Haiyaa.. Not copying anyone to do fried rice but showing you how my Poh Poh used to show us how to enjoy fried rice, especially for someone who doesn't like rice like me.
I am surely bringing back a lot of childhood memories through my cooking and dressing up videos. Life is cool when we remember the best moments in life.
Ingredients:
. Rice - Multi-grain rice : Black rice, purple rice, wild rice, Quinoa, millet, buckwheat, black-eye peas, mung beans, Sorghum, sesame seeds.. You can also add oat, pearl barley and soy beans. I didnt add these 3 grains as Mika is allergic to Soya and Gluten.
. Diced smoked duck (I got mine from Seafood Maestro +60 11-2302 9399. They are very GOOD!)
. Chopped garlic
. Cut onions
. Minced Ginger
. Cut spring onions
. Shredded carrot (I didn't have stock)
. Cut long beans
. 3 to 4 eggs
. Oyster sauce
. Soy sauce
. Salt
. White pepper
. Oil
. Lettuce leaf for wrapping
If you have a fire stove, your fried rice will be fantastilicious!! Chinese like the WOK HEY- Wok Fire.. Add in fried salted fish and chili padi and more ginger.. Oh My.. I feel so hungry again.
Fried rice is probably the most humble and casual comfort food. It is something you cook when you have too much leftover rice from your meal yesterday or you just don't know what to cook and you have very little ingredients left in your refrigerator. My Poh Poh used to say : 炒冷饭Chǎolěngfàn means fried cold rice. Leftover rice is usually refrigerated overnight, so you take it out and fry it while it is still cold. LOL. But whatever it is, fried rice is definitely one of the best Chinese all-in-one dishes that conquered the world. It is quick, affordable and you dont need to be a professional chef to cook this.

Anyhoo, modified the 𝐒𝐭𝐢𝐫 𝐅𝐫𝐢𝐞𝐝 𝐒𝐧𝐚𝐤𝐞 𝐁𝐞𝐚𝐧𝐬 𝐖𝐢𝐭𝐡 𝐏𝐫𝐞𝐬𝐞𝐫𝐯𝐞𝐝 𝐑𝐚𝐝𝐢𝐬𝐡 recipe from the TASTY ASIA cookbook for lunch today. Did not have minced meat (ok. I had it but malas to defrost) and no sweetened dried radish. But just had a bite of it and sadap!
𝐒𝐭𝐢𝐫 𝐅𝐫𝐢𝐞𝐝 𝐒𝐧𝐚𝐤𝐞 𝐁𝐞𝐚𝐧𝐬 𝐖𝐢𝐭𝐡 𝐏𝐫𝐞𝐬𝐞𝐫𝐯𝐞𝐝 𝐑𝐚𝐝𝐢𝐬𝐡 (Pon’s Version)
Ingredients:
30gm salted dried radish, rinsed
30gm garlic cloves
20gm shallots
30gm Olive Oil
200gm snake beans. Cut into inches
200gm carrots slices
20gm Hamadaya Premium Oyster Sauce
10gm water
1 fresh red chilli, deseeded sliced
Preparation:
1. Place radish, garlic and shallots into mixing bowl. CHOP 6sec/speed 6
2. Add olive oil. Sauté 2min/120c/ speed spoon
3. Add beans and carrots, oyster sauce and waters. Stir fry 7min/120c/ reverse mode spoon
4. Add red chilli , stir fry 1min/120c/reverse spoon.
Serve hot.

タイのサラダ!大根を使ったソムタムをご紹介します!
とっても万能な千切りピーラーを使って、簡単に大根の千切りができちゃいます♪

ダイコンソムタム
2人分
材料:
大根 150g
パプリカ 1/4個
インゲン 4本
ミニトマト 4個
ピーナッツ 10g
サラダ油 適量
Aレモン果汁 大さじ3
A砂糖 大さじ1
Aナンプラー 小さじ2
Aおろしにんにく 小さじ1/2
A塩 少々
A干しえび 5g
作り方:
1. 大根は皮をむいてソムタムピーラーで千切りにする。ミニトマトはヘタを取って半分に切る。パプリカは薄切りにする。インゲン3cm幅程度に切る。干しえびは粗く刻む。
2. フライパンに油を熱したらパプリカとインゲンを加えて中火で1分程度炒める。
3. ボールにAを入れてしっかり混ぜたら全ての野菜とピーナッツを加えてしっかり混ぜて皿に盛ったら、完成!

INGREDIENTS
150g Daikon radish
1/4 Paprika
4 Green beans
4 Cherry tomatoes
10g Peanuts
Stir-fry oil
A 3 tablespoons Lemon juice
A 1 tablespoon Sugar
A 2 teaspoons Fish sauce
A 1/2 teaspoon Grated garlic
A Salt
A 5g Dried shrimp
PREPARATION
1. Peel the radish and shred it with a som tam peeler. Cut the cherry tomatoes in half. Slice the paprika into thin slices. Cut the beans into 3 cm long pieces. Finely chop the dried shrimp.
2. Heat the oil in a frying pan, add paprika and green beans, and fry on medium heat for about 1 minute.
3. Put A ingredients in a bowl and mix well. Add all the vegetables and peanuts, mix well and serve on a plate, and you're done!
4.Enjoy!

3 ulas bawang putih (hiris kasar)
1 inci halia (hiris nipis)
1 batang serai (dititik)
1 sb cili kisar
2 keping dada ayam (dipotong kecil)
3 sb sos cili
1 sb pes tomyam
1 sb sos tiram
1 sb kicap manis
3 helai daun limau purut
4 biji cili api (dipotong serong)
Sebiji lobak merah (dipotong memanjang)
2 batang kacang panjang (dipotong 2 inci panjang)
3 batang jagung muda (dipotong serong)
1 biji bawang holland (hiris kasar)
1 sk garam
1 sk gula
Minyak masak
Nota: Boleh gunakan apa saja sayur pilihan anda.
Cara memasak
1. Tuangkan sedikit minyak ke dalam kuali dan tumiskan bawang putih, halia dan serai sehingga naik aromanya.
2. Masukkan cili kisar dan tumiskan sehingga pecah minyak.
3. Masukkan dada ayam dan masak untuk seketika.
4. Tambahkan sos cili ke dalam masakan dan gaulkan sebati.
5. Kemudian, masukkan pes tomyam dan masak hingga naik bau.
6. Tambahkan pula sos tiram dan kicap manis ke dalam masakan.
7. Masukkan daun limau purut bagi menambahkan bau harum masakan ayam paprik.
8. Masukkan sayur yang telah dipotong ke dalam masakan dan gaulkan seketika.
9. Tambahkan bawang holland dan gaulkan kesemuanya hingga sebati.
10. Setelah selesai, ayam paprik ala Thai siap untuk dihidangkan.

4 pcs of bird's eye chilli (diagonal cut)
1 carrot (batonnet cut)
2 long beans (2 inch cut)
3 stalks of babycorn (diagonal cut)
1 holland onion (roughly sliced)
1 tsp of salt
1 tsp of sugar
Cooking oil
Note: You can use your preferable vegetables.
Cooking methods
1. Pour a little bit of cooking oil and start saute' garlic, ginger and lemongrass.
2. Add chili blend and cook them until the oil separates.
3. Add in chicken breast and cook for a while.
4. Put chili sauce into the pan and stir it.
5. Then, put tom yum paste and cook until it smells.
6. Add in oyster sauce and sweet soy sauce.
7. Add kaffir lime leaves into the dishes to enhance the smell.
8. Add cut vegetables into dishes and cook for a while.
9. Add holland onion and stir it thoroughly.
10. Once done, Thai style chicken stir-fry is ready to be served.

【材料】
シーフードミックス…200g
いんげん…3本
長ネギ…15㎝
にんにく…ひとかけ
あたたかいごはん…2人分(450gほど)
卵…2個
酒…大さじ1
ごま油…適宜
Aしょうゆ…小さじ2
A鶏がらスープの素…小さじ1
塩・こしょう…少々
【作り方】
1, 長ネギ、にんにくはみじん切りにする。いんげんをさっと茹で、5㎜幅に切る。卵はボウルなどに割り溶く。
2, フライパンにごま油、シーフードミックス、酒を入れて火にかける。全体に火が入ったら汁ごと取り出す。
3, フライパンにごま油大さじ1、みじんぎりにした長ねぎ、にんにくを入れて弱火でじっくりと。
4, 香りが出てきたら、ごはん、シーフードの汁を大さじ2。中火にしほぐしながら炒める。
5, ごはんをフライパンの端に寄せ、溶き卵を入れる。半熟状態に固まってきたら、ごはんと混ぜ合わせる。
6, シーフードミックス(ここでは汁をいれないように)、いんげんを入れてさっと炒め合わせる。
全体に味がなじんだら、Aを鍋肌から回しかけ、塩・こしょうで味を調え、皿に盛る。

[How to make]
1, chopped leek and garlic. Boil the green beans and cut them into 5 mm width. Break eggs into a bowl.
2. Put sesame oil, seafood mix and sake in a frying pan and heat. When the whole is on fire, take out the juice.
3, Add 1 tablespoon of sesame oil, finely chopped green onion and garlic in a frying pan and slowly heat.
4, when the aroma comes out, add 2 tablespoons of rice and seafood soup. Fry on medium heat.
5, Bring the rice to the end of the frying pan and add the beaten egg. When it has hardened to a soft boiled state, mix it with rice.
6, Add seafood mix (do not add soup here), green beans, and fry them quickly.
When the taste is familiar to the whole, spin A over the skin of the pot, add salt and pepper to taste, and serve on a plate.
