Marinate your chicken wings using this delicious homemade rempah (spice paste) and reducing it into a thick sauce, every bite of your chicken wing will be bursting with flavour.
This recipe uses luscious pandan and coconut infused basmati rice as a base for crispy chicken wings, sambal lady's finger and not forgetting the classics, sunny side up and fried ikan bilis.

2 cups Basmati rice grains
250ml Water
2g dried Blue Pea flowers (green stems removed
250ml Coconut milk
4 pieces Pandan leaves (tear each leaf into half and tie them into knots)
3 slices Galangal (lightly smashed)
1 stalk Lemongrass (white part only, lightly smashed)
Spices for marinate:
8 pieces Large chicken wings
4 pieces Red chilli
2 pieces Chilli padis
2 pieces Candles nuts
1 piece Lemongrass (white part only)
1 knob Galangal
1 knob Turmeric
2 tsp Gula melaka / raw sugar
½ tsp Cumin seeds
½ tsp Fennel seeds
300ml Coconut milk
4 tbsp Tamarind juice (1 tbsp of tamarind pulp to 6 tbsp hot water)
Salt to taste
For frying:
2 tbsp Cornflour
8 tbsp Potato starch
Salt to taste
½ tsp Baking soda
½ tsp Baking powder
Sambal Spices:
300g Lady’s fingers (sliced)
6 Red chillies
3 Chilli padis
3 cloves Garlic
6 Shallots
20g Dried shrimps
10g Belachan
3g Torch ginger bud
1 tbsp Light soy sauce
1 tsp Sugar
Side Condiments:
8 slices Cucumbers
150g Fried ikan billis
100g Fried peanuts
4 Fried eggs
4 sheets of banana leaves for serving

• 雙面煎的半生荷包蛋 over easy(over 即是反蛋的動作,而easy則是生熟程度的描述,要再熟一點的便是 over medium,而更熟的則是over hard)

Time to kick off your Sunday morning right by whipping up the ultimate fry up 🌟
Not a proper guide to a full English fry up but I guess with Solisege’s Solisege's goods, I was able to recreate this delicious fried breakfast at home. Call it what you want, we are calling it fatfoodbeast’s ultimate fry up.
What you’ll need:
[Sausage & Bacon]
@solisegemy’s Hungarian Sausages, Mini Cheese Sausages & Apple Cinnamon Sausages.
Solisege’s Streaky Bacon, Back bacon.
Additional: @solisegemy’s Honey Baked Ham
[Baked Beans]
Don’t be ashamed to reach for a can of beans, the inclusion of beans in your fry-up would definitely give this whole plate a lil punch.
[Tomatoes]
Much like the baked beans, the tomato acts as an optional garnish. The acidity and sweetness from the tomato helps especially when you are devouring all the fatty stuff.
[Forget the toast, get the fried sourdough bread ]
Fried sourdough is just what it is - sliced sourdough bread toasted on the pan with some butter. Perfecto! Got @arethaseraph’s sundried tomato w Italian Herb Sourdough! The addition of sundried-tomatoes & herbs have definitely given the bread a more substantial flavour. Love it!
[The Eggs]
2- 3 eggs cooked to your preference. The runny yolk is visually and aesthetically pleasing but the ability to crack eggs does not necessarily translate to the creation of a perfect sunny side up haha? Hence, got mine scrambled instead. Imma a die-hard scrambled egg fan, so why not? The eggs act as the perfect sauce that brings the whole plate together!
[Optional, but not necessary]
Mushrooms// White Button Mushrooms & Portobello Mushrooms
Having mushrooms in your fry up is a nice addition because it offers a moment of pause from that whole sausage and bacon meat feasting. A good to have for sure.
Black Pudding//
No idea where & how to get/make this. It’s basically a sausage made with pork fat, blood and oatmeal, you may or may not like it.
It is no surprise that the art of a proper fry-up is still alive today and can be found in kitchens all over all the world :) At the end of the day, it is entirely up to you for whatever you choose to include in your fry up.

1) 鐵板燒套餐
材料:
A
雞腿排 2支/chicken thigh 2pcs
麵粉 適量/flour q.s.

水 50ml/water 50ml

雞蛋 2顆/eggs 2pcs
作法:
1. 將調味好的雞腿排雙面皆沾上麵粉,備用。(秘訣:雞腿沾粉,表面更香酥)
2. 鐵板燒鍋倒入2大匙油,雞腿排皮朝下放在鐵板燒鍋上,調整火力至【中】煎約8分鐘至皮酥脆後翻面。
3. 續煎約6分鐘,再將雞腿撥至鍋邊。
4. 調整火力至【強】,放入辣椒片和蒜片爆香,放入高麗菜,稍微拌一下後淋上水。
5. 蓋上鍋蓋,燜約1分鐘至高麗菜軟。(重點:利用雞油炒菜更香!)
6. 開蓋將高麗菜翻炒均勻,再撥至鍋邊,打入2顆雞蛋,煎熟即可。
2) 夜市煎餃+炒麵
材料:
A
冷凍水餃 20顆/ frozen dumplings 20pcs
水 120公克/water 120g
B
油麵 300公克/ alkaline noodle 300g
豆芽菜 80公克/ bean sprout 80g
韭菜 50公克/ Chinese chive 50g
照燒醬 80公克/ teriyaki sauce 80g
作法:
1. 將冷凍水餃放入烤盤中,再放入油麵,淋上水,蓋上鍋蓋。(鍋具小標:透明鍋蓋,防止油濺、料理熟度看得見)
2. 調整火力至【中】,燜蒸約10分鐘。(秘訣:燜一下,易熟口感又軟)
3. 開蓋翻動一下麵條,放入豆芽菜和韭菜,淋上照燒醬,拌炒均勻即可。
(小字:超氣派!好看又好吃)
3) 小館子石鍋拌飯
材料:
A
胡蘿蔔絲 250公克/carrot 250g
香菇絲 300公克/ shiitake mushroom 300g
黃豆芽 200公克/ soybean sprout 200g
水 100公克/water 100g
菠菜 300公克/ spinach 300g
韓式燒烤牛肉片 400公克/bulgogi beef 400g
B
白飯 4碗/ steamed rice 4bowl
麻油 適量/ steamed rice q.s.
太陽蛋 1顆/ sunny side up egg 1pcs
韓式拌飯醬 適量/ bibimbap hot sauce q.s.
作法:
1. 鐵板燒鍋倒入適量油,調整火力至【強】,放入香菇絲,翻炒均勻,撒上鹽後再將香菇炒軟,取出備用。
2. 重複作法1,分別將胡蘿蔔絲和菠菜炒軟後取出,備用。
3. 鐵板燒鍋倒入適量油,調整火力至【強】,放入黃豆芽,再淋上水,蓋上鍋蓋,燜約4∼5分鐘至黃豆芽軟,再加入少許鹽,拌勻。(秘訣:黃豆芽燜煮才不會有豆腥味)
4. 鐵板燒鍋倒入適量油,轉大火,放入韓式燒烤牛肉片,翻炒均勻至肉片熟後取出備用。
5. 鐵板燒鍋倒入麻油,鋪上白飯,調整火力至【中】,再放入肉片和所有蔬菜配料,擺上太陽蛋、淋上韓式拌飯醬,加熱至米飯有鍋巴,再將飯和所有食材拌勻即可。(秘訣:加麻油煎出鍋巴才對味)
(小字:大份量!做一道料理搞定全家人晚餐)
4) 餐廳招牌韓式煎餅
材料:
A
海鮮包 2包/ seafood mix 2pcs
高麗菜絲 300公克/cabbage 300g
胡蘿蔔絲 80公克/carrot 80g
蔥段 40公克/scallion 40g
B
低筋麵粉 200公克/ flour 200g
糯米粉 100公克/ sweet rice flour 100g
泡打粉 1茶匙/baking powder 1tsp.
鹽 1茶匙/salt 1tsp.
白胡椒粉 1茶匙/ white pepper powder 1tsp.
水 400公克/water 400g
作法:
1. 海鮮包先放入鍋中炒熟,備用。(秘訣:海鮮炒熟避免出水)
2. 所有材料B混合均勻成麵糊,再放入高麗菜絲、胡蘿蔔絲、蔥段和作法1的海鮮料,混合拌勻。
3. 鐵板燒鍋倒入2大匙油,調整火力至【中】,倒入所有作法2的麵糊,攤平。
4. 蓋上鍋蓋,續用中火煎約8分鐘。
5. 翻面,再煎約6分鐘至雙面皆金黃酥脆即可。

SOY HONEY GLAZED SALMON RICE BOWL (2 bowls)
Ingredients:
200g Salmon Fillet
1/2 cup Edamame, peeled
1/2 cup Cucumber, sliced
1/2 cup Cherry Tomatoes, halved
2 Eggs
2 small bowls of Cooked Rice
Marinade:
1 tbsp. Soy Sauce
1/2 tbsp. Honey
1/2 tbsp. Rice Vinegar
2 Garlic Cloves, diced
Steps:
1) Pre-heat oven to 185C / 365F.
2) Start by making the marinade. In a small bowl, whist together the soy sauce, honey, rice vinegar and garlic.
3) Place the salmon onto a baking dish covered with foil. Brush the soy sauce garlic marinade onto the salmon and let rest for 15 minutes.
4) Place in the oven and bake for 15 minutes or until the salmon is fully cooked through.
5) In the meantime, you can slice all the vegetables and make sunny side ups.
6) Once the salmon is done, remove from oven and let’d start to assemble our rice bowl.
7) Start with the base, which is the rice. And neatly arrange all the ingredients on top of the rice.
8) Top it up with a little of sesame seeds and chilli flakes. Serve immediately.
CHILLI BEEF RICE BOWL (2 bowls)
Ingredients:
300g Beef Fillet
1/2 tbsp. Teriyaki Sauce
1/2 Onion, sliced
4 - 5 Small Chilli, sliced
A bunch of Parsley, sliced
2 Garlic Cloves, sliced
100g Baby Spinach
2 Eggs
1/2 tbsp. Sesame Oil
1 tsp. Soy Sauce
2 small bowls of Cooked Rice
Steps:
1) Thinly slice the beef fillet.
2) Then marinade it with teriyaki sauce and let it sit for about 10 - 15 minutes.
3) In the meantime, let’s slice all the vegetables - onion, small chillis and parsley.
4) Coat the pan with sesame oil, and cook the onions until lightly golden brown and fragrant.
5) Add in the beef and lightly stir-fry until it’s almost cooked, for 3 - 5 minutes.
6) Then stir in the chillis and parsley, continue to cook very quickly for another 2 - 3 minutes. Done!
7) Now let’s cook the baby spinach. In a pan, stir-fry the garlic until golden brown and fragrant.
Then add in the baby spinach and a little bit of soy sauce. Cook very quickly for 1 - 2 minutes and it’s done. Avoid overcooking the baby spinach as we want to still keep it crunchy.
8) Finally, cook 2 sunny side ups.
9) Let’s assemble our rice bowl. Start with the base, which is the rice. And neatly arrange all the ingredients on top of the rice.
10) Top it up with a little of sesame seeds and chilli flakes. Serve immediately.
TEMPEH KIMCHI RICE BOWL (2 bowls)
Ingredients:
300g Tempeh, sliced
1/2 cup Kimchi
100 Baby Spinach
2 Garlic Cloves, diced
1 tsp. Soy Sauce
2 small bowls of Cooked Rice
Marinade:
1 tbsp. Soy Sauce
1/2 tbsp. Honey
1/2 tbsp. Rice Vinegar
2 Garlic Cloves, diced
Steps:
1) Pre-heat oven to 185C / 365F.
2) In a small bowl, whist together the soy sauce, honey, rice vinegar and garlic.
3) Thinly slice the tempeh and place it onto a baking dish. Brush the marinade onto the tempeh and let rest for 15 minutes.
4) Place in the oven and bake for 10 minutes or until tempeh is lightly browned.
5) Now let’s cook the baby spinach. In a pan, stir-fry the garlic until golden brown and fragrant.
6) Then add in the baby spinach and a little bit of soy sauce. Cook very quickly for 1 - 2 minutes and it’s done. Avoid overcooking the baby spinach as we want to still keep it crunchy.
7) Let’s assemble our rice bowl. Start with the base, which is the rice. And neatly arrange all the ingredients on top of the rice - tempeh, kimchi and spinach.
8) If you are new to eating kimchi, then start with 1 tablespoon. If you love kimchi, then serve more. Kimchi is a great source of probiotics.
9) Top it up with a little of sesame seeds and chilli flakes. Serve immediately.
