I am so honoured to work with such a premium cycling brand!
On the @rockrunnerssg side, we got to run the #SCSMWomenSquad programme again (yay ladies!!) and all the exciting events we have had over the year wouldn't have been possible without my core team.
I hope 2018 has been kind to you and remember, tough times don't last, tough people do. I've loved, I've lost, I've given, I've taken. End of it all, I wish for you a splendid New Year and let's see what 2019 brings!

I know of some who tend to stay away from eating lamb because of its game taste but with our recipe, you don't have to worry about this because we used ginger and garlic to mellow the taste down to its minimum.
Thanks to our friends from Pure South who gave us a rack of lamb, we made Korean style Lamb Rack for dinner last week. Wow, so yummy and so tender! If you're shopping for raw lamb rack to cook at home, please go for good quality ones because quality meat really make a whole lot of difference.
Pure South is a brand under the Alliance Group which began as a group of farmers in 1948 and is now a world leader in lamb, beef and venison production and distribution, delivering quality products to over 65 countries. Ingredients
Serves 4
- First up, let's marinate the lamb rack with these ingredients;
1kg rack of lamb
1 tablespoon of grounded black pepper
2 tablespoons of light soy sauce
2 tablespoons of gojujiang or gochujang (Korean red chilli paste)
1 thumb size ginger - grated
1 teaspoon of salt
2 tablespoons of sesame seed oil
2 tablespoons of mirin
4 cloves of garlic - grated
- Place marinated lamb rack in a closed container and leave the meat in the fridge to marinate overnight.
- Next day, sear all sides of the lamb rack in a hot pan. Sear each side for about 10 - 20 seconds per side. Retain the leftover marinate from the lamb rack for later use. While you are searing the meat, heat your oven at 220*C for at least 20 - 30 minutes.
- Before placing the seared lamb rack in the oven, baste the meat with the balanced marinate.
- Bake the lamb racks at 220*C for 10 - 12 minutes. After 10 - 12 minutes, stick a meat thermometer into your meat to see if you have achieved your desired doneness of your meat. If you want your meat to be medium rare, go for about 55*C. For medium well, aim for 62*C.
- If you want your meat to be like ours (medium well), please further bake the meat for 10 minutes at 200*C.
- Once done, rest the meat for at least 10 minutes before cutting the rack up.
- To make sauce for your lamb rack, pour the balance marinate into a pot and add 1 cup of water. Add the following ingredients:
# 1 tablespoon of sesame seed oil
# 1 tablespoon of light soy sauce
# 1 tablespoon of gochujang
# 1 tablespoon of mirin
# 1 teaspoon of sugar
- Mix well and reduce sauce for at least 10 minutes.
- Pour the sauce over your lamb rack and serve.

In Indonesia, a pig roast is called babi guling, babi panggang or babi bakar; however it is rarely found in Indonesia, except in non-Muslim majority provinces, such as Hindu Bali and Christian Batak lands in North Sumatra, Minahasa people of North Sulawesi, Toraja in South Sulawesi, Papua, and also among Chinese Indonesians. In Bali, babi guling usually served with lawar and steamed rice; it is a popular dish in Balinese restaurants and warungs. In Batak people's tradition, babi guling is a prerequisite in wedding offerings for the bride's family. In Papua, pigs and yams are roasted in heated stones placed in a hole dug in the ground and covered with leaves; this cooking method is called bakar batu (burning the stone), and it is an important cultural and social event among Papuan people.
In various Chinese communities (especially in Southern China), a pig roast known as siu yuk is purchased for the sake of special family affairs, business openings, or as a ritualistic spiritual offering. For example, a tradition is to offer one or several whole roast pigs to the Jade Emperor to celebrate a Chinese film's opening with a roast pig; the pig is sacrificed to ward off evils in return to pray for the film's success. One garnish used to make the dish look more appealing is a circular slice of pineapple and cherry and is often placed in a red box for luck.

There are numerous ways to roast pork, including open fire rotisserie style roasting, and "caja china" style box grilling. Many families traditionally have a pig roast for Thanksgiving or Christmas.
