米奶 vs 米水
近年植物奶大行其道,米奶亦是其中一種,米奶和米水哪一種比較好?來了解一下吧!
🥛 甚麼是米奶?
米奶是由白米及水製成的仿奶製品,不含奶類成份,其營養來自白米,相比牛奶熱量較低,不含動物性脂肪,適合素食人士、乳糖不耐症患者及減肥人士飲用;惟注意升糖指數高,糖尿病人士慎飲。
自製米奶
材料:白米1杯、開水5杯
做法:白米洗淨,放雪櫃浸泡一晚。倒走浸泡的水,將米及開水以高速攪拌機攪成糊狀,如顆粒比較大,可用隔渣袋過濾米渣,即成米奶。
*米和水的比例可按個人喜好而定
*用白飯可省卻浸米時間
🍚 甚麼是米水?
米水是用紅米、白米及生薏米煲成的養生飲品,從中醫角度看,白米及紅米皆有補氣養脾胃功效,亦能除煩渴、長肌肉、止腹瀉,加入少量生薏米取其健脾袪濕功效,加強去水能力。米水可紓緩容易疲倦、食慾不振、面色偏黃欠光澤及身體浮腫等問題,由於屬性平和,男女老幼皆適合,唯薏米會令子宮收縮,建議孕婦不下薏米服用。
自製米水
材料:紅米2湯匙、白米半湯匙、生薏米半湯匙
做法:將材料洗淨,鍋內加入約800-1000毫升水,以武火煮滾後調文火煮20-30分鐘。
備註:天天煲,一天飲完,不要過夜

🥛 What is rice milk?
It is a milk substitute made of white rice and water. In other words, it does not contain dairy product. The nutrient of rice milk comes from white rice, and it is lower in calories. Homemade rice milk
Ingredients: 1 cup of white rice, 5 cups of boiled water
Method: wash the white rice and soak it in water overnight in the refrigerator. Pour away the water, and replace it with boiled water. Pour the mixture into a high-speed blender to turn them into a paste. Use a sieve to remove the large bits of rice and retrieve the rice milk.

🍚 What is rice water?
Rice water is a healthy drink made from red rice, white rice, and coix seed. White rice and red white can both replenish qi, strengthen the spleen and stomach, relieve excessive thirst, promote muscle growth, and alleviate diarrhea. Coix seed can strengthen the spleen and dispel dampness. Rice water can improve fatigue, poor appetite, yellowish complexion that is lacking shine, and bloating. Due to its mild nature, it is suitable for the entire family with the exception of pregnant women as coix seeds can cause uterus contraction.
Simple healthy rice water
Ingredients: 2 tablespoons red rice, half tablespoon of white rice, half tablespoon of coix seeds
Preparation: rinse all ingredients thoroughly. Combine all ingredients with 800-1000ml of water and cook on high heat until boiling. Turn to low heat and simmer for 20-30 minutes.
*Rice water should be made fresh daily and should not be stored overnight as it will spoil easily.
*For pregnant ladies, they can omit coix seeds.
*Those with diabetes should consult a nutritionist accordingly.

CheckCheckCin:如果下半身肥胖又易水腫,多數為痰濕型肥胖,伴隨症狀為無食慾、痰多、胸悶、容易疲倦、肌肉鬆軟、四肢浮腫、大便稀爛等。因為濕邪就像水一樣喜歡向下流,故容易造成下半身肥胖的啤梨身形。如果做運動時間不多,建議可以跳繩,在家都可輕鬆做到!跳繩時雙腳用力跳,除可改善下半身肥胖,更可運用全身肌肉。一開始時要連續跳數分鐘會很困難,不妨採用間歇性跳繩法,每跳1至2分鐘後休息30秒至1分鐘,以這個規律進行10組運動,習慣這個強度後可慢慢拉長跳繩時間。建議跳繩前先做熱身,跳繩後做伸展操,有助紓緩肌肉緊繃的狀況。
飲食上配合減肥效果會更顯著,飲食宜祛濕健脾胃,按體質適量進食芡實、白扁豆、黃豆、茯苓、淮山、陳皮等健脾袪濕食材,少吃多餐,戒生冷食物及冷飲。

CheckCheckCin: Abdominal fat and water retention are conditions that most probably related to phlegm-dampness. Other accompanying symptoms include appetite loss, excessive phlegm, chest tightness, fatigue, loose muscles, swollen limbs, and loose stools. This is because the pathogenic factor of dampness tends to flow downwards, which causes the lower half of the body to look pear-shaped.
If you do not have time to exercise, you can consider skipping rope, which you can easily do at home! Jumping up high not only reduce the abdominal fat, but can also train the muscles of your entire body. In the beginning, it might be difficult to jump continuously for a few minutes. Why not do it intermittently? Jump for 1-2 minutes and rest 30 seconds to 1 minute, and repeat the cycle 10 times. Once you have gotten used to it, you can extend the time. Remember to warm up first, and carry out stretching exercises to relieve the tension on the muscles.

菊花杞子茶
功效:清熱滋陰,紓緩因乾燥的眼澀、眼乾、喉嚨乾及皮膚乾燥等症狀。
材料:菊花6克、杞子10克、麥冬15克、蜂蜜適量
做法:將材料洗淨,麥冬切半,放入保溫瓶中,以熱開水沖泡一次,再注入熱開水焗約10分鐘即可,此茶可反覆沖泡至味淡。

Dry eyes relief- nourish yin and relieve dryness
“I stare at the computer screen during work for eight hours. My eyes are often dry, and I can use up a bottle of eye drops in a day. What can I do?”
CheckCheckCin: Using computer for an extended period will cause eyes to turn red and dry; do note the severity of the condition. As we are entering autumn, autumn dryness will accelerate the loss of body fluid. Furthermore, sleeping late at night and eating spicy and deep fried food will cause the body to be deficient of the yin and blood, and this will exacerbate problems such as dry, tired, itchy eyes, sticky eye discharge as well as blurred vision.
Using eye drops may provide temporary relief but this is not a long-term solution. You need to restore the imbalance by consuming food that will nourish the yin and relieve the dryness, such snow fungus, glehnia root, Polygonatum odoratum ('yu zhu'), lily and dwarf lilyturf roots (‘mai dong’). Drink herbal chrysanthemum tea to relieve eye discomfort, as it can improve vision and soothe the liver. Remember to blink your eyes from time to time, and rest for 10 minutes every hour. Stare into the distance, and look at greenery around you. If such eye conditions persist, consult licensed and registered Chinese medicine practitioner.
Chrysanthemum tea with wolfberry
Effects: Clears heat and nourishes yin. Relieves dry eyes, dry throat and skin dryness caused by dryness.
Ingredients: 6g chrythanthemum, 10g wolfberry, 15g radix ophiopogonis, honey
Preparation: Rinse all dry ingredients thoroughly. Cut radix ophiopogonis in half. Place all ingredients into thermos and add in hot water and steep for 10 minutes until aroma develops. The tea can be poured into thermos and re-brewed until flavour weakens.

生チョコバナナチーズケーキ
15cmケーキ型 1台分
材料:
■フィリング
クリームチーズ(室温に戻す) 200g
生クリーム 150ml
バナナ 1本
砂糖 50g
レモン汁 小さじ2
粉ゼラチン 5g
水 大さじ2
◼︎生チョコレート
チョコレート(砕く) 50g
生クリーム 50ml
◼︎ボトム
クッキーアンドクリーム 12枚
溶かしバター 20g
作り方:
1.ボトムを作る。ジップ付きの袋にクッキーアンドクリームを入れて、めん棒で叩いて細く砕く。溶かしバターを加えてよく揉み込む。クッキングシートを敷いた型の底に敷き詰め、冷蔵庫に入れて30分冷やし固める。
2.フィリングを作る。ボウルにクリームチーズ、砂糖を入れ、なめらかになるまで練り混ぜる。
3.別のボウルにバナナ、レモン汁を入れ、フォークでしっかりとつぶし、(2)に加えて泡立て器で混ぜ合わせる。
4.ゼラチンを水に振り入れてふやかし、600Wの電子レンジで10秒ほど温めて液状にし、フィリングに加えてよく混ぜる。
5.別のボウルに生クリームを入れ、ハンドミキサーで7分立てにする。2回に分けてフィリングに加え、その都度さっくりと混ぜる。
6.(1)の型に流し入れ、表面を平らにならし、冷蔵庫で2-3時間冷やし固める。
7.生チョコレートを作る。ボウルにチョコレート、生クリームを入れ、500Wの電子レンジで1分加熱する。取り出してなめらかになるまでよく混ぜる。(チョコが溶けない場合は10秒ずつ加熱して溶かす。)
8.(7)を(6)の表面に流し入れ、冷蔵庫で3時間冷やし固めたら、完成!

1 banana (about 85g)

150ml fresh cream
■Chocolate ganache
50g chocolate (chopped)

12 cookies & cream cookies

PREPARATION
1. To make crust, crush cookies & cream cookies in a zipped top bag with a rolling pin, add melted butter and combine. Line a cake mold with a parchment paper, press crushed cookies down into the bottom of the mold. Refrigerate for 30 minutes.
2. To make filling, mix cream cheese and sugar in a bowl until smooth.
3. In separate bowl, mash a banana with a folk, add lemon juice. Transfer into (2) and mix well with a hand mixer.
4. Sprinkle gelatin powder into the water, microwave at 600W for 20 seconds to liquefy. Pour into the filling (2).
5. In separate bowl, whip cream until soft peaks form. Transfer into the filling, half at a time. Do not over mix but just combine.
6. Pour into the mold (1). Refrigerate for 2 to 3 hours.
7. To make chocolate ganache, put chopped chocolate and fresh cream in a bowl and microwave for 1 minute at 500W. Mix until smooth.
8. Pour chocolate cream (7) into (6). Refrigerate for 3 hours.
9. Enjoy!

抹茶のイタリアンプリン
400ml角型の耐熱容器 1個分
材料:
■プリン液
牛乳 100ml
卵 1個
砂糖 大さじ3
薄力粉 小さじ1
抹茶 小さじ1
粉ゼラチン 7g
水 大さじ1
クリームチーズ(室温に戻す) 100g
生クリーム 100ml
■カラメルソース
砂糖 大さじ2
水 小さじ1
熱湯 大さじ1
作り方:
1.カラメルソースを作る。深めの耐熱ボウルに砂糖、水を入れ、ラップをかけずに600Wの電子レンジで2分ほど加熱する。茶色くなったら鍋つかみをはめてボウルを揺すり、熱湯を加えてかき混ぜる。(カラメルが跳ねるので注意する。)なめらかになったら容器に流し入れ、冷蔵庫で冷やす。
2.プリン液を作る。ボウルに卵、砂糖を加えて溶きほぐし、薄力粉、抹茶を合わせてふるい入れ、ダマがなくなるまで混ぜる。
3.牛乳を加えてさらに混ぜ、ふんわりラップをかけて、600Wの電子レンジで1分30秒加熱する。取り出してなめらかになるまで混ぜ、再びラップをかけて20-30秒加熱してよく混ぜる。
4.別のボウルにクリームチーズを入れてなめらかになるまで練り混ぜ、生クリームを2回に分けて加え、その都度混ぜる。
5.(3)のボウルに(4)を3回に分けて加え、その都度よく混ぜる。ふんわりラップをかけて、600Wの電子レンジで1分30秒加熱する。
6.ゼラチンを水に振り入れて600Wの電子レンジで20秒ほど加熱して液状にし、(5)に加えてよく混ぜる。
7.(1)の型にプリン液をこし入れ、冷蔵庫で3−4時間冷やす。
8.皿の上に裏返して取り出したら、完成!

Matcha Italian Flan Made With Microwave!
Servings: 1 (400ml cake mold, microwave-safe)
INGREDIENTS
■Flan
100ml milk
1 egg
3 tablespoons sugar
1 teaspoon all-purpose flour
1 teaspoon matcha powder
7g gelatin powder
1 tablespoon water
100g cream cheese (at room temperature)
100ml fresh cream
■Caramel sauce
2 tablespoons sugar
1 teaspoon water
1 tablespoon hot water
PREPARATION
1. To make caramel sauce, microwave sugar and water in a large bowl for two minutes (600W). When browns, shake the bowl, add hot water and mix. (Make sure to use oven mitts! Its hot!) When smooth, pour into a microwave-safe mold and refrigerate it.
2. To make flan mixture, mix an egg and sugar in a bowl. Sift all-purpose flour and matcha into the bowl and mix until smooth.
3. Add milk and mix. Plastic-warp the bowl slightly and microwave it for 1 minute and 30 seconds (600W). Mix until smooth, then wrap it again to microwave 20 to 30 seconds. Mix well again.
4. In separate bowl, put cream cheese and mix until smooth. Add half of fresh cream into the bowl to mix, then pour the rest of cream to mix more.
5. Pour cream cheese cream mixture (4) into the bowl (3) slowly (1/3 of mixture at a time). Make sure to whisk well each time you add the mixture. Plastic-wrap the bowl lightly and microwave for 1 minute and 30 seconds (600W).
6. Sprinkle gelatin powder into the water and microwave for 20 seconds (600W) to let it dissolve. Add into the bowl (5) and mix well.
7. Pour cream mixture (5) into the mold (1). Refrigerate for 3 to 4 hours.
8. Unmold the flan onto a plate.
9. Enjoy!

Hello friends! Today we're going to show you how to make a classic french dessert: Weekend Cake, aka Travel Cake or French pound cake.(cake week-end au pamplemousse, Gâteau de Voyage, pound cake)
Weekend Cake, or even Travel Cake, what a lovely name for such a simple dessert. Both of them are translated from french “Cake Week-end” and “Gâteau de Voyage”, it is similar to pound cake, or you can call it French pound cake. But there are still some differences. Pound cake is traditionally made with a pound of flour, butter, eggs, and sugar, and is to use softened butter, but french weekend cake is to use melted butter.
Weekend cake is actually a plain looking cake, made in a simple way, and the cake structure is firmer and less fragile, so it's ideal for a 3-4 days trip, or a weekend friend gathering dessert. This recipe is from Le Cordon Bleu, but we’ve made some adjustments. Hope you like this video. :-) Enjoy.

How to make Le Grapefruit Weekend Cake Recipe
French pound cake Recipe
☞ Pan size: 14x7cm
✎ Ingredients
☞ For the cake
egg 2
grapefruit 1
granulated sugar 80g
cake flour 85g
a pinch of baking powder
unsalted butter 80g, melted
** For grease a pan: 10g of melted butter, 20g of flour
☞ For the apricot glaze
nappage abricot 25g
water 25g
☞ For the grapefruit syrup
Grapefruit juice 30g
powdered sugar 18g
✎ Instructions
1. Brush the melted butter evenly on the base and edges of a pan. Dust the inside the pan with flour, then tip out and discard any excess flour.
2. Add hot water in a medium bowl, place the butter pieces in a stainless steel bowl, put the bowl in the hot water and cover a cloth, set aside and keep warm.
3. Add 80g sugar in a bowl, zest an half of grapefruit into it. Then rub the grapefruit zest and sugar together with your fingers until fragrant and combined.
4. In a large mixing bowl, add two eggs and grapefruit sugar, whisk them together for 7~8 minutes until the egg mixture is pale and fluffy. If you use hand electric mixer, then beat on medium speed for 2 minutes, then change to low speed for 1 minute.
5. Sift the flour and baking powder into the egg mixture, and gently fold until you have a smooth batter.
6. Pour the melted butter into the bowl, mix until fully incorporated and the texture is a little bit glossy.
7. Fill three-quarters full with batter. Tap the pan 1 or 2 times to cause the air bubbles to rise to the surface.
8. Pour melted butter in a small tray, and dip the melted butter with scraper, then gently touch the center of the batter to create a butter line.
9. Preheat the oven to 170°C and bake for 30~35 minutes. Remove the cake from the pan and place it onto a cooling rack and leave to cool.
