Feel like having energising soupy dish for iftar today and I’ve been craving for Korean Ginseng Chicken Soup so here’s my recipe lovelies 😍

I use #KoreanRedGinseng extract from #CheongKwanJangmy instead of ginseng roots as it is more convenient.

KOREAN CHICKEN GINSENG SOUP
SERVES 3 TO 4
.

Ingredients
.
.
Broth
✅ 1.2 kg whole chicken. Use free range chicken (ayam kampung) if can as.
✅ 1.5 liter water
.
.
Stuffing
✅ 1/4 cup sticky rice, soaked in water overnight or at least 2 hours.
✅ 1 tsp of @CheongKwanJangmy Korean Red Ginseng Extract
✅ 4 whole garlic cloves, peeled
✅ 4 dried Red Dates
✅ 3 to 4 chest nuts
✅ 3 to 4 fresh pine nuts (optional)

Garnish & To serve
✅ 1 to 2 Tbsp thinly sliced green onion
✅ fine pink Himalayan salt, to taste
✅ ground pepper/black pepper, to taste

How to:
.
.
1. Wash the chicken (including the cavity) thoroughly under running cold water.
2. Stuff the chicken cavity with sticky rice, ginseng extract, garlic cloves, red dates, and chest nuts.
3. Cross the chicken legs and tie with a cotton tie. Alternatively, you can make a slit on one side of the chicken thigh skin and put the other leg through it. This is to minimise the stuffed ingredients falling out.
4. Boil water in large pot. Add stuffed chicken & boil the pot over medium high heat, covered, for 20 mins.
5. Reduce the heat to medium to medium low and boil further until the chicken is fully cooked (about 30 - 45 mins).
6. Make sure the stuffed sticky rice is fully cooked too. Skim off any scum as desired.
7. Transfer the chicken and the soup into a serving bowl. You can debone the chicken before serving if you like too. Garnish with green onion and serve with kimchi, salt and pepper/black pepper on the side.

這是前el bulli侍酒師推薦的餐廳,剛好離下榻的飯店約五分鐘的路程。沒有訂位,餐廳服務人員請我稍等片刻,翻閱我未完成的戀人絮語,剛好!
菜單是加泰隆尼亞文,你的西文再流利都無用武之地。生菜裹上凝脂剔透的火腿,佐上些許松子,簡單的食材,味蕾上卻有互相交流的層次。鮭魚呈現一個均衡的粉橘色,不見鮭魚的肥膩,取而代之的是魚肉的鮮美肉汁。甜點使用的高純度巧克力醬和金桔、草莓、呈現的是苦味、酸味、甜味的三角和諧。唯一美中不足的是Jane Ventura白酒剛上的溫度過低,我一直到午餐的尾聲才領略到她的娟秀清麗。

This was recommended by the former sommelier at El Bulli, and it happened to be about a five minute walk from our hotel. I had to wait for ten minutes because I didn't make a reservation first. This was not a problem at all, since I had a good book with me to kill time anyways.
The menu was written in Catalan and you probably wouldn't understand a single word even you are fluent in Spanish.
The first course was lettuce wrapped in fresh ham and topped with pine nuts. Simple ingredients make perfect harmony in your palate. The salmon was well cooked as you can tell by the even pink orange color. The meat was juicy instead of fatty. The desert was served with high percentage of chocolate sauce along with strawberries and Kumquats. It was bitter, sweet and sour! The Jane Ventura blanco was too chilled so I didn't get to experience her beauty til the end of lunch.
Visiting a restaurant by yourself sometimes can be fun. You get to be closer to your sensations and the flavors of the food. It was great to spend time with myself, my thoughts, and my palate.

Ingredients:
100g mochi
240g milk of your choice(I used soy milk)
30g pine nuts
60g oil
3/4 tsp salt
34/ tsp(3g) agar powder
80g tapioca starch(other starch powder can be substitution)
Instructions:
1. cut mochi into small pieces. warm it up with milk until the mochi softens(you don't need to boil it.)
2. put all the ingredients except for tapioca starch into blender container. then blend well.
3. mix tapioca starch and pour the mixture into a container.
4. steam for 15 - 20 minutes.
5. chill, slice then use it just like ordinary cheese.

餅 100g
豆乳 240g
松の実 30g
オイル 60g
塩 小さじ3/4
粉寒天 小さじ3/4(3g)
タピオカ澱粉 80g(他の澱粉で代用可)
作り方
1、餅を小さく切り、豆乳と一緒に温める。沸騰はさせなくても大丈夫です。
2、澱粉以外の材料を全てブレンダーの容器に入れて、撹拌します。フードプロセッサーを使う場合は、澱粉を一緒に入れても大丈夫です。
3、澱粉を加えて混ぜ、容器に流し込みます。
4、15〜20分ほど蒸します。作る分量や厚さによって蒸す時間は変わります。蒸し終わったら中心を押してみて、固かったらOKです。
5、冷蔵庫で冷やしたら出来上がりです。
