{Recipe} Easy Tomato Curry Mackerel 🍅 Do you know you can transform laksa into curry?
By combining @newmoonsg Jack Mackerel in Tomato Sauce, Laksa paste and a few other ingredients, you can actually get a pot of hearty spicy curry-like stew in less than 20min! Taste very shiok and perfect to go with @newmoonsg Thai Hom Mali Rice
Ingredients (Serves 6)
1 Tb New Moon Premium Grade Canola Oil
4 red onion, sliced
3 lady fingers, cut to chunks
2 tomatoes 🍅 , cut to chunks
1 New Moon Jack Mackerel in Tomato Sauce
1 New Moon Laksa Paste
150ml low fat milk (feel free to use coconut milk)
150ml water
2 small lime (optional)
Method:
1) In a pot or saucepan, heat up oil.
2) Sauté red onions, followed by lady fingers and tomatoes.
3) Add in jack mackerel, laksa paste, milk and water
4) Stir evenly and bring to boil. Lower heat to simmer for 15min. You can adjust the consistency of the sauce according to your preference. This version is quite thick
5) (Optional) Squeeze two limes before serving. The acidity helps to cut the richness and any fishy flavor.

「貓和老鼠奶酪蛋糕」超级靓 唔使焗爐、唔使開火、唔使打發、唔使擔心消泡嘅超簡單芝士奶酪蛋糕!!!
食材:牛奶100g、酸奶150g、奶油奶酪125g、南瓜泥100g、糖30g、煉乳10g(冇煉奶就再加10g糖)、吉利丁片10g -
步骤:
STEP1 南瓜蒸熟壓成泥,攞100g南瓜泥備用。
STEP2 奶油奶酪充分軟化,加入糖,攪拌至順滑。
STEP3 喺奶油奶酪糊加入牛奶、酸奶、煉乳、南瓜泥攪拌均勻。
STEP4 吉利丁片提前放冷水/冰水軟化,擠干水以後放喺一個空碗里隔水加熱至融化,倒入奶酪糊。
STEP5 攪拌均勻以後將奶酪糊過篩,將之前嘅奶酪顆粒全部壓細膩。過篩2-3次會更好。
STEP6 將奶糊倒進模具。一定要記得喺模具下面放個碟,如果唔係倒咗液體之後會好難攞起嚟。
STEP7 雪櫃冷藏4小時以上,脫模就可以食喇~

Step 6 :pour the milk paste into the mold. Remember to put a dish under the mold. If you don't pour the liquid, it will be very difficult to get up.

Dalam episod 1 hari ini, kami berdua akan masak "Nasi Kabsah". Berasal dari negara-negara Timur Tengah, nasi kabsah dapat nama dari perkataan bahasa Arab "كبس - kabasa" yang bermaksud "squeeze", disebakan pelbagai bahan-bahan "squeeze" dalam satu periuk semasa nasi dimasak.
📋 BAHAN-BAHAN:
🍗Ayam Kabsah
- Chef Ammar Kabsah Paste 350g
- Sekor Ayam Spring/Ayam Peha (1.3kg - 1.5kg)
- Air 600 ml
- Chef Ammar Saffron Powder 1/4 sudu kecil
- Garam 1 sudu kecil
🍚Nasi Kabsah
- Chef Ammar Basmathi Rice 1kg (basuh dan rendam)
- Air 1.5 liter
- Chef Ammar Saffron Powder 1/4 sudu kecil
- Garam 1 sudu kecil
🍲 CARA-CARA MASAK:
🍗Ayam Kabsah
1. Dalam periuk tambah Chef Ammar Kabsah Paste dengan api serdehana
2. Tambah 400ml air
3. Tambah ayam sekor atau peha ayam
4. Tambah air 200ml.
5. Tambah garam 1 sudu kecil (optional)
6. Tambah Chef Ammar Saffron Powder ½ sudu kecil.
7. Selepas kuah medidih, kurangkan api dan biar sampai masak. Kacau dengan kerap.
8. Hidang Ayam Kabsah bersama ketumbar dan kacang gajus
🍚Nasi Kabsah
1. Cuci 1kg Chef Ammar Basmathi Rice 4 - 5 kali dan rendam untuk 45min-1jam
2. Letak 350g Chef Ammar Kabsah Paste dalam rice cooker.
3. Tambah 1.5L Water dan kacau sehingga sebati
4. Tambah 1kg Chef Ammar Basmathi Rice
5. Tambah garam 1 sudu kecil (optional)
6. Tambah Chef Ammar Saffron Powder ½ sudu kecil.
7. Kacau
6. Masak sehingga siap

焼きなすのディップ
2人分
材料:
なす 4本
Aおろしにんにく 小さじ2
Aレモン汁 大さじ1/2
A練り白ごま 大さじ1
A塩 少々
Aクミンパウダー 少々
オリーブオイル 少々
パプリカパウダー 少々
イタリアンパセリ 少々
フランスパン(ディップ用)
作り方:
1.オーブンを180度に予熱する。
2.なすを縦半分に切り、オーブンシートを敷いた天板に切った面を下にして並べ、180度で30分程焼く。
3.オーブンから取り出し粗熱が取れたらスプーンでなすを皮からはがしてザルにあげる。
4.(3)のなすをミキサーに入れAも加えて、なめらかなペースト状にする。
5.器に盛り、オリーブオイルを垂らしパプリカパウダーをふりかけ、ちぎったイタリアンパセリを散らす。
6.フランスパンを添えて完成!

Servings: 2
INGREDIENTS
4 eggplants
A
2 teaspoons grated garlic
1/2 tablespoon lemon juice
1 tablespoon sesame paste
Some salt
Some cumin powder
Some olive oil
Some paprika powder
Some Italian parsley
Baguette
PREPARATION
1. Preheat the oven to 180°C (356°F)
2. Cut eggplants vertically into halves. Place on a pan lined with a parchment paper (face down). Bake for about 30 minutes at 180°C (356°F). Let cool.
3. Using a spoon, peel eggplants and drain. Squeeze the eggplants if needed.
4. Process the eggplants (3) and the garlic with a blender. Add A ingredients and process until smooth.
5. Place (4) on a plate. Put some olive oil, sprinkle with paprika powder. Add some Italian parsley on top.
6. Serve with baguette.
7. Enjoy!

I made mizuyokan ( soft sweet bean jelly or paste ) with mikan ( mandarin orange ) juice using the mikan mold made from mikan. The method of making the molds is the same as for the cola bottle gummy. https://youtu.be/6gMff2omf0I Mikan mizu-yokan is refreshing and is recommended for the coming season.
*Recipe* (for 5 small mikan)
1.Remove the stems from 5 cleaned mikan (about 45g each). Keep the stems so that they do not dry out.
Make a mold with mikan
2.Dissolve 105g of gelatin powder in 700ml of hot water.
3.Pour (2) into a container and place the mandarin oranges from (1) face down. Cover and chill in the refrigerator to harden.
4.Take out the jelly from (3), divide it vertically into two equal parts, and take out the mandarin oranges from the inside.I found that cutting with a knife worked better than using a teflon.
5.Put the jelly of (4) back into the container and refrigerate.
Make mikan mizu-yokan.
6.Squeeze the mandarin oranges from (4) and extract the juice.Add 100% orange juice to make a total of 200 ml.
7.Put 265g of white bean paste and 65g of water in a small pan and heat.Warm to body temperature while stirring to dissolve the white bean paste, and remove from the heat.
8.Put the mandarin orange juice from (6), 4g of agar powder and 35g of sugar in a small pan and heat. When it boils, remove it from the heat.
9.Add (7) to (8) while stirring.
10.Cool (9) to about 55°C.
11.Pour (10) into (5).
12.Cool in the refrigerator until it hardens.
13.Take out the mikan mizu-yokan and put the stems of (1) on top.
14.Done.
I was very happy when it was done.But what to do with the jelly used for the mold? I used it to make a new jelly of my favorite flavor, or put it in rice when I cooked it.

*レシピ*(小ぶりのみかん 5個分)
1.キレイに洗った みかん(1個 45g程度)5個のヘタを外す。ヘタは乾かないようにとっておく。
みかんで型を作ります
2.お湯 700mlに粉ゼラチン 105gを溶かす。
3.容器に(2)を注ぎ、(1)のみかんを下向きに入れる。フタをして冷蔵庫で冷やし固める。
4.(3)からゼリーを取り出し、縦に2等分して中からみかんを取り出す。テグスで取り出すよりもナイフで切った方がうまくいきました。
5.(4)のゼリーを容器にもどし、冷蔵庫で冷やしておく。
みかん水羊羹を作ります
6.(4)のみかんを絞り、果汁を取り出す。100%オレンジジュースを足し、合わせて200mlにする。
7.小鍋に白あん 265g、水 65gを入れ火にかける。白あんを混ぜ溶かしながら人肌に温め、火から下ろす。
8.小鍋に(6)のみかん果汁、粉寒天 4g、砂糖 35gを入れ火にかける。沸騰したら火から下ろす。
9.(8)に(7)を混ぜながら加える。
10.(9)を55℃程度まで冷ます。
11.(10)を(5)に流し入れる。
12.冷蔵庫で固まるまで冷やす。
13.みかん水羊羹を取り出し(1)のヘタをのせる。
14.でけた。
できあがるととってもうれしい。でも、型に使ったゼリーの使い道に困る。好きな味のゼリーに作り直したり、お米を炊く時に入れたりして使いました。

Resepi Roti Jala Ros & Kari Ayam
Bahan-bahan (Roti Jala)
1 cwn tepung gandum
1 sk garam
1 biji telur
1/2 cwn air
1/2 cwn susu segar
1 sk pewarna merah jambu
1 sk pewarna hijau
Bahan-bahan (Kari Ayam)
1 biji kentang (dipotong dadu)
500 gm isi ayam (dipotong kecil)
1/2 cwn minyak masak
200 ml santan
1/2 cwn air (ikut kepekatan kuah)
1/2 sb garam
1/4 cwn air limau nipis
8 sb rempah kari daging
2 sb serbuk cili
sedikit air
Bahan-bahan untuk dikisar
4 biji bawang merah
4 ulas bawang putih
1 inci halia
sedikit air
Bahan-bahan untuk ditumis
2 tangkai daun kari
2 batang kayu manis
2 kuntum bunga lawang
3 buah pelaga
1 biji bawang merah (dihiris)
Nota: Bancuh rempah kari terdahulu sebelum masak untuk mendapatkan kepekatan kuah kari sekata.
Cara memasak (Roti Jala)
1. Masukkan tepung gandum, telur, air, susu dan garam ke dalam pengisar.
2. Kisar bahan-bahan sehingga halus.
3. Bahagikan adunan tersebut ke dalam dua mangkuk.
4. Warnakan setiap satu adunan dengan pewarna merah jambu dan hijau. Masukkan adunan merah jambu ke dalam botol picit dan adunan hijau ke dalam piping bag.
5. Panaskan non-stick pan dengan api perlahan. Picit adunan merah membentuk garisan melintang. Kemudian, lakarkan garisan berombak. Titiskan tiga titis adunan hijau di bahagian atas garisan berombak membentuk daun.
6. Biarkan selama 1-2 minit atau sehingga adunan masak.
7. Angkat dan gulung menjadi bentuk bunga ros.
Cara memasak (Kari Ayam)
1. Bancuh rempah kari dan serbuk cili dengan sedikit air untuk dijadikan pes.
2. Kisarkan bawang putih, bawang merah dan halia bersama air sehingga lumat.
3. Panaskan minyak, tumiskan daun kari, kayu manis, bunga lawang, buah pelaga dan bawang merah sehingga naik bau.
4. Masukkan bahan kisar dan kacau seketika sehingga kekuningan.
5. Masukkan pes kari. Teruskan menumis hingga pecah minyak (tambahkan air jika terlalu kering untuk elak daripada jadi hangit).
6. Masukkan ayam dan kentang.
7. Kacau seketika selama 2-3 minit dan tambahkan air limau nipis. Masak sehingga ubi kentang dan ayam menjadi empuk.
8. Tambahkan santan dan perasakan dengan garam. Tunggu sehingga mendidih dan siap untuk dihidangkan.

Rose Net Crepes & Chicken Curry
Ingredients (Net Crepes)
1 cup of all-purpose flour
1 tsp of salt
1 nos egg
1/2 cup of water
1/2 cup of fresh milk
1 tsp of pink food coloring
1 tsp of green food coloring
Ingredients (Chicken Curry)
1 potato (diced)
500 gm chicken fillet (cut into small pieces)
1/2 cup of cooking oil
200 ml coconut milk
1/2 cup of water (according to the gravy consistency)
1/2 tbsp of salt
1/4 cup of key lime juice
8 tbsp of meat curry powder
2 tbsp of chili powder
bit of water
Ingredients for grinding
4 onions
4 cloves of garlic
1 inch ginger
bit of water
Ingredients for saute
2 stalks of curry leaves
2 cinnamon sticks
2 star anise
3 cardamoms
1 onion (sliced)
Note: Make the curry powder paste first before cooking to get an even curry gravy consistency.
Cooking methods (Net Crepes)
1. Put all-purpose flour, egg, water, milk and salt in a blender.
2. Blend all ingredients until smooth in texture.
3. Divide the batter into two bowls.
4. Color each batter with pink and green food coloring. Pour pink batter into a squeeze bottle and green batter into a piping bag.
5. Heat non-stick pan to low heat. Squeeze pink batter forming horizontal line. Then, draw wavy line. Drop three dots of green batter at the top of wavy line to forming leaves.
6. Let it be for 1-2 minutes or until fully cooked.
7. Remove and roll to rose shape.
Cooking methods (Chicken Curry)
1. Mix curry powder and chili powder with bit of water to make a paste.
2. Grind garlic, onion, and ginger with water until smooth.
3. Heat the oil, saute curry leaves, cinnamon sticks, cardamoms, star anise and onion until fragrant.
4. Add in grinded ingredients and stir for a while until golden.
5. Add in curry paste. Continue sauteing until the oil separates (add water if it is too dry to avoid burnt).
6. Add in chicken pieces and potatoes.
7. Stir for about 2-3 minutes and add in key lime juice. Cook until potatoes and chicken are tender.
8. Add in coconut milk and season with salt. Bring to a boil and it is ready to be served.
